I came in understanding the demographic that this restaurant caters to, but I was surprised by the flavors because they were better than I expected. The ambiance is what you would expect from a restaurant close to Pearl street and Wash Park. I liked the decor in the restaurant like bikes hanging from the ceiling and the Vietnamese coffee tins they use to hold utensils. I was not super hungry this night and wanted something light and my bf was craving pho so we decided to try a new spot out. He had the pho haus trio and I wanted to try their Bun Xeo with pork belly. The broth of the pho haus recipe is a little sweeter and overall doesn't taste like the normal pho, but I really liked it as a broth. It had a little spice to it and was just the right size to not be over stuffed. My bun xeo had more coconut milk, but still crispy and lots of bean sprouts in it. Whenever I feel like I am coming down with a cold, Pho Haus is my go-to! I usually order the vegetarian pho (vegan broth with tofu and veggies). I am not vegan and tend to find vegan soups tasteless, but I love Pho Haus's vegan broth -- I do recommend adding the hoisin and sriracha to give it more of a zip. The vegetarian pho comes packed with noodles, carrots, red peppers, broccoli, onions, zucchini, and bok choy, with bean sprouts, lime, jalapeño, and mint on the side, of course! Top notch pho spot in Denver. Their specialty pho is to die for. It has a spicy kick than traditional pho. The broth is very flavorful and not oily. The portions are HUGE! I had leftovers that lasted me 3 more meals. I tried the shrimp spring rolls and the rolls were much bigger compared to other places. Came here for lunch with some friends a couple days ago and enjoyed it! The service is friendly, there's cute, albeit kitschy decorations, and the food is tasty. And they have vermicelli bowls (or what they call noodle bowls here), my favorite!!!! We shared the Fresh Shrimp Spring Rolls and Pork Fried Dumplings. The dumplings were standard, but the shrimp rolls were good! Felt like they had made it fresh since the wrap and vermicelli were soft and all of it was served at room temperature. I then had the Grilled Shrimp Noodle Bowl, which actually featured a good amount of shrimp! Yay!!! And the shrimp had some delicious sauce on it, extra yay!!! Call ahead because they usually have a wait. We tried Pho Haus for the first time and especially a wonderful meal while it was snowing outside. My friend and I got the vegan/vegetarian pho and fresh tofu spring rolls. Had some disappointment initially because when we called ahead, they told us the wait is 1.5 hours long so we stayed back doing other things but within 20 mins we get a text saying our table is ready. To this we called them and let them know we are 15 minutes away. They told us it'll be fine and will seat us when we get there but we had to wait another 20 some minutes before getting seated. There was miscommunication on their end. After all this we ordered the food. The service was excellent and they're taking the Covid precautions seriously. One of the really good vegetarian pho's I have had and omg the peanut sauce with the fresh tofu rolls, yum! It would've been amazing if they had milk alternatives for the Thai tea. I moved to California 5 years ago and make it a point to come back here every time I visit. The house pho is perfect. Not your typical pho but in my opinion it's better. I came here because one of my favorite food bloggers recommended it. I got the Haus Pho with the trio of meats (rare filet, meatball, brisket). While the noodles are the same, the broth is not a typical beef one like pho. It's suppose to have more herbs and spices although I personally thought the soup was a bit mellow. It was also a bit sour and spicy but more of a hint of it. The bowl was pretty big and they gave a good amount of noodles and meat.
