Thoroughly enjoyed our lunch here today. Ambience is very upscale and comfortable. Wait staff fantastic. The Pho was superb. Both beef and chicken. The chicken was BBQ grilled and served on side - gave the Pho terrific flavor. Had both Spring and Summer rolls. The Spring rolls were served with a plate of leaf lettuce and fresh herbs so you can roll them up in the lettuce. This is my favorite way if eating them but most places don't provide the lettuce anymore. Fortunately No 1 Pho does! Finished our meal with iced Vietnamese coffees. Delicious! Their vegetarian food is a C- at best. The vegetarian fresh rolls were good but their one vegetarian dish on the menu is a heap of dry rice noodles, bean sprouts, bamboo shoots, a little pile of lettuce in the corner of the bowl and some slimy tofu. I ordered a coffee and they brought me a thermos filled with hot water and said to keep pouring water in the top to make the coffee. The filter was clogged and when I told them I didn't want the coffee because the filter wasn't working, the young employee said "we cannot take that off your bill". I had to say "yes, I expect it to be taken off the bill because I didn't consume it". I shouldn't have to argue with a teenager over a $2 product. New review: i gave a moderate review this time because the food can be legitimately amazing...if your food is right. I hope they make adjustments to the staffing issues that have given me this impression of them. The new staff isn't as attentive, so orders are hit or miss now. Especially with takeout. If you order to go, check it THERE. I ordered vermacelli with spring rolls. When I got home I had some sort of mystery meat looking meatballs, With rice. I gave a pass, thinking maybe she just didn't hear me. But I'm pretty sure she repeated the order back correctly. I resolved that I must have just gotten the wrong order. So I ordered again another day maybe two weeks later. We ordered Pho to take out. The soup comes dismantled (broth, meat, and toppings separated -veggies: jalepeños, mint, lime, sprouts, in one container) We got home, and I ended up going into the yard for some mint leaves because there were like 3 good pieces of veggies mixed in with a majority that had big patches of brown, like they had been frozen in certain spots, possibly just bad. They were wilted almost flat. They actually topped that nastiness with some fresh good veggies, why would you serve that?!! I decided not to eat it at all, because it didn't taste great before or after the yard mint. Before, this never would have happened. They used to put out beautiful dishes, now... I'm going to preface this with- I grew up eating pho in NYC where it's almost impossible to get anything but amazing ethnic food, whatever it may be. Overall, I think this place has potential. I am always surprised at how small the selection is in the Cary/Raleigh area to get Vietnamese food so I was pretty excited about trying No. 1 Pho. My beau and I ordered our go to whenever we go to a pho place- summer rolls, pho special with beef, tripe, tendons and an additional banh mi for him. The pho was fine- decent broth, good portion size, fresh vegetables and herbs for the soup, but not a whole lot of other meats aside from the beef. The banh mi was also just okay- good amount of beef, not enough veggies, and bread was way too hard, not to the point of it being stale. The summer rolls... not good. I don't know what they put in their sauce but they need to go with the traditional recipe of peanut butter and hoisin sauce with crushed peanuts- not hard. The summer rolls themselves were really empty. There was nothing really in there except shrimp, piece of lettuce, and noodles. The reason why people order summer rolls is because they're "fresh" and colorful. There should be more vegetables and a lot more crunch- maybe bell peppers or cucumbers. I love the clean decor and the modern chandeliers. Not your average mom and pop but your average mom and pop food quality. Authentic and tasty Vietnamese food. As soon as they brought out the giant fresh green herb and lettuce, I knew this place is serious about their authentic Vietnamese food. My mom actually recommended this place because she enjoyed her dinner with my aunt last time here. She had Nem Nuong last time and she say it tasted like the one back home in Saigon. So I decided to take her back to try something else. She ordered a pho dac biet and she told me it does not smell the broth of the soup at all. When she took a sip, it wasn't even the taste of the beef bone but some random meat and she couldn't even eat it. I told my mom just to eat everything besides sipping the soup so she manage to do that. I ordered the hu tieu my tho dai because I love he clear noodles and it's hard for me to find one around the area; however, I couldn't smell my broth