    Word of mouth was Midnite Ramen being one of the top ramen spots around. While tasty, the broth here is a simpler style and I personally enjoy a richer umami broth. Nested in the brewery, it's a convenient spot to catch up with folks, grab a drink, and grub. Parking can suck however, since this is Fremont and you'll need to find street parking. I don't like the idea of hot soup in plastic but it's street food style and the disposable bowls are consistent in theme. Zangi - Hokkaido style chicken karaage! Delicious, juicy, and flavorful with some hints of garlic. Larger pieces than typical karaage, these were a hit for me. Highly recommend and the spicy mayo on the side was tasty. Hakodate Shio Ramen - shio sea salt was my choice for their simple, chicken and kelp foundation. Basic is good, comforting, and hearty, but hard to be special compared to others. Lots of additional toppings are included but what surprised me was the takoyaki inside. They got soggy which is a stark contrast to my expectations for takoyaki. Little small, but can be filling because of the quantity of items inside.

    Eater Seattle suggested Midnite Ramen. The vibes felt right in the multipurpose brewery space but I was underwhelmed beyond that. I ordered the miso-bold on the kiosk which came with 1 thin pork slice, half an egg and a mixture of blackened garlic/chili oil. For $19.90 (after tax) the paper bowl of noodles were bouncy but the flavor profile lacked richness and much to be desired. The blackened garlic did the light broth no favors and seemed to trudge over the would be a more subtle soup. There was a charcoalish, bitter taste. The balance was off for me. I supplemented my bowl heavily with garlic and chili from the to-go counter. Maybe this was the end of the batch of blackened garlic, but I would order the wontons or Taiwan spicy ramen next time.

    The Midnite Ramen situation is like walking intl Disneyland. You got beer, you got ramen, you got sushi and other various Japanese cuisine, what more could you ask for? We're about to have depressing weather very soon. So add this to your list so that you can grab a beer along with a warm bowl of ramen that is like a blanket for your soul. I've had a variety of the ramen dishes here, and I'm blown away by the broth every time. It's so deep and flavorful that you're guaranteed to tip up that bowl and drink it all (regardless of recommended sodium levels). It's worth it. And everything that they're throwing inside that bowl is prepared perfectly. I'm not even sure how you get a boiled egg to still be kinda runny like that, but they've mastered it. The slices of pork that they layer in there are top notch as well. There are loads of options in the area for various forms of soup, but Midnite Ramen is a must add for your dose of broth.

    Arrived on a slow Sunday. They take orders via a Kiosk machine each bowl runs about ~ $16-20 bucks.. The noodles were decent, but seemed like the package pre-made kind :) Ordered the garlic and classic 50s ramen. - the portions decent - flavor were strong A warming meal, chill ambiance and with indoor/outdoor seating. I felt the ramen was just lacking a bit of depth, it had a strong dashi flavor but not the layers of flavor I'd expect. The noodles were cooked well and toppings nice. Wish there was more veggies. They had a near bar for sauces. For a daytime lunch meal doesn't really hit the spot for me but if this was for midnight hence the name this may be filling and delicious.

    Midnite Ramen takes up the kitchen in the back of Figurehead Brewing. Since it shares space with the brewery, there's plenty of seating and a bar to get some great drinks (although, I can't vouch for drink quality since I don't drink!). For people who like me, there's a water dispenser by the bar. The restaurant portion is entirely self service, with kiosk ordering and a condiment and utensil counter nearby. For easy cleanup, there are two areas for bussing the dishware. Taiwan Ramen, Shoyu Base ($16) - I haven't heard of this regional ramen variety even through all my trips to Japan. Apparently it originates in Nagoya, where customers named the ramen after the nationality of the chef. This dish is surprisingly delicious. Japan isn't exactly known for spicy food, but this dish certainly packs some heat, being hot enough to get me sweating. The main heat comes coming in the back of the throat and is quite relentless, spreading throughout the entire mouth. The broth is spicy, yes, but it's also aromatic, salty, and filled with umami, perfectly balanced with the oil and fat floating on top. The noodles are of a thin variety and cooked to perfection with good firmness and plenty of bounce. In terms of toppings, there's a ton of chopped garlic chives, adding a herbaceous and chewy element. There's a couple pieces of bamboo shoot that are well marinated, tasting slightly sweet and full of umami, adding a crunchy texture to the dish. There's half an egg, about 30 seconds past being perfectly soft boiled, so while some of the outer edges of the yolk have set, it's mostly jammy and the egg as a whole is tender. There's finally a scoop of super tender minced ground pork, extremely flavorful and slightly spicy. Overall a very good ramen! (4/5) One thing I found to be a major negative is that the ramen is served in a paper bowl. The oil soaks into the paper very easily and the bowl starts getting a little floppy, although I didn't find any broth leaking through. Bathrooms - Two unisex rooms.

