I've done plenty of tasting menus and this was just average. Service was decent, nothing breathtaking. Chef came over for a second to ask how my dish was and then left. Top rated must haves: gnocchi with short rib, white bean soup, lobster risotto( beware the $7 surcharge if you order this),pork cheek main course, dessert bread pudding. After reading so many great Yelp reviews for this place in San Juan, we were very excited to have dinner here. The decor and vibe make this restaurant trendy and very inviting. We arrived for our 9pm dinner reservations for a party of 7. They seated us pretty much immediately as we got there right at 9pm. My first thought as the hostess walked us to our table was.."Wow, this place has a strong fishy smell." because the odor pretty much hits you right away..not really a pleasant one at all. Makes sense after looking over their menu to find it mostly seafood/fish dishes. Waitress came to our table and introduce herself. Gave us an introduction of the "flavors and textures of Marmalade" are best experienced through their 5 course tasting menu for $69/person (which includes their famous white bean soup) We decided on just experiencing Marmalade with their 4 course menu. $49/person. The waitress at that point just seemed disappointed and appalled by our decision to forego the 5 course tasting menu. We all got different appetizers, entrees,and desserts throughout the meal. They were all very enjoyable at the time. The best was for sure the white bean soup. Small bits of bacon gave the smooth creamy soup some smoked flavor and nice texture. Yes! The white bean soup was great! But overall, I'm not sure if I'll come back because the rest was good but not great. We all left extremely stuffed maybe to the point of feeling a little sick. Delicious meal from start to finish. My two friends and I shared the golden beet salad, white bean soup (a dish they are known for) and ceviche for apps - it was all yummy. I loved the soup; it was tasty and rich. For entrees, one friend had the foie gras and loved it. Two of us had the hand rolled black truffle pasta and added chicken - it was great, not a bite leftover. The staff was great and the chef, Peter, stopped by our table. We did the prix fixe (4 course option where you mix and match what you want, which was the perfect amount for a normal stomach) I hit a homerun with all my food choices. If you are wise, you will follow suit. Great explosive flavors in a great setting with a flair for fusion dishes served with organic tasty foods. Not very many locals are found here, but as a tourist this makes for a great spot to sit down and enjoy a few drinks. The bar area is nice but the dining area looks even nicer. Unfortunately that section was closed at the time of night we arrived. Service staff are quick and friendly and all the drinks were served nice and stiff. I would suggest opting for the seating against the wall as it is far more comfortable than the chairs/stools in the center. That is unless cushions creep you out. read more

AMAZIING... We dine out frequently and splurge every now and then. But, I rarely bother to write reviews and just consume information on Yelp. But I couldn't help not contributing this time! This is a special occasion restaurant with artisan and delicate food, not the place to get stuffed with oversized portions or a 24oz steak... and indeed not the place to show up in sloppy shorts and sandals. The service was immaculate. The servers were amazing, attentive and welcoming. We started with some questions about the wine and the sommelier made great recommendations. Only downside of my experience was the temperature of the red wine which was a bit colder than what we like. The wine flavours opened up after some while and was fine. We did the 5 course menu and loved them all. The highlights were the fabulous beef tenderloin, white bean soup and truffle Rigatoni. The chocolate desert was fantastic. They even gave us a copy of the recipe of the white bean soup! There are many other choices on the menu that I wish I could try... We had the four course tasting menu which was delicious. The lobster risotto to die for. The table setup with rose petals was a beautiful touch . My complements to the staff and to yelp and trip advisor for the outstanding recommendation. I will certainly return. My wife who is a talker, god bless her, was speechless. By the time of my reservation here, I had already eaten so much around Old San Juan that I wasn't sure that I could even stomach any more food, let alone tasting menus. They actually let my bf do the tasting menu while I just ordered an entree. Usually a restaurant makes the whole table participate. On top of that, each time a dish came out for my bf, they brought me something small so I wouldn't be sitting there watching him eat. That was really thoughtful on their part and I was really touched because I've never been to any restaurant that does that. The highlights were definitely the white bean soup, and there was a dessert that was so so delicious and unlike anything I've ever had. It was chocolate mousse with chocolate crumbles and passion fruit ice cream along with some kind of passion fruit syrup. Blew me away, I just knew the flavors would work even though it sounds a little crazy. The chef even came out to speak to us for a little asking us how we liked our food. For the price, you really can't beat it. It's not expensive at all for the quality and the amount of food they are serving. It's quite different from the rest of the food you eat in Puerto Rico in regards to portions and taste but definitely refreshing. read more

