You have to pull up in your car and wait until a worker opens their window to get and give your order. I placed an order ahead of time so I just had to wait at the drive through to pay and pick it up. There may be a small language barrier if Spanish isn't your native language. They gave me the card reader to tip and it was all in Spanish so I had no idea what to click or press but eventually figured it out. I wish they offered lunch specials.

Thus far I've not gotten sick. They don't speak English, but then I don't speak Spanish. So it's a wash! I'll probably go back. And pray every time I don't get sick. Thus far I've dodged the bullet! I'd like to support a small business. However, the prices are stupid crazy! Salsa and chips are $5.50. Refills are $1 each time for salsa. Pay up front too. Then they serve you. Prices are average, and service was friendly and quick. Dont expect luxury accomodations, but expect amazing tacos. On my second visit, I tried a mix of birria de chivo (goat) and birria de res (beef) tacos. The beef was well seasoned and flavorful, but unfortunately the tortillas were a bit too burnt this time. I also decided to try the rice and beans, which ended up being a miss for me. The beans had a canned aftertaste and were very bland, while the rice was dry and also lacking flavor. I tried three of their salsas: salsa verde, salsa verde tatemada (served warm), and the habanero salsa. The two green salsas were decent, but the habanero stood out with great flavor and a nice kick of heat. The staff was super friendly, and service was quick on both visits. Overall, based on consistency and my experience across both trips, I'd rate this spot 3.5 stars.

Let me start with the most important thing I can tell you. If you have never eaten at Vaqueros, you are missing out. Vaqueros and Hutchins are the two best BBQ joints in Collin County. But Vaqueros has a twist. Their barbecue is competition grade, and they also happen to run one of the Top 50 taco spots in the entire state. Do not take my word for it. Ask Texas Monthly. Want to know why the tacos are that good? It is the brisket. Trey uses every last ounce of it. The trimmings end up in the sausage, the burgers, the tacos, and the consomé de res. They go into the tallow too, and if you ever order the fries, you will understand. You will want more. His suadero tacos are something special, and that is just the beginning of the menu. Speaking of burgers, do not skip his. It is outstanding, and it is made with, if you guessed brisket, you would be right. So here is my advice. If you are thinking about wandering next door to Village Burger Bar, stop. Get a burger from Trey instead. His beef is ground fresh daily, and the pickles and the mustard are made in house. It is in a different league. Now the class itself. What Trey taught me about trimming a brisket, treating it like a steak, seasoning it, and wrapping it, those are lessons any wannabe pitmaster will cherish for life. That said, their BBQ sauce was excellent. I'm usually not one to sauce good ribs, but in this case it definitely elevated them. The mac and cheese was probably the biggest surprise. It was rich and gooey, topped with feta, chives, and shredded cheddar. Not a combination I would have expected--or ordered--but somehow it really worked. The only real disappointment was the beans. They arrived cold and were a bit bland, especially by Texas BBQ standards. Overall, it was a solid 4-star experience. The brisket alone is worth trying, and I'd definitely come back to work my way through more of the menu.
