    They were out of their vegan noodles which I think would have been much better based on the description, but I was stuck with the tomato egg noodles. It was fine but there's only so much tomatoes and eggs can do to help the noodles along. For what it's worth the noodles were excellent and I mostly ate those. The server was very sweet and double checked that I had meant to order one to go and one for dine in (I did and was bringing one home for my partner). I appreciated that attention to detail to avoid an oops. It's got lots of big tables to eat at and spread out but it's a little loud. I had a phone call I had to take and couldn't really hear them well over the music. Overall I'd like to go back and try the vegan noodles to see if I'd like those better and then I'd probably have more stars to give on the food front.

    Okay, Nuodle...you're pretty tasty! We were pleasantly surprised with how good the food was here. These dishes had a lot of flavor!!! And seemed authentic.. You can choose your own noodles, if you order a soup and they have several different options. You order from a kiosk then sit down and wait for your number to be called. We didn't wait long and food comes out pretty quickly. You pick it up at the counter then you bus your own table. Utensils and napkins are in a hidden drawer at the end of the table. I wish there were signs telling us that! I also wish they had actual soup spoons. Instead they have flimsy, plastic spoons. Overall, though, pretty good flavor and big portions!

    Fast and casual self-serve place in U-district. You order through a kiosk and pick up your food at the back counter. Lots of seating and good for solo meals. I paid around $20 for a combo meal with noodle soup, side, egg, and drink, and you can customize the noodle shape. The bowl size is HUGE!!! The noodles were super fresh and chewy, however the soup was not as rich and flavorful as I'd like, and the beef was a bit dry. I liked the pickled cabbage, which was crunchy and acidic. Overall, it's a good place for a reasonably priced meal with large portions and fresh noodles.

    We visited Nuodle Express for a weekend lunch, intrigued by their selection of hand made noodles. It's a counter service - ordering is done on the kiosks in the front, and when the food is ready, it's picked up at the counter. Utensils and condiments are at the table. It was only after we ordered that we noticed the waitress was clearly sick, having coughing fits every couple of minutes. Uh oh... Hope for the best I guess? Unfortunately we both got sick a couple of days afterwards... Stewed Beef Rib Noodle Soup, Normal Noodles ($16.99) - I especially love how they have like 7 or 8 different noodle types to choose from. We went with the recommended normal noodles. The chef handpulls them right in the kitchen, very freshly made and cooked to order. Due to the hand pulled nature, the noodles aren't super consistent in width, resulting in some strands that are a bit too firm, while the thinner noodles basically have the perfect chew. Based on the menu pictures, I thought this dish would be more hong shao-type, but this dish more resembles a Lanzhou-style with, I believe, the addition of a bit of soy sauce. The flavor is light, salty, peppery, and quite savory, better than some qingdun soups I've had in Asia. There are some thinly shaved leeks and cilantro leaves/stems for herbalness as well. The beef rib is nice. While the meat isn't exactly fall off the bone, it's easy enough to bite through and chew, while still remaining attached to the bone. It's fatty and has a very nice savory flavor. (4/5) Flavored Beef Slices ($4.99) - Five spice is in the name but not really that flavorful. Instead, it's mostly beefy in flavor, kind of like a roast beef with a tiny bit of extra spice. It's nice and tender and easy to eat, but the flavor is much lighter than I'm used to with this dish. I added it to my noodle soup to give it a little more flavor.(3/5) For condiments, they have vinegar and chili oil. The chili oil is nice and smoky with a small spice level that builds. Be careful with the vinegar. While I've always heard that more flies can be attracted with honey than vinegar, this vinegar must be exceptional, because the bottle at our table had a good 10+ small flies floating on top of the liquid. We did bring this up to the employee, so hopefully they'll start inspecting the bottles in the future. I rate restaurants based on food. This is a 4/5 purely for the food. Considering their sanitation standards and the sick worker, this is probably closer to a 1/5. I certainly won't be returning Bathrooms - Two unisex rooms

    Surprisingly delicious restaurant tucked away in the University district. The noodles were delicious and what I expected for hand pulled noodles. You walk in and immediately make your order at one of two kiosks. You sit down and they call your number rather quickly. They don't waste time making your food. Then, enjoy some of the best noodles in town. The restaurant itself is okay. It's that kind of concrete, warm wood, modern look to it. There's no signs what you need to do so you end up just guessing. Staff is friendly and helpful but don't do things like bring food to your table unless they are delayed at doing so. And it's bus the table for yourself. All in all, nice place to eat but you do everything yourself.