Wow. This restaurant is incredible. Interior is gorgeous. We did the 4-course tasting menu. Service: Amazing. Our waitress was lovely, answered all of our questions easily, and talked to us in between each course. The chef also came over and chatted for at least 5-10 minutes. Wine: Fantastic. Food: There were three of us, and I tried everyone's dishes throughout the night. I'll break it down: APPETIZERS/INTERMEDIATE: - Fire & Ice: Despite this being all vegetables, it is not at all boring. It was one of my favorite dishes. It's also beautiful; all green vegetables (broccoli, super food greens, peppers, maybe some others), with a cilantro/tomatillo/jalapeño dressing. A spoonful of coconut water-thai lime leaf sorbet sits atop the greens. This sorbet is a perfect complement to the vegetables. Loved this. - Yellowtail Poke: Also awesome. Raw cubes of yellowtail are paired with watermelon (a perfect pairing) in a ginger/lemongrass/soy-based dressing. - Risotto of Lobster: If you like risotto and lobster, you'll like this (funny how that works haha). There was a lot of lobster in the dish! I don't love risotto myself, but the two others loved this dish. It was creamy and flavorful. - "Spaghetti and Meatballs": UNREAL. My favorite thing I tried all night (well, toss up between this and the chocolate dessert). Who knew that lentil-based vegan meatballs could be so divine. And the spaghetti squash was heavenly, cooked in a tomato-pumpkin marinara sauce. All 3 of us absolutely loved this. It was a nice sized portion with 4 meatballs! - Black Truffle Pappardelle Pasta: Good, but pretty heavy. A lot of butter and truffle involved in this dish. I liked the wilted spinach mixed in. My friend ordered this, so I was happy to have a bite, but I wouldn't have wanted to eat the entire dish. - Duck Cocotte: I only had a small bite of this, and it was just okay. I can't remember all of the ingredients, but I know it was duck legs in some type of dish with cheese and parsnips (**I think**) and a few other items. MAINS: - Codfish: This was wonderful. It's cooked with octopus, clams, and small white beans in a paprika-red pepper broth. I got it without the ham (easily doable if you don't eat pork)! - Sea Bass: Also delicious. Both the sea bass and codfish basically melt in your mouth. This comes atop bamboo rice, which was a nice combo. The lime-coconut emulsion adds wonderful flavor. - Beef Tenderloin: I had a bite of the beef -- it was cooked really well! The caramelized onions were nice too. Didn't try any of the potatoes. DESSERT: - Choco-L8: Absolutely DIVINE. When Chef Peter was describing this to us, I was almost drooling. And then I tried it. Wow. There are various local flavors/textures of organic Puerto Rican chocolates that make up this dessert. You could even taste some of the differences within a single bite. It was unreal. - Mango Crisp: This was a vegan dessert. Our waitress said she loved it, and it sounded interesting, but I wasn't too impressed. It came with quinoa and granola chunks (those were good), and a sesame-flavored sorbet sat on top of the crisp. I thought the sesame sorbet was a bit of a weird flavor that didn't complement the mango very well. Don't worry, we liked it enough that we still ate all of it :) - Baked Paradise: A spin off of a Baked Alaska. This came with lots of ingredients, only some of which I can remember -- a nut-based cake, passionfruit puree, a few other ingredients, and meringue on top. It was good, but there was a lot going on. We enjoyed this, but the Choco-L8 definitely won for the desserts. Expensive for Puerto Rico, but coming from NYC, this tasting menu is a steal and a meal to remember. I HIGHLY recommend that you go. I ordered off of the vegan 4 course tasting menu and my girlfriend did the same with the omni food and both of us loved every single thing we ordered. I wish it wasn't such a luxury in terms of price, otherwise we'd go back on this trip. I'll look forward to next time. The service was also really fantastic and the waiter was knowledgeable. The only thing that wasn't perfect was the decor. Is was pretty loud and reminded me of A Night at the Roxbury. I guess this aesthetic is pretty popular here though. We went here for out 40th wedding anniversary. It was a fantastic experience. We had the 5 course tasting menu and wine pairing. A truly exceptional experience. The bean soup is a must! I was very reluctant about trying Marmalade since there were soooo many other restaurants that caught my eye during my short vacay in Old San Juan, Puerto Rico. However, when you see several friends on Yelp who gave it rave reviews including one of your BFF's what's a gal to do but check it out. I called in advance to see if I had to make a reservation for one and was told I could just come in and would have to sit by the bar. Initially I was fine with that but later regretted not sitting at one of the regular tables to take in the entire ambience and experience for this pricey meal. This was my last restaurant for dinner during my PR vacay trip so I wanted it to be memorable and it truly was an elegant experience. I ordered the prix-fixe four course menu as strongly recommended and was very pleased with most of my courses. For my cocktail, I ordered the passion fruit sangria which was delicious. The first course was the white bean soup which I was expecting to be outstanding based on most of the reviews and it truly lived up to its reputation. The flavors of that soup blended so well together the only thing I was disappointed in was the small portion in the bowl because I devoured it so quickly. The second course was the paella that looked like sushi (which I don't eat) but was informed by my server/bartender (I forgot her name, but she was a sweetheart) that there was no seafood and it was just presented like a sushi. The paella was delicious