Its very unassuming both inside and outside. I went during the week for a late lunch. The place was almost empty, just my table and two people at the bar. The interior was clean but had clutter in the corners. We were greeted by the only person there, I believe probably the owner or manager working as a server. They have a diverse menu. We ordered and they brought out chips and salsa. It wasn't bad, the salsa was a bit spicy for my taste. My seatmate order the chimichanga without the smothered green chile. My companion said it was good but there was something off-putting about the chicken, they felt like it was mix of pulled chicken and canned chicken. I ordered a choice special with chicken enchilada, beef tostada and rice and beans. Overall it wasn't bad. Everything tasted as expected. The chicken enchilada was a bit bland even with the red sauce. It tasted fresh, but was missing that exceptional restaurant quality that you want when you go out.

Let's go through each stage. 1. Quickly presented with water and chips and salsa. Both were very traditional and quite good. 2. Ordered two Ana's marg no salt and they were quite tasty. Nice balance of sweet and sour, shaken so they were nice and cold. Good enough we had a 2nd round. 3. The food, the wife ordered two fried tacos and I ordered to pork burritos. My wife was stuffed after eating her two tacos and I got two good sized burritos smothered in green chili. The chili isn't hot but very good flavor. I finished one burrito and brought the other home for the next day. Now the real question, will we go back. 100% !

Dinner for me was $11 with 2 glasses of wine an enchilada and a crispy taco. The "rose" was white zin. :-/ but I could trade out for another wine and get it to go. You can't split the buy one get one. Each person has to get their own. The house margs were strong, but if I was in a blind taste test, I would not guess it was a marg. I love spicy food and asked what was spicy. He said they have a habenero salsa I asked for that and then asked how the green chili soup was. He brought me a taster...oh I was so happy!! We got some to go as well as the habenero salsa! The Tamale was delicious. Lots of meat and the green chile was so good. It has a bit of fresh lime and a nice kick. I was worried because of the 3.4 stars, but we were happy we crossed by El Rincon, we would definitely come back!! I might just order beer next tIme.

This time, lady is kind enough to remove coleslaw (it's spicy) in my own opinion, I don't like it, especially mixed into my food. Cost of an enchilada is $16.02. In some pictures online, it's shown with tomatoes, lettuce & sour cream, but noticed when ordering, below it says, you've to pay extra for tomatoes $1.00; lettuce $1.03; and sour cream $1.55. Lady on phone is kind enough to make an inquiry (it's not an option) to exchange coleslaw for lettuce, In the end, I paid for tomatoes $1.00, exchanged Cole slaw for lettuce and no sour cream, subtotal $17.02; added taxes & fees, equals $21.06. It's been lengthy time since we've returned. After, my last review, I'd place orders & it would be intentionally made spicy, added coleslaw (even mixed into) enchiladas. And, someone would ensure my meal wasn't to my liking and left me unable to consume. However, it's been some years ago, soon after their opening and they're aware, I don't eat spicy foods. I'm disabled, stuck to home & my husband is my sole caregiver. He doesn't cook, did his best to provide, which means utilizing what surrounds us. Considering where we live, we're limited to, authentic Mexican food that's easily accessible to our home. Again, I think, some years back, we ate once inside the establishment. I can't comment on ambience, it's to-go orders for us.

Pedro's has been here since sometime after the pandemic was over. We have a lot of Mexican kitchens as well as Taos style food but I inky know if one other Tex Mex eatery in Boulder and one we have not had a good experience. Pedro's was actually good. Neither of us drinks Tequika but we both got something we liked. My husband loves Amber beers and he was able to get one here. I am forced into iced tea in these situations and Pedro's made a nice one for me. Our server was so friendly helpful and efficient. We had decided we'd give them a try by testing out their nachos with grilled chicken and for the two of us made an ample meal at such an early hour. At seating we were brought a good sized bowl of warm corn tortilla chips and a red salsa a step beyond many others we have had. Not bland a d nit hot and very refreshing. The nachos were good too with ample chicken and guac included. And a smooth queso too. The booth seating was pleasant and comfortable and in such good condition and I was at a good height , and did not feel dwarfed as in some other booth seatings here in Boulder. The decor was nice and exemplified the Tex Mex theme. It was also nice that the customer base was not solely CU students as many in Boulder are. Families from all walks of life in Boulder as well as students filmed the tables. Many seemed like regulars and yes, of course some were students and some probably tourists as downtown on a Saturday would predict. I'm sure we will be back again.
