One of the key elements that makes the authentic version such a hardy classic is the combination of tastes and textures from the combination of ingredients. And one of those important items are the fried eggs with the yolks still runny - this adds a certain creaminess to the underlying sauce. I'll keep looking for an acceptable version of this dish.
