How I have only checked in here one time on yelp, I don't know. I guess I'm too excited for my food to check in here the 3-4 days a week I pick up a #12 (rare steak pho) and a thai iced tea. YUM. and YUM! and So many more yums. The spring rolls, the egg rolls, the plates, everything is extra delicious and I am thankful that this delightful gem is a 3 minute drive from my house (if I hit all the red lights). My love for Pho Ever's 1st location in Vista gave me high hopes for this spot as it filled a void of good Vietnamese Pho south of Oceanside down to Shallots in Sorrent (Le Bamou doesn't count as it's way too pricey and fusion with no real pho). Lots of people are opposed to coming North or even South to more authentic pho. Tam did a bang up job working diligently to keep service, food and customer experiences uber consistent. There is good reason why it's never empty and rarely a wait ever. I waited a long time for this to open and came here a half dozen times before I decided to write this. If you want something done right, sometimes you have to do it yourself. I'm sorry to say this but the staff, work ethic is a disservice to the great name and great food they put out. Service is inconsistent ranging from meh to bad with a good/excellent sprinkled in. Décor is good, kind of predictable, clean, a little too stark, but ultimately not modern, just new. Prices are comparable and downright cheap compared to Le Bambou. Com Bo Nuong is a good value, perfect rice, moist meat well marinated, not too much char. I ask for extra fish sauce for dipping to keep it traditional. Bo luc loc has filet mignon and is soft, beefy, but to me not worth the up charge. Fried rice is great seeing that beef is the same price as chicken and shrimp varieties. I like the Shrimp, but perhaps the rice is too light to be filling. Egg rolls are crisp, dense, flavorful. Spring rolls are tight, light and fresh, again ask for fish sauce to add to your peanut dipping sauce as you can barely taste it. Vermicelli is fresh, light and goes better with the bolder pork dishes versus fish, beef and chicken. Beef stew is hearty, but needs extra bread. Cari Ga is great over vermicelli noodles, the rice version is too predictable, but the noodles provide an unexpected surprise. Mi Hoanh Thanh is the gem of the meu, filling, fresh, not too bold, a bit of a secret if you ask me. Bun Bo Hue is a tad heavy on the shrimp paste, but I love the blood cubes and tendon, the broth is probably better for hangovers than people think pho is. Their pho broth is still one of the best, rich, not thick or oily. The noodles are never bricked. No thumb in bowl syndrome, the steak is still filet mignon. The meatballs could be more herbally bright. They do kids sized for $5 which is actually nice for smaller eaters. Large is very filling, Medium is probably good for most people. read more

I don't really like pho, but this place is the best for their appetizers! I'm giving this review because I absolutely LOVE their tofu spring rolls! I go here just for them. So fresh and delicious, and perfect for someone on a vegan diet. $6.50 for two rolls is a little pricey, but they're so good it's worth it. read more

Solid place. Really loved it. The pho is really delicious. The beef was cut very thinly and melted in your mouth. Vermicelli with chicken and egg rolls was a great dish. Pho ever is right, because your pho will take forever. Taste- **** Ambiance- *** Service- ** Parking- ***** Came here on a Sunday night and the service was sooooooo slow, it took us 45 minutes to get Pho. I have never been to a pho restaurant and waited this long, if I weren't so hungry and would have got up and walked away. The wait staff are all very young and seemingly inexperienced, seating the wrong customers, breaking things, forgetting to take orders. The lights in the restaurant also went out periodically that night, making the dining experience very interesting. The Pho was good, not the best in town. With the slow service we had to remind the server multiple times of utensils, condiments, missing orders etc. Probably will not be going back. read more