and had a little spicy kick to it that I loved. The presentation of the paella was cute and unique and described as "sushi esque" bite size pieces of crispy Andalusian style paella filled with smoked chicken, peas and peppers flavored with a Saffron-garlic espuma & a chorizo-tomato sauce." The third course was the pork cheeks that I thought would be similar to pork chops which I love. My bartender/server informed me they were better than pork chops and very tender. I was very excited about this course and to my surprise the chef himself delivered this course and explained how it was prepared. I could barely hear him and was just excited he didn't forget little old me sitting at the bar, which was very a kind gesture. Those pork cheeks were tender and so flavorful. I didn't leave a morsel of meat on my plate. The final course was the dessert and I ordered the Milk Chocolate *Macadamia Nut dish which was just okay. I only liked portions of the ice-cream. Overall the experience was memorable and I can say I was there but surprisingly this wasnt my best meal in PR. It's a great midweek dining experience if you've got a week in old San Juan. Local puerto rican food can be very repetitive. It'll give your palette a good break. We picked 5 courses although I honestly feel 4 course would have been sufficient. 1) poke- cubed salmon, tuna and watermelon with sesame seeds. Refreshing start. 2) white bean soup- creamy bacon soup you'll have to lick off the bowl 3) sea bass- it's like the sea bass lullabies on a bed of creaminess 4) creme brûlée- ive never had caramel corn flavored brûlée and I'm surprised not a lot of places have tried too. I was hoping it was torched more on top and will be better off without caramel popcorn mixed into ice cream Cocktail: Global Warming - you must've ok with spice, more so, spice that gets even more spicy. It's heat that's evolving every sip. You'll find it very soothing. The only thing I regret is not having asked the chef why he named the restaurant Marmalade. We asked our tour guide for the best restaurant in Puerto Rico and this was his suggestion. The restaurant did not disappoint. Everything about it was perfect including the food, service, and ambiance. This is fine dining at its best. We decided to do the 5 course meal option with the wine pairing. The additional wine pairing was definitely worth it. The waitress took the time to thoroughly explain each course as well as the wines. The restaurant is actually known for their tasting experience. The food portions were actually larger than what I expected based on other fine dine experiences that I've had. I was actually getting full by my intermediate meal. If you're not as hungry, I would definitely go with the 4 course meal but the only downside would be that you wouldn't have as many options to try. I would definitely return to this location again. The food is pricey but you really can't expect less for the quality of the food and the whole experience in general. I highly recommend treating yourself to Marmalade! read more

Wow. Wow. Wow! It's been a long time since I've had a meal so amazing. Christmas dinner we were able to snag a 9:15pm reservation and boy oh boy were we glad we did. The food, the service, the wine pairings were all outstanding. Because of the reviews we both ordered the white bean truffle soup. Phenomenal!!! So many incredible dishes the 2 of us shared by having the five course meal, but the winner of the night was the cabernet braised short rib gnocchi and the incredible wine they paired with it. This place is the real deal! It ranks as one of my favorite dinner experiences ever (Masa, Lutece, Lespinasse, Bouley and Decoy still top my list, but this was not far behind). My wife and I went for dinner and we were blown away by the service, food, and decor. The service made the meal special. Our server, Katya, was exceptional. She was charismatic and approaches her job like a true professional. Her descriptions of the wine pairings with each course were both fascinating and on the mark. Coincidentally, she is from the same small town in NY where I grew up so we had a nice chat about good old H-O-H! We would specifically request her if/when we return! The food was great. The ingredients were top notch and the flavors were rich and hearty. The smoked Heritage Berkshire pork cheeks, lobster risotto, paella sushi bites, and the Tiny White Bean Soup were amazing. The "liquid desserts" were also fun and very tasty! The decor transports you from the cobblestone streets of Old San Juan to an elegant and chic grand space. The massive space is broken up with the use of curtains and various types of furniture and seating configurations. This results in the ability to have a very romantic dinner in a very large open space! It's the perfect restaurant for a special occasion without any pretentiousness. Ofc I didn't plan to come here in my sneakers, but well, uh.. We chose the 4 course meal - they had a lot of veg options and the chef himself came out with one of the courses- he even chatted with us for a bit which was a nice touch. The food was amazing as we expected, maybe a bit too much for us- but oh so good! I recommend you get the wine pairing- if you order 2 cocktails per head its going to cost the same- we regretted not doing that and -1 to our server for not even recommending that :( read more

Amazing! Marmalade provided one of the best dining experiences that I've had in a long time. They have really taken time to craft an appealing menu filled with amazing flavors and twists on common meals. And everything was delicious! You can order anything and will be happy. By the time my entree came out, I was stuffed, although the appetizers are very small portions.
