I have been a loyal follower of the Max's Restaurant. I grew up eating their famous chicken and Pancit. Hearing they're coming to town brought back childhood memories. Our server Brian was stellar. He got all our orders correctly and was very attentive to us at all times. Food were served fast. It lived up to my expectations! The chicken was crispy on the outside but juicy on the inside. Perfect with the banana ketchup as the dipping sauce paired with Worcestershire sauce. The pancit was spot on! A dash of lemon was the perfect way to enjoy it. The BBQ skewers were bomb! It was very tender and tasty. Best paired with their signature spiced vinegar and atchara. We also had Kare Kare. The meat was very tender and tasty. They were super busy on the opening day but we didn't feel we got neglected. Our server and even the owner checked on us before and after our orders arrived. The giant Halo Halo was the perfect finish for the sumptuous meal we had. My party shared this and it was the perfect size to share with a party of 4. Lastly, this is by far the most modern Max's Restaurant I've eaten at in the US. Lily was the host today. Kristine was our server. It was a pleasure to dine at Max's Bakersfield. The place had an embracing feel to it as soon as you walked in. The busser, Alex, was on point with refilling our drinks. We ordered the spring bundle and it was a pleasure. Crispy Pata and Bulalo was a match made in heaven! I was stationed in the Philippines and this was the worst food and service. I expected the restaurant to serve lumpia and adobo but it did not. The pancit was greasy and inedible. The food here at Max's iin Bakersfield is delicious! I have been going to Max's in Quezon City as a kid. I especially loved their fried chicken. As a Bay Area resident for more than thirty years, we also frequented the Max's In Daly City and South San Francisco. Moving here to Bakersfield, the closest Max's is in Glendale where we sometimes visit with the grandkids. How delighted I am that we now have a Max's in Bakersfield. The food is a delight to the Filipino palate. It's a plus that the staff are friendly and courteous too. To sum up today's visit, we totally loved our fried chicken. The crispy pata came out great - crunchy, meaty, and good serving size. Same with the pakbet. Not quite impressed with the palabok though. Its just did not have the right flavor for me, mostly lacking any hint of tinapa. Price: 4/5. Average for this type of place. Service: 5/5. No problem here. Ambiance: 5/5. They don't have a waitlist. When we got there, it was a 30-45 minutes wait, you can't make reservations, overcrowded and understaffed, they close early on top of that. Overall, this place is the worst restaurant in Bakersfield to go to eat. I wouldn't recommend it to anyone unless they want to starve to death while waiting! We were hungry and very disappointed! If you want Filipino food go to Jollibee's. So, we decided to go to our favorite Thai food place Chef's Choice Noodle Bar, where there is great Thai food and their service is friendly and courteous. The food was extra oily (pancit). Please do yourself a favor and DO NOT TRY IT! My chicken had blood between the leg and thigh. I sent it back to the kitchen, and they gave me another piece that I could not eat due to the blood in my first piece. The fries that came with the chicken were flimsy soaked in oil, not crispy at all. My server never came back to my table to refill my water or bring my check. All the servers were pretty much looking like they were chickens with their necks cut off literally running in the restaurant. I will not give this place another try. Great to see a Max's in Bakersfield. There is a good amount a Filipinos here and this is the holy grail of Filipino restaurants around here. Food is fresh and good quality. Service is exceptional. Ambiance is clean and nice and they even have a room that can be separated by closing a moving wall and it can host private parties with karaoke. Bulaklak was crispy and delicious. The deep fried chicken is excellent. The garlic rice was very aromatic, and the red pancit was excellent. We only had one thing we would have enjoyed more. We would enjoy iced tea without sugar. Came here for the third time for dinner. As usual, it takes forever to get someone to serve us drinks and take our order. This time, our server didn't bother to write down our order and kept repeating and forgetting. Ultimately forgetting one of our entrees that we had to remind them of for the server to only come back and say that they were still making it but asked if we still wanted it or to cancel. She made it seem like the cooks at fault, I'm pretty sure she forgot it on our order. Terribly disappointed, servers need more training and a better attitude. This is my second visit as their chicken and pansit bijon was just meh, when I visited soon after they opened. Tried other dishes this time, and everything was very salty. The Bullard was very salty and sent it back, and the replacement was still salty. The Daing Bangus was over salted and more like dried salted fish due to too much salt, and not much vinegar in the seasoning. The Laing was also over salted and missing coconut taste.