I, too, love this place.... The staff, the food, all good. Tonight, however, I ate the pho and then had a pretty severe reaction - thought I might be having a heart attack - my arms went numb!!! Luckily my friend knew to call the restaurant and ask about MSG... I'm so sad!!! It comes in the pre made (powder) broth. Glad that they admitted it, otherwise I would have gone to the ER. After about 20 minutes I was fine. Dang it! I don't want to hurt business, but it's 2016- come on guys - we can't eat this stuff! Place was legit. I wasn't sure about pho from Encinitas but I was pleasantly surprised. I did a take out order. The people on the phone were very friendly. My order was ready when I arrived. The cashiers were very friendly and fast. They also have a hot sauce and hoisin sauce station where you can pack as much as you want. When I got home and ate my pho I thought it was very delicious. The broth had a very good flavor and the chicken was good quality. The only thing that wasn't good were the herb leaves, the looked like it was their last day, not very fresh looking. Love this place! The food is wonderful, I have to admit the service is lacking as we only saw our waiter twice once when they dropped off the food and once when they put the check down. It is so disorganized its kinda ridiculous... been 20min since we ordered cha gio and still haven't gotten it....the food might be bomb...but this place has no idea how to run a restaurant and serve their customers. They should change their name to PhoR-Ever bc thats how long it takes to get food! I give them a one star so maybe they pay attention to it! Dont come here if you are starving....saw multiple people after us get food b4 us....they have no clue how to manage orders... Will update once I get food...if I ever do! So the problem is actually their food is Bomb! Grilled Pork Bun is frickin delicious and their egg rolls were perfect... I am still leaving it at 1star until I go back and the service and kitchen are better...after I asked 45min into being there, they told me they were having kitchen problems and apologized....my problem with that was they were pumping out to go orders like crazy! Update 08/31/16 They were having a bad day today the meat was really tuff my buddy was almost choking it just wasn't cooked enough and the floor tiles smelled like the urine as if they mopped the bathroom then mopped the restaurant. Pho Ever what can I say about your goodness. Came in because I was in the area and have been craving Pho for a while. Walked in and was promptly served I ordered a Large Combo special and have to say they have a great broth. I lived in Little Saigon for a couple years so I know good Pho from the bad and this one is great. It's very clean inside and the restrooms are also well kept. They have a TV going with mostly sports on and music playing the background very nice atmosphere. Two thumbs up from me I know they have another location in Vista that I'd driven by many times but never had a chance to stop. If you find yourself far away from Little Saigon and looking for some great Pho look no further. I didn't have any other items so can speak for the Pho and the Vietnamese coffee. read more

The egg rolls were pretty good (4 stars) the pho was not bad but not great - the broth was not too oily and the flavor was good but it lacked the delicate flavor I'm used to and the rare steak wasn't rare at all (3/4 stars), the garnish was fresh except the jalapeños (3/4 stars), and the noodles were the standard fair. The service was pretty bad despite the restaurant being 3/4ths full. We were seated promptly but otherwise ignored / forgotten (had to flag the waitstaff down for everything, drinks, food, boxes, reminder we requested boxes, the check, and to pay the check. It wasn't like we were being mistreated, just the staff seemed absent minded / maybe inexperienced (?). Ultimately, I would go back again if I was craving pho and in the area, but I wouldn't go out of my way. read more

Excellent food and a great location for this place, but the people here seriously need to work on their skills at turning over tables and getting people seated down in their restaurant. I came here with a friend and had a bad craving for some good pho in the north county area. After doing a search on Yelp, this was my closest location and got into the car and drove out. My friend and I waited for 20 minutes for a table for 2 when there were still open tables all around the restaurant. I was about the fourth or fifth person down from the list, but after seeing a few open tables inside and outside their location, I was just sitting in disbelief. The staff here is mainly a younger group of kiddos. I can still tell that they might be learning the tricks of the trade that their parents taught them, but trying to figure out to-go orders and then seating people at tables, shouldn't be that hard of a situation to equate. read more

There is a new pho king in town. Encinitas has been starved for an adequate pho joint for so long now, and instead of someone trying to come up with one from scratch, the best North County pho restaurant has moved in to satisfy our desires. Pho-Ever, which I have enjoyed everytime I'm in the vicinity of the Vista courthouse, has been dishing out great pho for a while now. This location in Encinitas took over the Santa Fe Café spot, and is helping to form a formidable strip center dining mecca with Elizabethan Desserts, Pho-Ever and Kaito Sushi all bordering each other. The pho at Pho-Ever has a broth as fragrant as their Vista location has ever put out. The portions of meat are generous, and the prices are fair. The interior has plenty of seating, and they have spruced up the depressing interior of Santa Fe Café. The service was attentive, sometimes overly attentive. Like no single waiter was assigned to our table so we had three or four people checking on us. Which isn't bad on it's own, it's just weird, and something I'm chalking up to their newness. We used to have to drive to Pho San Marcos for serviceable pho, but are so glad to have a place nearby that we could even bike to. It's also so nice to see a non pizza/sushi/taco shop go in in this town. read more

