Well wait we ordered 24 not 12. You continued to say my husband screwed up never even mentioning there was only half an order there. we did get a refund plus 6 bagels but next time don't blame the customer for your mistake. I would write a review about the bagels but uh they were out of them (at least an hour or so before they were supposed to close.) Fine, that works. What doesn't work? Is weirdly stating you only have one sandwich left that we could order. Of course it had a cute diminutive hipster name. It was a toastie. A grilled cheese? Nope. A toastie. So you have a bakery and, like, various sandwiches you can make on bagels but yet when you're out of bagels you can't make a sandwich on the bread you have. Cool, that's logic! So now to the "toastie" lol, i can't even believe I have to type that as a word out, but here we are. The toastie: an overpriced grilled cheese that was so forgettable I can't even remember what it tastes like, and this was like three days ago. And believe me, I'm from the land of overpriced farmers market food or whatever you want to call a 10 dollar grilled cheese. I get these are weird times. But sometimes I just want a good thing. Not a hip thing, not something that looks good on instagram (which I assume if I had gotten a bagel, maybe that would be the ticket? but we shall never know because the bagel shop was out of bagels but yet stayed open, quite the conundrum huh?.) Anyhoo, I get it, I'm from NYC. I expect you know a modicum of professionalism, and if you're open, you have the thing that you advertise you sell. My wife and I each ordered a bacon, egg and cheese sandwich on an Asiago bagel. The employees are very pleasant, the ordering was easy, and they even delivered our order next door at Remedy Coffee. The bagel was excellent. However, the egg was so thick and fluffy, the sandwich wouldn't stay together while eating it. The bacon was bit salty. It was a messy, but delicious sandwich. It was also a lot of food. Next time, my wife and I would share one, or just get a bagel with Crean cheese or butter. And at $22 with tax tip, it's a bit pricey in my opinion. read more

Very disappointing. I love bacon egg and cheese sandwiches with a passion but the one I got at Paysans was the worst one I have ever had. The bacon was extremely fatty and undercooked and eggs were very gross and undercooked as well. Couldn't even finish the sandwich it was so gross and I got very sick from what I ate of it. I usually ramp up, but I'll cut to the quick: the lil lemon things are ridiculous. Buy them before I buy them all. A good bakery is a vital part of any good city, really making it a good community. Good, local bakeries are actually pretty hard to come by. So when a good one comes along, you and the rest of the community has to support it. Paysan Bread is that bakery. They have all manner of bread, bagels, and baked goods...and thank goodness they do. I'm not much of a bagel person, but can say that a friend from New York said their everything bagel is the best one he's had while living in the south. On to what I know. As mentioned, those lil lemon things are absolutely ridiculous, and I have a hard time not eating a dozen in one sitting. I also got a loaf of bread, which was amazing. Heat it up in the oven a bit, spread on some butter...ohboyhowdy. Something to keep in mind: real bread from a real bakery will go bad quicker. Food is always so good. Service is kind of awful -- I come pretty frequently and whenever I go to order the workers always look like I'm being the biggest inconvenience in their day. The bagels are F R E S H. Don't come in here if you're expecting immediate New York City -yell at you before you come to the counter- service. This review is specifically for their Marble City Market location (I cannot find a way to review it). I ate there for lunch with my 2 kids. I ordered a BLT, and the kids both got grilled cheese. We were excited about the sandwiches being on homemade sourdough bread. Unfortunately we couldn't enjoy the bread on either sandwich because they were dripping with grease. I don't know if that's typical for this restaurant or if it was employee error but I don't plan on trying again to find out. We had plans to walk around downtown after lunch but we were all feeling queasy after eating that we came home. It's well over an hour later and I can still feel the grease in my mouth. I will add, I grew up in the south and have enjoyed plenty of fried, greasy foods but this was truly a different level of greasy. One last thing, I went up to the counter to talk to the employees twice. Both times waited a couple of minutes--and sitting down after the first time for at least five minutes. The second time after waiting a couple of minutes, I asked the employee at the booth next door if she knew where anyone was. She said they were probably in the back and went to find one and she cay back saying she couldn't find them and they must have went to the bathroom. Since there were two employees, I'm surprised they both would have left at the same time and left their booth empty for so long (It was at least ten minutes that I waited for them but I'm not sure how much longer it took after I left for them to return). read more

We were really excited to come here today. We was lucky enough to find parking. The smells walking in were so good. When we got in though, options were very limited. The only items available to buy were bagels and canelés. There were no baguettes or rolls available. Everything other than a loaf of spelt bread was for a wholesale order. The guy at the register wasn't even nice about it. We left there without bread - only a sesame bagel and 2 canalès - which were dark and tasted burned. Super disappointing! read more

I have been a fan of Paysan since he started coming to the Farmers' Market. Even though I don't eat a ton of bread, I am a huge fan of the Caneles they make. Crunchy on the outside, soft and custardy on the inside. I also enjoy bites of his bread creation at Knox Mason and Emilia. I have heard good things about their bagels too and will have to wait to try those someday. And even though my Caneles were a tad on the burnt side today, they were still delicious and service was friendly. I won't be a super frequent customer cause I have to watch my waistline (dang metabolism!) but I encourage everyone who wants some pretty tasty pastries to stop by. read more

This is a nice little shop. Very barebones. They clearly care less about design and more about quality baking, as evidenced by a well-worn stack of cookbooks behind the counter. The menu is simple, but stellar. As someone who has lived in New York on and off, I'm always craving a good quality bagel and cream cheese. Paysan gets top marks. I had a pumpernickel bagel with plain cream cheese that was large, chewy, and flavorful. I took off one star because the canalé was a disappointment. Pretty much a burnt mini muffin with only a small edible center. That said, I'll definitely be back to try other bagels and breads. These guys know what they're doing.
