I remember watching their episode 10 years ago. I didn't even live in Colorado back then! Their claim to fame is the iconic cheese "skirt" on their burgers. The way they melt the cheese, you get this funky crispy cheesy entity around the burger resembling a skirt. On this visit, I kept it simple with the Pueblo Farmer and fries. Pueblo Farmer ($12.25) // Grass-fed beef, pueblo chilies, pepper jack cheese, & homemade guacamole on our sesame seed bun. Beefy, spicy, creamy, a perfectly balanced burger. I didn't get it skirted (I honestly was so tired from driving that I forgot), but I wouldn't change much about this burger. Damn tasty! Burgers don't come with fries so I added those on. These are thin and salty. Even though the fries are extra, they have a little sauce bar with their ketchup, ranch, and Heifer sauce to accompany it. The sauces were all great and tasted homemade! Honestly, just wish there was more seating as it's usually crowded. They do have a few outdoor stools, but it does get chilly when the sun is down. If it's good enough for Guy (Fieri...duh) it's good enough for me!

The ambience here is definitely old-school café where you can sit next to strangers at a big long tables and in the old days where farmers would come to chat with each other after working all morning. Their French toast sandwich is delicious. Their omelettes, also delicious. Bacon. Yum. Pancakes also yum. Cinnamon Rolls, OMG. The one thing consistently that I do not care for here are their hashbrowns. To the point that I try to order things that don't include them. The menu says they are golden and crispy. They are not. I have asked specifically for them to be golden and crispy. They, still, are not. I don't complain after they are brought incorrectly cooked. I don't send them back. I just don't eat them. But I have never once been here where I've been served hashbrowns that made my tummy smile in delight. They are flavorless and mushy. Slightly more solid than the consistency of mashed potatoes. The coffee is weak. Typical of many breakfast places, though.

The hostess seated us immediately. There were several tables of people, but not overly packed. Our waitress arrived quickly & took our drink orders. My Dad chose a blueberry pancake & eggs over hard.
