Huge place offering beer, wine, and more. Very clean and modern. Unfortunately we stopped in for lunch on a Monday. No food service on Mondays. So we used the washroom and went into town for lunch.

Expansive open brewery. We zipped in 30 mins before closing and never felt rushed. They have rotating brews that change often. I enjoyed my 6 beer flight of 4oz pours. Kudos to the Ft. Davis Blonde which was my favorite, but all were tasty, and none too hoppy. My wife appreciated the Fiesta Winery wines served here (her favorite FBG winery). This place is expanding, and will soon offer options from a distillery. Check it out.

This is a brand new brewery in Fredericksburg. We were driving here for lunch after touring LBJ Ranch, but they did not serve food. But the place is gorgeous and I cannot wait to come back and try their beer. They also have wine. Again this 5 star review is because the lady that was working was so nice to us.

Well, I'm not really reviewing the RV park, as I didn't stay there. They have a brand new Winery, Brewery and Distillery set of buildings, tasting rooms and an amphitheater now. The Service was amazing, they were all over to help us. We went with another couple and my friend's wife was celebrating her birthday. It was absolutely worth the trip out. We were staying at a house outside of town in Fredericksburg. The building is literally 4 weeks open, so we laughed at some of the landscaping not being done. We came in from Cedar Park, just outside of Austin, TX. We are all Texas natives, and we can understand. It's SUPER hot and DRY here right now (It''s like that every year, we call it summer and have for all of my 50 years, ha). Their circle drive looks like it will fit 3 or 4 tour busses easily, ha. And, the inside of their new showroom and bar....can handle 3 or 4 bus loads of people. The atmosphere was amazing, really grand and very hill country feel. They have a couple wineries in their name, one is more traditional and a long list of red, white and some desert wines. The flight was excellent. They also have a sweet fruit forward vineyard and the flight for those was very, very good. My wife had the traditional list, and really liked their Reisling. I had the fruit forward to be different, and they were very good. We thought the hit was their brew house, a connected building that the family brews local craft beers. They had a Peach Stant (Fredericksburg, TX is KNOWN for their peaches) and both couples had it.....and it was off the chart good. Both men and both wives really thought it was excellent. It didn't taste like peaches, per se, it had a great taste and easy to drink. As a corporate executive, the only thing I would say is that the multiple names makes it somewhat confusing. Arch Ray needs to be the main, and Ogle Brewery at Arch Ray, and others...At Arch Ray, would be easier for folks to remember. The place was amazing. Next time we will come with plans to eat, the menu was small ish, but we didn't have food. Either way, the wines and beer were excellent. My wife regretted not trying some of their Gin, a nice hill country Gin and Tonic next time around, ha.

The castle-like architecture, expansive grounds, and overall atmosphere make it feel like a destination rather than just a brewery. In terms of size and majestic ambiance, it reminded me of Brewery Ommegang in Cooperstown, New York. We stopped in for lunch on a weekday and still had about a 30-minute wait for a table. Fortunately, that wasn't a problem because we were able to enjoy a beer while waiting and take in the scenery. The property is large enough that exploring it becomes part of the experience. The beer selection is heavily focused on German styles, which was perfect for me. Whether you enjoy lagers, pilsners, bocks, or wheat beers, there is something for every fan of traditional German brewing. One of the fun touches is that many of the beers are available in liter size pours, adding to the authentic beer hall experience. The food menu is inspired by classic German cuisine, but it also offers a wide variety of other options, including some more upscale dishes. This makes it easy for everyone in a group to find something they will enjoy. Everything we ordered was excellent, with generous portions and high-quality ingredients. Beyond the food and beer, the atmosphere is what really makes this place special. The combination of the castle setting, beautiful grounds, German-inspired traditions, and excellent hospitality creates an experience that feels unique and memorable. Overall, this is far more than just a brewery. It's a destination worth visiting whether you're a beer enthusiast or simply looking for a great meal in a remarkable setting. We thoroughly enjoyed our visit and would gladly return.

There's inside and outside seating as well as bar. You enter and they hand you the menus. Despite the red neon order here sign right next to the entrance counter, it's not readily apparent that you do indeed order there. And I noticed it wasn't just us waiting for someone to come take our order as we waited. You seat yourself so unless they tell you directly to order at the counter you could miss it. So when the red neon sign finally clicked in my head, I went over to order. But while I was ordering two more parties came up and asked if they needed to order there. So maybe some more clarity up front outside the sign haha I ordered the Cali burger, my son had a burger, and they had a fajita special that his mom ordered. We also ordered a pretzel. Obviously being a pub they had beers. Non/alcoholic was a limited assorted of coke fair. Only unsweetened tea. No lemonade. Pretzel was soft and delicious. My son's mom loved the fajitas and the beans that came with them. The burgers were also really good. Bread nice and soft. Patties a good thickness. We all enjoyed what we had. No fries though. You get chips for your potato fix. The staff was also very friendly. It wasn't too loud in there and we were able to talk easily. If you're hungry don't pass them by.

