I had the opportunity to dine at Marmalade two nights in a row and it was AMAZING! The service is exceptional and the food is delicious. A truly phenomenal experience! The service was exceptional; the entire staff were super friendly and helpful. Our server, Rafael, was very attentive. Not once did we ever have to request anything. A little odd that the food came out almost "family style" rather than individual plating, but everyone got more than enough of each dish. Seriously, this was a lot of food. My first upscale restaurant in PR that I've eaten at. It does not disappoint. I told them it was my first time and they gave me their famous soup on the house! It's stellar. Like stellar. Ok...how do I even get started? This was the best meal I have ever had in my entire life. From the first course, to the wine pairings, to the way they treated us like royalty...I literally have nothing but positive things to say. Every single dish was even better than the last. As you walk in you're greeted by a friendly hostess and a gorgeous bar with warm colors, sheer drapery between tables and high ceilings. My friend and I tried different items off the 5 course menu for $135 each and included wine pairing for an additional $75 per person. Our server, Zullybeth, was extremely personable and provided top notch service throughout the courses. She described the wines in great detail. She went the extra mile and showed us all the bottles because we inquired about them including the rum! For our first course I chose the popcorn shrimp which consisted of three shrimp with guacamole and seasoned popcorn. The presentation of the 3 shrimp were lovely however the most prominent flavor was the charring and gauc. My friend had her paella presented like sushi which she loved but taste was mild. Second course, we had the signature tiny white bean soup-- our favorite of all the dishes! Great flavor. This is a set course on the menu. For the third course, I had a scallop surrounded by a "red curry" light broth which flavors were lacking when I think about a red curry. The manager was extremely attentive, kind and appreciated the feedback. The chef even created another serving of the dish in which he attempted to concentrate the flavor of the red curry more but all I tasted was an increase in the heat of the dish and not the red curry flavoring. He brought us a complimentary sampling of the golden beet dish which was fabulous. The bright flavor of the beet complimented the crunch of the radish and cheese perfectly--I usually don't like beets but it was delicious. My friend had the malanga gnocchi which had a delightful combination of textures and braised beef ribs cooked beautifully but the sauce of the gnocchi was again slightly lacking in intensity of flavors. For our next course, I had the halibut which was beautifully cooked with light delicate buttery flavors. My friend had beef tenderloin which she enjoyed. It was well cooked and melted in your mouth. Lastly, we had dessert which we both loved and bought the meal to an enjoyable end. My friend had the 8-layered chocolate dish and I had a honeycrisp almond cake topped with fig and praline icecream. The wine pairing was the best part of my friend's experience with all her dishes. I enjoyed all my wine and rum except for the first one which had a kombucha after taste-- our kind server warned me about this! But I tried something completely new that I wouldn't have tried on my own! Overall, we enjoyed the presentation of the dishes, texture of the foods, wine pairing, service, and decor of the restaurant, however we were disappointed in the intensity of the flavors of many of the dishes because we were expecting each dish to have a distinct flavor. Overall, my friend and I had very different experiences based on the dishes we chose. Based on my dishes, I would not choose to have this experience again at this price point. read more

While the food was an absolute experience, the service was really what shone during my visit. My boyfriend and I came here for our anniversary, and the staff put in so much effort so make it a special night for us. Our wonderful waiter, Santi, said at the beginning of the night: "We're going to be wishing you a Happy Anniversary all night" and they absolutely did! The well-wishes came with the complimentary champagne, the surprise course before our main dishes, on a chocolate plaque that came with each of our desserts, and with the card signed by each of the staff. The seemingly dozens of staff explain each dish with strong knowledge whether they are describing the flavors of the food or the origins of each wine pairing. Suggested is to reserve months in advance. Hardly inexpensive, each of the five courses we chose in our tasting menu was mouthwatering and rich. The key is that the diner gets to choose from many options rather than what the chef decides. We chose a wine pairing with ours which is suggested. The accompanying photos hardly do justice but the truffle bean soup is the best I've ever had. On the pricey side but worth it. We made a reservation after reading all the good reviews and the restaurant didn't disappoint us. Dress code is casual smart - hubby wore a button-down short-sleeve shirt and I wore a dress. We saw one or two customers wear shorts, so I guess you don't have to change clothes as long as you don't look too casual. The interior is modern and nice. We noted that we would be celebrating our wedding anniversary in our reservation and there was roses on our table! Our main server and the rest of the dish serving team were just so knowledgeable about the menus and did an excellent job taking care of us! They were all patient and friendly and made you feel comfortable and respected. Now the food & drinks. Let me start by saying the presentation is very good and the plates and bowls to serve food are all warmed. The chef's menus are pretty diversified and actually