Highlights for me were trying things I've not seen on a menu anywhere else, like gizzard shad and chicken grunt. Flavors were clean, deeply savory, and balanced. There are six seats at the bar. We had the first three seats, which meant Chef Matsuoka was serving the absolute largest and best parts of the best cuts to just us. Is it fair to everyone else? No. Am I complaining? Also no. (And suddenly I kind of understand Republicans.) On the other hand, we ordered a botan ebi à la carte and that was a specific piece that was very fresh and didn't need toppings to enhance it. The chef was even attentive enough to notice that my boyfriend was left-handed, so he angled the nigiri at the proper angle for him to pick up. The attention to detail of everything in this place was amazing. Because it was my boyfriend's birthday, and the end of the omakase menu they made him a beautiful little sashimi don with a teddy bear candle in it. So cute and thoughtful! The tofu with apple vinegar jelly was light and refreshing, the Japanese honey apple paired beautifully with the madai, and the A5 wagyu tart topped with ikura was rich without feeling heavy. One thing I especially appreciated was that they use real fresh wasabi, which added a clean, aromatic heat that complemented the fish without overpowering it. The nigiri throughout the meal was consistently fresh, with highlights including the sweet botan ebi, buttery toro, creamy hotate, and rich uni. Each piece was complimented well with seasonings, allowing the quality of the seafood to shine. The meal concluded with miso soup and A5 wagyu. The wagyu itself was tender and flavorful. However it was paired with foie gras and personally, I'm not a fan of it as I thought it was too rich for my liking. Dessert was a light panna cotta that provided a refreshing finish and I appreciate an actual dessert because we're normally only offered a mochi or a fruit as desserts for omakase experience. Solid fixtures. Service is attentive enough. They're about par, all things considered. Let's use the Otoro toro caviar bite as an example. Nigiri with a slice of torched Otoro topped with chopped toro, caviar and chives with a dollop of wasabi. Luxurious and inoffensive but the individual flavors will get lost in each other. No real surprises here but you'll get some uncommon combinations that don't do much, like their salmon tomato bite. Safe and inoffensive. The rice for each bite is smaller than average but they don't skimp on the fish. No dessert included, though I'm not sure if they have any desserts at all. They're also quick to get you the bill. It's a price point play if you want different flavors and textures with your nigiri but there are (admittedly more expensive) places that do it better with more creative and coherent compositions.

I went at 5 PM and my friend and I were the only customers, which I liked. I'm sure it gets busier for the 6:45 PM timing. Some parts of the course that stood out to me was the akami, chu toro, sea eel (which is super different from freshwater eel), and their ebi. They have one clean bathroom.