On a whim about a month ago, I planned a vacation to Fredericksburg based solely around how much I…read moreloved the brewery when I lived there with my dad 32 years ago, when I was 14. The brewery was the first place I ever had a scotch egg, my dad would get a small beer flight, maybe we'd get a brat, he made it fun. I'm pretty sure it had just opened back then. We got into town, checked in at the Trueheart Hotel, and immediately walked to the brewery because I was so excited. I probably went in to this with the unrealistic expectation that it would be the same as when I was a kid. It had a great start. The hostess was nice, and our server was, too. I wish we had gotten to sit in the back room with the long tables, We started with the beer flight and a scotch egg. The beer flight was okay. I was expecting really good German beers, mind-blowing, but these were just fine. A pale ale, an IPA, a flat porter were on the list, just not a memorable selection, although the red ale was good. The flight was a good price, though. For our appetizer, I wasn't expecting such a small scotch egg for $9. I mean, it was really small. I've been to several places around my area for scotch eggs, and they're usually $11-12 for two and they're properly sized. But we're on vacation and I wanted nostalgia so fine. It was delicious, and the creole mustard the scotch egg comes with was divine. More on that later. For our meals we tried both schnitzels. I was disappointed they don't have spaetzle, I'm pretty sure they used to. My boyfriend had the schinken and I had the jager. I don't like ham but his was infinitely better because of the gravy. The gravy on the jager schnitzel I got was heavy with some seasoning, maybe sage. It's all I could taste, and I couldn't just push the gravy off because my pork was fried to death. I barely ate any of mine. The sides we got (you get two per plate) were German potato salad, fries, onion rings, and vegetable medley. The fries and onion rings were great, especially when dipping in the creole mustard we saved from the scotch egg. The German potato salad is supposed to be sweet and sour and my boyfriend usually likes it, but this was way sweet, he wasn't a fan. The vegetable medley was good, but seemed really out of place as a side, normally with schnitzel you'd expect green beans or a salad or something, we got broccoli and squash. They did have a side salad, but it was $5. Not sure why a side salad couldn't just replace the two sides for no upcharge. I will say the rolls were awesome. At the end our server let us sit and hang out for a few minutes, he didn't rush us. We asked if they sell the creole mustard in bottles but they don't, so he said we could pay $5 for a togo container of it. We got probably a cup, so I was fine with that, I really loved it that much. We paid, I noticed he charged us $5 for tarter sauce that we didn't have, figured it was the only way to ring up the mustard. We left with our prized creole mustard. Cut to this weekend when we opened it to make a sandwich, and what we actually got was tarter sauce, so somewhere along the way he'd forgotten what we asked for. We live 200 miles from Fredericksburg, there's no fixing that, but maybe that's on me because I should have checked it. They really should sell bottles of that mustard, it's very good. Overall, it just wasn't the experience I was expecting. It's not the same, it's been over 30 years so I totally understand, and I did try to be fair with my critique. It wasn't great, it was just okay.

Since there are no business owner responses, the problems could be persisting. However, we've enjoyed our time here in the past so we thought we'd try it again. We got here at 5 pm on a Thursday and the place was mostly empty. That usually translates into better service and likely a better prepared meal as well. Sure enough, this theory was correct. We had two craft beers on the table within three minutes followed by Ruben fritters five minutes after that. The menu here is pretty simple with the expected German twist to it. We just stuck to a salad and burger. The salad was fresh and good, but the burger was pretty average and you have to add your own mayo and mustard. Even by adding cheese and mushrooms it still fell within the three star range and the fries were just OK. The beers were correct to style, but the hoppier beers were slightly tame. It's pretty much three stars overall, but the service was great so 31/2*. I'd still come back and try something else off the menu before the weekend and before 6.

Vibe is euro-bistro and the staff is perfectly attentive. Prices are high, but honestly aligned to the quality of the food, at least the dishes we had were worth the prices. Food: Buttermilk Fried Chicken, with Onion/Bacon flash fried collard greens, whipped potatoes and house gravy and Jalapeno Cornbread for $32 Reuben on Marble Rye for $24 16oz Stella Artois for $10 We agreed that the fried chicken (5/5) was the best we could remember having. Whipped potatoes (5/5) were light, fluffy and perfect taste/texture. The gravy was like brown butter (5/5). The collard greens (5/5) were flash fried and if you've never had them like this, it's like eating collard green potato chips. Cornbread (3/4) was a bit too delicate and sweet for our taste. You couldn't pick it up without it falling apart. The Ruben (3/5). My wife loves a good Ruben sandwich. This one had the makings of a good one, but they use a Thousand Island sauce (too much of it) on the sandwich, and it hides the flavor of the meat. Next time we would ask for the sandwich without the TI sauce, see if that improves the rating. The sandwich came with house made potato chips (5/5), a small house salad with vinaigrette (5/5) and a large, pickled cucumber. I know, that's a pickle, but these are cucumbers that have gone maybe a third of the way through the process, so the cucumber taste is really prevalent. Lastly, we had the Creme Brulé (3/5) for dessert. It was nice, but the custard was coffee and caramel flavored, and we prefer the standard custard look and flavor. The caramel should come from the top layer, not the custard. The top layer was a bit too thick as well. We liked it, just didn't love it. Overall, quality food, service and vibe with prices that are aligned to more special occasions than everyday eating out. We'll be back to try the Monday Crawfish Etoufee and the Tuesday Duck Confit daily specials...look too good to pass up.