We have been going here forever and it's amazing that the quality of service and food seems to just get better with time. Not that it needed to - it has always been our Vietnamese restaurant of choice, but it continues to impress us, and we have been to every similar restaurant in our area over the years and many during travels. My wife is from Vietnam and I have been there (and have been there many times, both in my youth as a soldier and on trips), making us very familiar w/ the wonderful food - and this is probably the best place we have found for that cuisine. What an utterly disappointing experience. Brand new location and we came on an opening weekend. Unfortunately, they still have a lot of kinks to work out before this location is on par with the original store. The original location has some fantastic pho. The broth is incredible and the service is fantastic. The service was horrendous here. We waited and waited for our drinks and one of our meals came out a good ten minutes before the rest of them. Spring rolls (chicken&beef) were extremely chewy and the peanut sauce was watery and tasted nothing like peanuts. #28 vermicelli noodle bowl with beef was quite good. The beef was nicely marinated and cooked well. It was a rainy day in California so Vietnamese food was a must. Wish I could give it 5 stars but just can't. The staff treat the restaurant like a dorm room and not a quality restaurant pumping the latest music they're into and checking their cell phones. Two stars because the food is decent. The core wait staff which seem to be Tam's (the owner) children are not trained wait staff. The other wait staff should not be working as waiters just mill around and watch the TV or semi-dance to the music they've chosen on Pandora for the day. Some were even more involved with their cellphones rather than paying attention to taking my order or filling my water glass. I had to ask for a water top off 2x. This simply should not happen. Don't get me wrong, they are nice kids but it's just that... They are kids not taking their roles seriously. I observed 3 of them walk right by dirty tables and not pick up after it and as my photo shows leave trash on the floor (throughout my entire time dining in). They just don't care and take no pride in their work. Although 'Ryan' is incredibly nice and actually checks in on you. Ok the food. Menu is nicely populated with options and some authentic dishes. Unfortunately the pho which what the restaurant is named after always comes out warm. Pho should being steaming hot. The rolls are good and I would recommend the combo spring roll & egg roll. Delicious! We've been there 4 times and I waited to write the review in hopes that things would get better but unfortunately they haven't. I will probably return here since it's the ONLY pho place in Encinitas. Otherwise might I recommend Pho San Marcos (say hi to Van the owner) that has amazing food and attentive staff that are always smiling. If you're down in the San Diego area then Pho T Cali or Phoung Trang are both solid picks that I've frequented at least 50-100 times and for good reason! Pho Ever - get your pho-king act together. Was looking for a Pho place up in Encinitas since I was working there in the afternoon. Came upon this place so I checked it out. As always with new pho places I like to check out their pho to see how it is. I ordered their number 1 extra large pho. I noticed first was the meat. It was a good portion so I was pleased. I then delved into the broth and tasted it and I was amazed. I could taste all the herbs and spices that were used and it was too salty or too sweet. It was just the right amount. Now as for me I always like my pho spicy so I asked for some sate sauce and added it to the pho and went to town on it. I was very pleased with it. The service was pretty good, it was slow around the time I came there so that was good. They were prompt and filled my water on a regular basis. The waiter would stop by occasionally to check how things were going. Overall I am pleased with the place and will go back there whenever I am up in that area since there are other things on the menu to try. read more

After a long drive from Joshua Tree, getting some pho was definitely a good idea! We were seated right away and our orders were taken on the spot. Our friend was a vegetarian and glad Pho-Ever had vegetarian menu especially for pho! Got the fully cooked pho without tripe and it was so delicious. The pho is pretty standard. My wife ordered a fried noodle dish, clearly stating my daughter has a shrimp allergy and the dish should be prepared without shrimp. The waiter brought the dish out, and of course, it had shrimp. We brought it to the waiter's attention, and he said "Oh. Well, I told them you didn't like shrimp." Brought the dish back to the kitchen and brought back a "new" preparation of the dish. This morning, my daughter had some of the leftovers, and lo and behold, there was shrimp. Of course my daughter freaked out because of her allergy and quickly took a Benadryl. Doesn't look like she'll have a reaction, fortunately. Turns out, our waiter brought the dish back to the kitchen, picked out the shrimp, and brought it back to us. Pretty irresponsible. They should be aware of the concept of cross contamination by allergens. A lot of the staff is pretty young, so I'm not surprised. Will think twice before eating here again. read more

