I got the penny nuggs which came with their chicken nuggets topped with jalapeno ranch sauce, scallions, bacon bits, cheese, cilantro, and street corn. The flavor was good but chicken nuggets were dry and toppings and sauces were overwhelming. It seemed to be similar concept as loaded fries but chicken nuggets instead. Service was good and wait was not too bad about 15min or so. Overall it's an ok place. I think the idea is interesting but it was sad that their chicken nuggets were dry. I know it's gluten free and they use white meat but if they are selling chicken nuggets as their main menu i would expect them to be good on its own. I feel that topping and sauce was overwhelming and chicken nuggets themselves did not shine.

Their food truck can be a bit of a hunt, but they keep their location updated on Instagram, and the chase is absolutely worth it. From the jump, they were super friendly and genuinely excited that I sought them out just to try the food. Always a great sign. As for the wings I went with their recommendation: the Original Bo's Sauce, a sweet buffalo-style sauce. The wings were dredged with a perfectly crispy coating, cooked just right, and tossed generously in sauce. They come with your choice of blue cheese or ranch. To be honest, these were some of the best wings I've had this month, balanced, flavorful, and addictively good. I also ordered the onion rings, which came in a huge portion of battered, fried sweet onions. Crispy, not greasy, and paired with a tangy remoulade that took them over the top. Absolute win. Unfortunately no photos this time, I dug into them before remembering to snap one (a problem that speaks for itself). Bottom line: Bo's Wings & Rings is 100% worth seeking out. I liked that they had an explanation of the concept of a kroffle on their truck which is a fusion of a croissant and waffle. They have savory and sweet options. We were torn between the Goju yum crispy chicken and the garlicious chicken sandwich but when we heard the goju one was a little spicy, we went with it. We did not wait much for the food to come out. It looked incredible. It was about 8 inches long, with a juicy and thick piece of crispy chicken that was glowing. The kroffle was light and crispy. The chicken was tender and tasty, especially with the sauces that made it both sweet and slightly spicy. The pickled carrot and daikon added texture but also contributed to the sweet flavor. My favorite secret ingredient was the cilantro on top. I love cilantro and I think it made the sandwich feel complete in flavor. The sandwich cost $17 which is a bit expensive for a chicken sandwich but considering size and flavor, I would gladly pay it again.

The party was held outdoors in their pretty yard under a tent. Shuckin Truck was an absolute hit! They set up the outdoor raw bar...clams (littlenecks), oysters, and shrimp on ice, in a very attractive manner. The table was manned by a charming "shucker". There were an assortment of passed hors d'oeuvres which included lobster grilled cheese lobster triangles...these were indescribably delicious. Everyone was oohing and aahing over these. I also loved the smoked salmon on toast and the small cups of really tasty clam chowder. All the appetizers were incredibly delicious although I would say the lobster grilled cheese was the biggest hit. All of the staff were polite and friendly. After the appetizer round, the lobster rolls came out and they were simply spectacular. They were true New England lobster rolls on toasted square edged (this is key) frankfurter buns, and absolutely stuffed with chunks of delicious lobster meat that had been lightly dressed with mayo. Those rolls were out of this world, deliciously prepared and very generously filled with sweet lobster meat. They also served fabulous fish tacos. For the non-seafood eaters of which there were none at this party, they served a pulled pork taco which was spicy and delicious. The portions were generous and the food just kept on coming out. While there was plenty of additional food at this party from other vendors as well as some homemade additions, Shuckin' Truck was my favorite part of the overall feast. Great job!