either. I had to add in a lot of extra sauce for the flavor. After eating it I realized I didn't have everything that was listed on the menu like the quail egg, but I don't want to make a complaint since we finish eating. Our server was not very attentive because we waited for awhile for our check. He was busy talking to the other server and I tried to wave him over. This place is so flipping good! Let me start by admitting that vietnamese is not my favorite food. But do.ehow I have been here 3 times in a week! They have a pork bahn mi thst is mouth-watering! Their pho is also incredible. The broth is cooked and flavored to perfection. I can't wait until I am suffering from my winter cold and I send a friend to pick up pho from here! We went in today to get pho for our kids and we were just disappointed. We have been here numerous times but after today we won't be going back. After a long day we were looking forward to eating here. We ordered the Pho for the kids and we requested no onions and cilantro. When the pho came out there was onion and cilantro so we asked if they can take it off. When the pho was brought out and we taste it there was no flavor whatsoever. Not a hint of pho flavor. It just seems like they took the cilantro and onions and put just plain water in in. We called the manager over to tell him this and he just walked off. I'll give this place 2 stars. The food was good however service was so slow! We were the only people in the restaurant and it took way too long for us to get our food and get our checks. I give them such a low rating because although the food was pretty good we had to spend most of our time swatting knats away from our food. My friend end up packing up her lunch and eating it at work instead because the flies were just too much to deal with. Overall, I probably won't go back to this place. There are serious food issues with this place. First, we noticed throughout the entire evening that the only 2 servers had almost no interaction with the customers. Customers were left sitting at tables, and when servers came over to bring items ordered, there was no asking if the customer needed anything else. No asking if the food was good. Just to note also, there are also no vegetarian pho options or choices. The base for all broths is a meat broth. Secondly I've eaten Vietnamese food in many cities -and I love Taste Vietnamese restaurant in Morrisville. The dishes served here at No. 1 Pho seems to have been made by someone who does not know how to cook. 85% of plate was taken up by raw greens and raw herbs. While raw greens and herbs are a part of Vietnamese cuisine, at no time should they be the major part of the plate, with little real, actual food on the plate. We ordered two different shrimp dinner dishes including shrimp vermicelli. We received a very tiny pile of cold vermicelli noodles, four very cold rather small shrimp, and an overwhelmingly large pile of plain raw greens. This was the entire meal. No sauce of any kind, no indication of a dish cooked by a real chef. A child with no cooking experience could have thrown these items together. Just a few small cold shrimp placed on top of a tiny pile of cold vermicelli. This is not a meal. Mind you, this wasn't a salad, it was supposed to be a dinner. We paid $41 for two supposed "dinners" and only had water to drink. The prices were extremely unacceptable for what was received. We were starving when we left, and the food was not good. I cannot recommend this restaurant at all. They need to learn real Vietnamese cooking, employ a chef who can do so, and hire servers who know how to interact with customers. For Vietnamese food offerings, this is the only one around East Cary/Durham/Apex area. Food is satisfying but not completely "authentic". When I say not completely authentic, its based on some of the ingredients that is lacking. As an example, the Banh Mi sandwiches does not have pate' as part of the base for making the sandwiches. The prices is $1 too much. The Vietnamese Iced Black Coffee is overpriced as well by $1 (menu price is $5 for black iced coffee). The Pho(soup) is good and a great meal during the cold season. Update from my recent 3 star review. Came back and got the exact same thing as last time but with a few extras. I would like to point out that they have resolved all of the service issues from last time. They have all soft drinks stocked, card machine works, and they topped off my soup bowl full to the brim. In addition, I got a dessert drink that is actually pretty tasty, unfortunately I forgot the name of it. The only issue with the dessert was it has chunks of seaweed (yes, seaweed) that would clog the giant straw that came with it, making a struggle to enjoy to drink. Only knocking off 1 star due to the price since other Pho places are a few dollars cheaper.
