The chicken tacos were cooked well, but the cheese kept coagulating in the roof of my mouth. Wished it was smoother. The margaritas are ranked as follows: peach, strawberry, and passion fruit. For 12 oz, they are $7.50, which is great! The peach was fruity and tasty. Strawberry could get sickly very fast but still better than the passion fruit. The passion fruit was a thicker consistency of syrup, which threw it off a bit, and the flavor wasn't quite right. The berry sangria was missing something. It wasn't quite wine, not quite a fruit juice, and the fruit was all at the bottom, making it hard to drink. Not what we expected with the flavor profile. The quesabirria was flavorful with the beef and very tender. They definitely stuffed a lot of meat in the tacos, which will fill you up. Didn't like the cheese. It didn't pair well with the beef, and it was not enough in comparison. Overall, good tacos and would order again though. The service was fine. She was around enough for us to order more drinks and offered me a box at an appropriate time. The music wasn't too loud, barely heard over the crowd that started forming as we sat. Will try them again because the price is right.

Well, guess who makes sure there's plenty of salsa verde on your plate? Good ol' Pancho Villa, that's who. I have a certain fondness for Pancho's Green Burrito, and when I ordered that dish for lunch today there was a pool of delicious green liquid literally spilling from both sides of my plate! A bit messy for the table, yes, but far better than the scant offerings of their competitor. Pancho has long been one of my most consistent dining experiences in this city, which is why it's often the target of my attention for lunch. They get patrons seated quickly and orders filled quickly. The food is always good and there's plenty of it to enjoy. The service staff does a great job of attending to the wants and needs of their diners. It's easy to see why the place is popular -- and thus why a parking spot can be tough to find around lunch time.

The service is good as the staff is friendly and prompt on checking on you or refilling your chips and salsa. Ambiance is friendly although it was a bit cold the day we went so we left our jackets on throughout dinner. Business there is typically steady so if you go at a peak time there may be a wait. We went at 5:30 on a Friday and got right in but by the time we left around 7, the wait was a few people deep. The food is always good and portions are large. As with most Mexican places, they start you off with chips and salsa. The chips do not have salt on them so you may need to add it if you enjoy a salted chip. The salsa is good and not very spicy although my wife who doesn't do spice said it was a little much for her. I had the Cocina plate which is chicken, shrimp, and steak with onions, peppers, mushrooms, and cheese sauce over rice. This is my go to as it's delicious and always hits the spot. My wife had a fajita quesadilla that was overflowing with meat and veggies and she really enjoyed. We tried some of their Paloma drinks this last time which were very strong but had good flavor.

It is a small place with less than a dozens tables, and a fairly broad menu. It has been operating for about 10 years now. I was particularly interested in the California Burrito with Steak and the tacos with shredded beef, the Birria tacos, the Guadalajara Dog, and the street corn. We tried them all! The California Burrito is an interesting version - filled with pickled jalapeños, lettuce, tomato, cilantro, onion, avocado, Mexican cheese, sour cream, your choice of protein, and topped with Chili Con Queso once filled. The menu description does not mention FFs which is very much traditional. In fact, the replacement of rice and beans with crispy FFs was what made the California Burrito unique! This is a large burrito, shorter and thicker than the vast majority you'll see. The filling I chose was carne asada and the burrito was topped with what the menu termed "chili con queso". The result was a different looking burrito, but an excellent burrito - and no, I couldn't finish it. The Birria Tacos are only available of Fridays. You get four tacos, sliced radish, Lime wedges, and the house red and green hot sauces. These tacos were well filled with meat and cheese, but there was no consommé, which is very traditional, also no chopped white onion or cilantro - disappointing, would not order again! The street tacos with shredded beef were good, not great - well filled, and well topped with chopped white onion and cilantro. I went all the way which added lettuce, tomato, and Mexican white crumbling cheese, either cotija or queso fresco. Frankly I did not find that the all the way approach worked for me! 3 tacos were $8.99, and all the way added $1.99. These are a bit pricey, most Tex-Mex spots in Winston serve up 4 for just under $13! I wanted to try the Guadalajara Dog more out of curiosity than anything else - I have been in Guadalajara a number of times and experienced some interesting food items, such as Birria (the stew), Pozole, Carne En Su Jugo, BBQ Young Goat, and the Guadalajara Hot Dog ( a wildly popular street food)! The weiner is wrapped in bacon and then deep fried, causing the skin to develop rips. Once in the bun, it is sauced and topped with fresh avocado, chopped onion, ancestry you can add more. This was a good version, but not an item I order often. The street corn consisted of corn kernels, cheese, hot sauce, lime, and a Mayo based sauce. This is a busy item, and I found I prefer the simpler, customary corn on the cob with crumpled cheese. This is an interesting place, one that has a different take on Tax-Mex dishes. Those takes and moves away from tradition are not something for me.