    Tucked away inside of the back of Figurehead Brewing is Midnite Ramen and the food is amazing. There are kiosks to order from. The menu was limited to just a few items when we were in but everything was delicious. Love that it's inside a brewery so you can get a beer while you wait. Such a cool spot!

    I really wanted to love this place. Ramen located inside of a cute unsuspecting brewery on a sunny Seattle evening? Count me in! The space is absolutely adorable, with cozy outdoor patio vibes perfect for a chill hangout or casual date night. The staff were super warm and welcoming, which made the experience feel friendly right from the start. That said... I have to admit the food didn't quite hit the spot for me. I'm not the biggest ramen connoisseur out there (full disclosure!), but I've had a few memorable bowls in my time, and sadly, this one just didn't measure up. The broth was noticeably oily and lacked the deep, umami-rich flavor I look for in a solid bowl of ramen. It felt a bit flat and one-note, which is tough when the broth is supposed to be the heart of the dish. On the plus side, the noodles themselves had a great texture, since they were chewy and springy (just how I like them)! And the marinated egg was well done too So while the ambiance and service are top-tier, the food itself didn't wow me enough to make me want to return. Still, I totally see the potential here and hope others have a better experience! If you're already here for the brewery vibes and want a snack, it's worth trying once.

    Tried this place probably one of the best ramen I have tried in Seattle area, this is probably a hidden gem. I ordered the Taiwan ramen and also got gyoza. The noodles were really tasty, the ramen was very flavorful. There is plenty of service and the food comes out very quickly, very fresh. The staff is very welcoming! It is a nice place also has a brewery inside and must try.

    The ramen here was just ok. It feels more like a place you'd grab a quick lunch during a busy workday - the food is decent enough for a meal between work, but it's not aiming for deep or layered flavors. We ordered the Shoyu Deluxe and Miso. Shoyu Deluxe only came with one piece of braised beef that was a little dry. It tasted somewhat like a Taiwanese beef noodle soup, but less profound, more like a basic soy sauce soup. The Miso was surprisingly spicy and didn't really taste like miso - it felt creamy but lacked that distinct miso flavor. Overall, the food is truly just okay. However, the place itself is fun, with a brewery inside. I think it's a great spot to hang out with friends, though not primarily for its food. We didn't try their beers or wine from the bar. Maybe those are better.

    Delicious and beautifully prepared ramen, quickly made with very friendly service. Eating in the Figurehead brewery is also very pleasant and chill. (I did not order beer.) I also appreciate the moderate portions. The huge bowls of ramen, just up the street at Oink, are too much.

    On our travel day, my friend and I stopped at Midnight Ramen for a late lunch/early dinner on the recommendation of someone at the nearby Brooks Trailhead. It's tucked in the back of a brewery which can make it pretty easy to miss and very unassuming but overall the food was solid. I was a little confused when I first arrived because a sign for another restaurant in the shared space said "closed," but Midnight Ramen was indeed open. I debated between some of the ramen options and the poke bowl and ended up with the salmon poke. The salmon was fresh, the portion size generous, and the price was reasonable. It's an order-via-iPad setup and you pick up your food when your number is called, so service is minimal but that worked just fine for us. We sat outside at a table, enjoyed the relaxed atmosphere, and left satiated and happy.

    My second visit this time with friends. First time I had the Kumamoto Miso Bold which was a little too heavy for me personally with the chili oil and miso broth, great noodle chew and love the bamboo shoots. Today I had 50's Classic Shoyu Ramen with chicken loved this dish lighter but still flavorful. Really enjoyed it and the noodle chew was still perfect. The first time I went during the week for dinner and ordered at the truck. service was friendly and quick. This time we went on the weekend for lunch so you order at the kiosk. less interaction with individuals but still friendly. This is located in Figurehead Brewery on Stone Way. Casual and clean atmosphere. Lots of tables and a bar to sit at.

The broth wasn't very salty or over complicated itself with a burst of spices, but highlighted the simplicity of a good ramen, tasting the long simmer of the pork. My dad was honestly pretty pissed circling around the area for an hour for parking, but said it was all worth it, even waiting in a long line.