I love Pho and this is close to home. Was so excited to try this place that I ate there 2x today. Lunch was causal and cool. A pork sandwich - tasty, quick and inexpensive. Could use a little more meat, but was good. The counter service was quick and friendly and the waiter (SD) was enthusiastic about the menu, so I thought I'd introduce the family to Pho-Ever at dinner. At dinner Pho-Ever took FOREVER!! The service was poor. No drink refills, no table bussing, no eye contact, no checking back on us, no to-go boxes, etc. My 4 year old son's meal was missing and I asked 4 servers about it - none of who came back with the meal or anything to pacify him - like a bowl of rice (isn't it universally known to feed the kids first?). A waitress (teenager) dropped the check mid-meal and didn't comment about my son's still missing meal, empty drinks or stacked appetizer plates on our table. It was pretty disorganized and only 5:30. I may try it again once they are opened longer and get experienced staff. But it may be Pho-Ever before I can get the family to join me for dinner. Service was pretty bad and food was not up to par. My mom could make better noodle soup than what they gave us. Service: One of the female waitresses didn't know how to serve us our food. We helped her with the first order since it had two hot bowls, by taking our order off the tray for her. Then, the second time she only came with one item and she assumed we would take our order off the tray because she couldn't do it. I have never had anyone expect me to serve myself at a pho restaurant. I don't really mind helping but that's no where near good customer service. It also took FOREVER to get our food. Seems unorganized. Food: We had a springroll/egg roll plate which was okay. The strawberry was super bland like it was just blended frozen strawberries but the Thai tea was good. The rice plate was super dry. Noodle soup had the wrong color, one was kinda green when it's supposed to be orangey and the flavor was close to what it was supposed to be but not great. I felt like I was eating a sponge when it came to the meat in the soup. Noodle Soup: overall just basic, not terrible but the worst I've ever had. Rice plates & smoothie: Not recommended. read more

This place was a joke. Long wait time, bland appetizer food and two parties that arrived after us got their food before us! They finished their dinner and we still didn't receive our entrees. At this point we requested the check and cancel the rest of our order. Never coming back here again! Poor service, and they didn't check on us. I'm from the Bay Area, lots of Viet restaurants and such, but this place was good. This place is located in a strip mall next to a really good Japanese restaurant, so there is plenty of parking. It wasn't one of those places where the loud mamasan was yelling at everyone, sticky tables, and nasty chomped on chopsticks sitting in a cup next to you where anyone can manhandle an molest them. The people running the front of the house were younger and totally cool, I ordered a regular, and what I found strange about it was that the bowl was small, not a lot of broth but there was a bunch of noodles...I'm not complaining but I would've liked a bigger bowl to accommodate the serving with more broth! I get the tendon, tripe and other goodies and their beef was very good. It's not the thin sliced beef that curls up and gets all tough, my son was all over it. I really wanted to come back one more time before we headed home, but we will definitely be back the next time we're in town! read more

We were in Carlsbad and wanted Vietnamese food and this place was pretty much the closest spot. We ordered Bun Tit Nuong and a Com Tam with steamed egg and pork chop. Nothing stood out to me but we were mostly grateful that this was a dining option in the (relatively close by) vicinity. read more

I wish I could up the stars, but every time it seems to be something. We do go there because it is convenient and we can usually adjust and add to make it tasty. The other day we ordered 4 large vegetarian soups with fried tofu with the house special noodles (extra charge which is okay of you get them), extra satay and extra limes to go. (Our usual order). All I can say is if you get a to go order you must check it all before you leave. No special noodles, 1 lime to split between 4, 2 sprigs of basil that were old and limp, lots of broth but less tofu and veggies than you get if you eat in. The broth was tasty, but they can do better. We still like eating in at their Vista location. read more

This was my first time at this establishment and after being seated, my friends and I (a total of 8 of us) proceeded to wait over 40 minutes before our food was served. On top of that the waiters had no idea which pho was which and were confused when we asked them which bowls were the ones we ordered. I think it is very unprofessional that the workers themselves don't even know which pho containing which meats is which! One of my friends ordered the beef stew, the broth is supposed to be a different color, and he kept repeating that his order was the beef stew and the waiters kept insisting that the bowl they delivered him was the beef stew. It was not the beef stew. They took the bowl back and then came back 5 minutes later with the same bowl insisting that it was what he ordered! My friend kept repeating over and over again that he had ordered the beef stew and they said TWICE that they thought he said beef broth....everyone at the table could clearly hear that he said beef broth.... WOULD NOT COME BACK AGAIN! side note: the servers were in no way rude or bad at customer service, they just seemed confused and all over the place. read more

Service needs to be improved by having a consistent manager to be the eyes/ears of the customers to lead their wait staff/water people. Our 2nd visit, the waiter staff was disorganized, we waited long while sitting down; looking to order so we we simply walked out. I was especially disappointed when the water person provided a water cup to him without a cover for our toddler.