    We ordered beef noodle soups through DoorDash, and they were packaged very carefully-- all components were separated. We tried the spicy beef rib soup ($16.49 inflated Door Dash price) and the beef flank soup with regular noodles (same inflated Door Dash Price). You can choose your noodle type and spice level. The broth was salty and light, and the noodles were delightfully chewy, just as hand-pulled noodles should be. The herbs on top were fresh, and the meat was extremely tender, falling off the bone. I guess the only nit I had was that the bone was quite small and fatty, but I love fat and the meat was so tender and delicious it hardly mattered. All around, great!

    Got the classic beef noodle soup and the noodles really were as advertised- chewy but not indulgent. We had a bit of a Lady and the Tramp situation with the long noodles while sharing but it made for some cute clumsiness. On another note, their bev game was popping - the plum juice and lemon green tea quenched our thirst for life. Make sure to get your soup spoon from the side of the table.

    Grabbed this meal to-go on a rainy day. The lady who helped me was very nice and I didn't have to wait in line to pick up my food. The restaurant was clean and well lit. Lots of seating. I got it to-go so these are the containers they came in. I took a pic of the soup after it was refrigerated so that's what all the white stuff on the top is. I went ahead and heated it up without removing the fat and it wasn't oily at all. Overall the flavors are good, not overwhelming. For me, one container of chili oil in the soup was the perfect amount of spice. The chicken thigh was juicy and the vegetables were cooked well. My one complaint is the rice because it was too dry for me to- I prefer my rice on the sticky side. Also, the photo on the menu showed a flavored rice with corn and things but the meal just came with white rice.

    Service is super fast and you get a really good portion for the relatively inexpensive price! You can feed two people with just one bowl of noodle soup! The broth is delightful and comforting and full of flavor and the noodles are the right amount of chewiness! Overall a good spot if you want some noodle soup in an otherwise unassuming eatery!

They also now have a very handy duo of ordering kiosks, which you order at prior to sitting down. I found their kiosks easy to use, which isn't always a given. This being my first visit back in a while, I had to get the spicy cumin lamb biang biang noodles. However I had to try some dumplings, so we shared the lamb dumplings, while my dinner buddy had the spicy cumin lamb rice noodle soup (the same kind of noodles you'd get at a ten second yunnan noodle type of place). They also now have a complimentary side dish bar that has seaweed salad, peanuts, and kimci, as well as some condiment type things like scallions and minced garlic. I helped myself to some seaweed salad to nibble on while waiting for our food, and it was good although food comes out quickly enough that you don't necessarily have to rely on it unless you're really chomping at the bit. The spicy cumin lamb biang biang noodles are just as good as I remember. The biang biang noodles here are perfectly chewy, and the rest of the dish has a lovely flavor aside from just spice. They're generous with lamb and cabbage which add a lot of textural variety to the plate. The lamb dumplings were the sleeper hit of the meal, filled with juicy, tender hunks of lamb surrounded by toothsome clearly hand-rolled wrappers. Absolutely do not skip the lamb dumplings. My dinner buddy really enjoyed her rice noodle soup with spicy cumin lamb, which I think would be a great option on a cold day. Everything is pretty much self serve here, so don't expect full service -- although they did stop by to refill our water once. All three in the same meal is something else ‍ The kitchen is small and open so you can see and hear everything, which meant we also got a front row seat to the chef yelling at his staff multiple times throughout the evening. We didn't get utensils with our food, and were told "I'll grab utensils for you, sorry about that" So we just sat there waiting for utensils. Food is good but there are hairs and a bug ‍ During our time waiting the water wasn't ever filled (it's self serve) so after our food came I asked for water three times, kept getting "I'll refill it". The chawanmushi showed up 20+ minutes after our food, basically as we were finishing. And they don't have to-go containers, which fine, but worth knowing. I've given this place real chances. Last night felt like a hygiene issue, an understaffed kitchen, and a service breakdown all stacked on top of each other. Usually we go during lunch so maybe that's my recommendation moving forward - I'm giving this place a rest from the rotation for now.

I did get a chance to sample the delicate pork pieces and the flavorful rice. The slightly crispy rice at the bottom of the pot were so delicious. I had the Singapore style fried noodles. Really tasty. The noodles had so many flavors from the vegetables to the meats (shrimp, chicken meat & egg, and pork) and the sauce. I enjoyed the meal, and look forward to discovering more dishes to try on our adventures trying to find parking. JuFeng, thank you for the delicious meal!
