What really differentiates Pho Number 1 is their expanded menu of great Vietnamese noodle dishes and Banh Mi. The fried noodle dishes are particularly note worthy and definitely worth trying. The ambiance is utilitarian and the service is average, largely due to the lack of English and a decidedly Asian noodle shop blasé approach to customer service. For a Colorado establishment, the food was pretty good. The large portion size is definitely large, to the point where my 6' partner couldn't finish more than half, which is pretty hefty and a good deal. Broth tasted and looked pretty clean, but was a bit lacking in the portion sizes of the meat included :( there seemed to be about 2-3 pieces of brisket and tripe, so it seemed more noodle than anything. The eggrolls were decent, but not what I'm used to. The sauce was solid, but maybe wish the eggrolls themselves were a deeper color. I ordered beef and brisket pho. The ladies who helped me were extremely warm and kind in helping me. I had planned on ordering just the rare beef, but she suggested the brisket was delicious and I should try it! It WAS delicious! I probably wouldn't order the brisket again because it was quite fatty. Like, half of the brisket was fat. Between the two meats there was 4 ounces of meat total. Because I took it "to go" I actually weighed that out. I've always been curious how much meat they put in. I was there for dinner and for me, that's not enough protein to keep me satisfied for the rest of the night, but it would be a good for a lunch portion. Plenty of noodles. Ingredients were fresh. The broth was extremely tasty! The restaurant itself was kind of... Dark, but the friendliness of the staff and the deliciousness of the food, makes it easy to overlook that. The menu has a large selection along with a large selection of Boba drinks. We ordered a rare steak Pho and a mixed Bun bowl. I am pretty particular and rate my Pho on 3 criteria; broth, meat, and freshness of the veggies. The broth was ok. It had lots of flavor but was a little fatty for me. The steak was very tender but only had 3 to 4 small pcs in the bowl. The veggies were a disappointment. The bean sprouts were brown and mushy. There was plenty of cilantro and lime options. The noodles were a little tough and chewy as it seems they didn't cook long enough to make them perfect. The Bun bowl was better. The egg rolls were crispy, and meat tender. Hands down our favorite neighborhood pho restaurant! We love coming here, whether it's a last-minute dinner decision or part of a well devised plan to kill time while the tires are being rotated at Costco. I can also attest that if you're feeling under the weather, nothing beats the to-go soup options (I recently sent my spouse to pick up three orders of soup that I ate over the course of a few days while I got over a virus). The service is excellent and very friendly. It's usually seat-yourself style. They recently updated their menu and it's very user friendly with nice photos. Ordering is easy with a big, easy-to-read menu (for folks who accidentally left their readers at home -ahem me) by the counter or a full menu at your table. Pro tip: the table menu has more options. I ordered the Combo Noodle Bowl (B9 maybe?) -- grilled pork, chicken, beef, and egg rolls -- and it was incredible. The presentation was picture-worthy, the beef was tender and slightly sweet, the egg rolls were crispy and flavorful, and everything together just worked perfectly. (I'm not a drown-it-in-fish-sauce guy, so I mixed everything and dipped as needed -- perfect.) The vibe, the service, the food, the value -- it all hit the mark. We also got stir-fried tofu with veggies. Both were delicious! They were very generous with portions too. Our 11-month old baby LOVED the tofu and nearly ate the entire dish herself. They had a high chair and were accommodating to families with little ones. When we were there, there were three other families with little ones. We have eaten here twice in a week. Both times I had the same dish- seafood pho- and my son had fried noodles. Both times we both ordered identical meals and there were obvious inconsistencies. Both ways were great but there was obvious differences. My son's plate was huge the second visit but mine felt deflated. The seafood pho was incredible on my first visit with 2 shrimp, 2 fish/tofu cakes, 2 clams, 2 crabmeat and 2 squid but the second visit-today- there were 50% less proteins and zero fish cakes. Still, the pho was incredible and was everything I wanted. It was just bizzarr having two different experiences in a week like that. Meanwhile my son's plate had almost twice the food as the first visit. So almost opposite experiences. This won't stop me from returning on a regular basis and I have abandoned my "favorite pho" place in town and adopted this one now! First, and most importantly: the pho broth here is the best you can find in Colorado Springs. I urge the owners to keep the recipe...don't cut corners, don't make changes. It's pretty perfect. I'd like see more generous portions of cilantro and sprouts. I'd like to see more lettuce included for wrapping the egg rolls. I'd like to see little bowls for dipping sauce. I understand most Americans don't know how to properly eat pho. They squeeze sauce into the broth and eat the egg rolls with chopsticks.
