I keep going back here because of the service. The food is amazing, don't get me wrong, but the managers and servers treat you like family. My chips and drink are never empty and the food is always hot and fresh. You can tell somebody's mama is in the kitchen making the food because it is made with LOVE and it shows. Plenty of seating, chunky guacamole was good! The salsa they bring out is just ok. I would prefer lighter, flaky chips. My ElbV burrito (topped with chorizo) was delicious and huge! I took half home! The chicken fajitas were delicious and huge! Others in our party ordered margaritas-one was strong and one seemed not as strong. All other meals were good. We ordered fried ice cream which was good and Sopapillas with ice cream, not quite as good. Needed more cinnamon sugar. Will try the churros next time. COVID Measures - I heard the food was great. Came to the location and there was no hand sanitation station. They also have carpeting all over the floor. That gave me the iffy's because dirt can disguise itself. We sat at a booth after I swept rice of the the seat. The waitress came with no mask. I was then informed that they were not required to wear masks. We quickly left after that. Bummed, we could not taste the food. I don't think I will try it in the future. The carpet was icky. This was my first visit to the Jefferson location. Just recently moved to Jefferson and am having a difficult time finding a Mexican restaurant that has both great food and service. I unfortunately will likely not be back here. The biggest reason is that it smells lime a dirty diaper in here. Smelled it as soon as I walked in, was seated at the far side of the restaurant and the smell there was just as bad. It still smelled the same when we left, and there were no babies or small kids, so not a dirty diaper. The food was good. My husband said the chicken fajitas were tasty. I had the Chicken Burrito California and it was good. Service was okay. We were one of 5 patrons in the whole restaurant, but our server forgot to bring the tortillas with the fajitas and forgot to then bring them back after we asked for them. I personally think this is the best Mexican restaurant in Jefferson. I feel the authenticity here compare to Gringos. Nothing against Gringos but I feel it's more Americanized there. Formerly the original home of El Centinela, NOW Los Vaqueros went about transforming the location into the best Mexican restaurant in the Jefferson area. Service is prompt and super attentive. The staff know the menu well and have guided me and my wife to some absolutely incredible dishes. Their salsa is fresh and spicy, chips are hot and fresh with a cheese dip made even better with large doses of freshly diced jalapeños. The tacos here are the real star and I cannot gush enough about the "Al Pastor" and "Asada" variants. The flavor of the "Al Pastor" is absolutely delicious and properly flavored with the meat cubed and ultra tender. They honestly do not need the sauces they arrive with and make sure to opt for the corn tortillas over the flour for a more authentic experience! read more

Terrible food, terrible service. First our drinks were awful. margarita tasted like pure lime mix. Then our waitress disappeared. Took over 30 minutes to place our order and then nobody got what they ordered. Once we got the food we actually ordered it was terrible. Beef tasted like BBQ, shrimp was like rubber. Never again. If only I could give a 0 star review, it would be well deserved. This was absolutely the worst Mexican food I have ever eaten, and I have been to at lot of Mexican restaurants. I ordered a taco, enchilada, and rice platter. Don't expect anything on your taco but some bland ground beef.Did they run out of seasoning? I spoke with manager/server and let him know that there wasn't any cheese on my taco. The manager came over to my table and looked at my plate, and said it was right there. As I'm combing the strands of lettuce to find my cheese,. Low and behold, there it was, silly me how could I have missed an 1/8 of a tsp of cheese. What a joke.. He never offered to bring me any more cheese. I had to ask for onion, sour cream. The manager charged me $2.00 for sour cream. Already annoyed because the food was so awful, I asked him why he didn't tell me there was an up charge for the sour cream. He told me he didn't have to, and that he should've charged me for the onions. What? He actually started yelling at me in the restaurant. Are you kidding me? A real class act. Horrible service. The server new she messed up by forgetting to put our food in, never apologized, never came back to pick up our plates or refilled our drinks. We had to go upfront for the ticket and even then she didn't apologize, as we were waking out no goodbye or thank you for coming. My husband went back to speak with the manager and she wouldn't get him she just kept saying "come here he's in the kitchen as she was laughing" I am disgusted of how the treated us and will never recommend this place. read more
