Finally, my wife got the filet medium well and I got the snapper. Yes, anything over medium may be butterflied but hers was not and she loved it! My red snapper was good but the spices were slightly over powering. Cocktails were on point; espresso martini for the wife which was very creamy and an old fashion for me.