give you lots of options. The white bean truffle soup on the house really amazed us - so creamy, rich and flavorful and contained generous of truffle. The beet appetizer and popcorn shrimp appetizer were both refreshing. Great start indeed! Our two entrees (second and main courses) all came at a perfect portion size and were so flavorful. A definite must visit while in Puerto Rico! Top notch service and excellent dishes nearly across the board. Starting with our choices for "beginnings" was the Fluke Crudo, which was nice and fresh. However, the Ahi Tuna Tartar blew this one away! If you enjoy Mediterranean and Tuna, then this is a must try! A definite standout for me. The next MUST for me is the Tiny White Bean Soup. Holy cow! Probably the best soup I've ever had anywhere. So rich, so creamy, so perfect! There's a reason it's been on their menu since the beginning. Last for this course, the Lobster Risotto was also very good. Rich and packed with nice moist lobster meat. For mains, I will admit I didn't enjoy these quite as much as the beginning courses, but the halibut and beef tenderloin were still both solid courses. Maybe just a bit less "outside the box, take your breath away" type dishes! For dessert, the bread pudding stood a notch above the crème brûlée but both were still quite good too. I booked a reservation for Marmalade in Old San Juan, Puerto Rico as our "special meal" during our trip last week. WOW, this didn't disappoint! More of a fixed price menu than a tasting menu, as you got the option to select a starter, appetizer, entree and dessert of your choice, and they also provided a second appetizer of a white bean truffle soup. The per person cost was $135 and you could add a wine pairing for $79. We found their wine list to be excellent and selected a bottle of Gigondas plus a glass of Sauvignon Blanc to start. The food was excellent from start to finish with a beautiful presentation for each dish. Servers were attentive and polished. The manager came over and chatted with us and later brought us some local "moonshine" he had around so we could try it. It smelled high octane but went down super smooth, and was flavored with ginger. Definitely worth a visit if you've got time in Old San Juan. read more

Cocktails are expertly crafted-- tried the Global Warming (which definitely has a kick to it) and the Bob Marley (my favorite, could barely taste the alcohol and was the perfect fruitiness). My sister got the wine pairing and she loved it (our favorite food-wine pairing was the Cabernet blend with the gnocchi). We started with martinis, one standard and one custom and they were both perfectly made. We ordered the cauliflower salad and mini tacos for appetizers. The cauliflower is marked as a salad but is most definitely an appetizer that deserves to be shared. It was a heavenly mountain of perfectly roasted (but not greasy or battered) cauliflower on a spread of delectable hummus with pomegranate seeds and chopped almonds. It barely makes sense how good it tasted and I will spend a long time trying to figure it out. Next were the veal cheeks and chicken crillio and I don't think either of us said anything other than "oh wow" until we were finished. The flavors were incredible, but the tenderness of the meats were out of this world and not often found. We somehow managed the almond custard dessert, and it blew our minds. I didn't really enjoy my meal at Marmalade and am a bit confused about the hype. It was really hard to get reservations but we heard so much about it, we decided to stomach the 915 reservation. We arrived around 820 to see if they could squeeze us in earlier and there were plenty of open tables and they seated us right away. It seems like they pretended to be more booked than they were, which is strange to me since you would lose patrons. The food took awhile to come out and tbh, it wasn't very good. The day of our reservation, they called us to confirm the reservation, ask about dietary restrictions, and congratulate us for celebrating our anniversary. As a queer couple, we are always a bit hesitant to out ourselves in new spaces so it was incredibly comforting to be welcomed so warmly. We never had a single glance that made us feel like we didn't belong or that it was confusing that we were celebrating an anniversary. Our server was absolutely exceptional. She took the time to explain the menu and help me make selections based on my dietary restriction (gluten-free). Although you select the number of courses you would like, the actual course selection is sort of a la carte. We picked the four-course tasting option and were completely stuffed by the end of our meal. There were plenty of gluten-free options available, so I never felt like I was missing out on dishes. As others noted, the wine pairing is an absolute must. Truly the highlight of the whole evening - and we're not particularly wine savvy people. Our server was excellent at explaining the wine and rationale for the pairing which helped us enjoy the pairing much more. I finally understood why a good wine pairing can be so powerful for a culinary experience. The wine took our meals to a whole new level. Marmalade is our GO TO when it comes to visiting Old San Juan. We first visited Marmalade about 8 years ago while staying in San Juan. Since then, we've been back several times while cruising and porting in Old San Juan (specifically just for the white bean soup - no seriously, it's the best...I'll get there). On our first visit, (a la carte dining, no wine pairing), the server asked if we wanted to try the white bean soup sample. Some in our group politely declined, but I happily tried the sample. It was like the scene in Ratatouille where you feel like you've traveled in time and the rest of the world just stops around you. YES, the little sippy cup of white bean soup was THE BEST SOUP I've ever had, ever (and I've had a LOT of soup).
