I eat here several times a month. I usually get pho. I like the atmosphere, the size (the restaurant is smallish) but the food and service are excellent. My only knock is at peak times it is hard to get seated especially in winter when you can't eat on the sidewalk out front. If you get there early or late- you should be fine. read more

This place came highly recommended by several people, and as my fiancé and I love Vietnamese food we had to try it. We were certainly less than impressed by our experience. As far as Pho goes, I would give this a 3, but in Boise, its a 4. I order the Clear Noodle soup and we had the Fresh Tofu Spring Rolls. The clear noodle soup is a pretty large portion and reheats the next day very well. I added a couple drops of Hoison sauce and a large amount of Red Chili Paste, which goes well with the ginger garlic broth in the soup. The fresh spring rolls aren't as good as Mai Thai next door, but the place is decent. Service is a little slow even when there is no one in the restaurant. But when you want some tea and noodle soup, its a great place in downtown Boise. read more

I'm a former Pho addict. I conquered my addiction when I moved to Boise and was unable to find a decent Pho restaurant. I had a chance to dine at Pho Nouveau today and the addiction is coming back. It's true that they only offer 2 Pho varieties but the standard Beef Pho soup I had today was fantastic. We started our meal with the salad rolls. They were a bit out of the ordinary. They were way too stuffed with noodles and lacking in pork/shrimp/salad. The soup was better than most places in Boise again I felt there was way too many noodles and about 6 small slices of beef. Run from this place. My wife and I went to this restaurant today and ordered Lemongrass Chicken Baguette's (Bahn Mi) sandwiches. Menu described crusty French baguette with sweet potato fries. Wrong..the bread was a soft hoagie roll served with cold greasy crinkle fries. The chicken on the hoagie was minimal at best. The waitress didn't know why the Bahn Mi was served on a hoagie roll and not a crusty French baguette and was unaware that it was supposed to be a crusty French baguette and the waitress said they no longer have access to sweet potato fries. read more

this was way better than i expected. the food looked pretty authentic all around. the big minus here for me is the MSG. im slightly allergic to MSG so when food has a lot of it i feel super bloated and out of it. also our waitress was maybe slightly new. i think she delivered the wrong food to the wrong table and the lady in the kitchen yelled at her. she wasnt super fast .... i had the clear noodle soup and there was a lot of shrimp. also mussels. the noodles were good! not soggy or stale. the MSG killed me though read more

Coming from California, where there are plenty of Pho restaurants, we were surprised to find one in Idaho. The dining experience was a bit more upscale than the ones on Cali. Arriving 15 min before they opened, they noticed us outside and let us in early. Pho was actually just one of the entrees in the menu, with your choice of beef, chicken, and meatballs. In Cali, there are usually more meat options such as flank, brisket, tendon, and tripe. The soup came with all the standard sauces and vegetables on the side, and overall the Pho tasted just as good as the ones we have in Cali. For drinks, we had the Thai ice tea and iced Vietnamese coffee. Both were excellently made. read more

Want some good pho in Boise? This is your place. The bowls are big and plentiful. Comes with a side of bean sprouts, basil and limes which is great. Ask for the chili paste - don't know where they get it from, but it's very flavorful and great in the soup. Try out the spring rolls too, they are very tasty and good for sharing. read more

Not authentic and small portions for the price. The pho soup base came out SWEET... as if the soup base wasn't flavorful enough and they dumped leftover sweet & sour sauce to make up for that. Normally pho places pride themselves on their soup--a full salty flavor which comes from stewing a giant pot of bones for hours on end. This easily could have been an Asian soup based dessert. After the disaster at Don Khanh I knew better than to compare Pho Nouveau food in Boise to Vietnam. I ordered a grilled pork sandwich because I thought that would be harder to mess up (french bread, meat and pickled veggies), and the portion was smaller. It came with fries, which I'm 90% sure came from a frozen bag. The sandwich was pretty good, but I was sad at paying $7+ for it. Little Vietnamese shops generally charge about half that (for that portion). read more

Prices are generally reasonable (restaurant rather than take-out pricing on banh mi, otherwise pretty much in line) and I would definitely go back to try their Bun and Banh Mi. This is hands down my favorite pho place in Boise. I did not like pho the first time I tried it elsewhere, as the broth was bland. The pho broth here is amazing. It is a bit sweeter than some places but I think it is amazing and flavorful. After trying the pho here I started craving it often. The pho is a perfect amount of filling and never leaves you feeling overly full and regretful. My go to order is the beef pho with 2 meat balls and the crispy spring rolls. You'll leave with a tab around $35 for 2 (pre-tip) which is quite reasonable to me. I recently tried this place for the first time and was thoroughly impressed. I went with friends the first time and returned with my parents. The food is so delicious; if you are looking for a healthier meal out, this place is great on the stomach and the wallet. My mother had a chicken dish that was super flavorful. I had the Spicy Beef Soup both times and it's definitely what I am going to crave anytime I need soup or have a cold. The flavor is unbeatable and you get a ton, so it could truly last you two meals. Pho Nouveau is a definite favorite of my husband and mine. I grew up on Vietnamese cuisine and found the quality of the food to be far above anything else I've found in the Boise area. The Cha Giao is amazing! Someone mentioned in another review that they were disappointed in the Cha Giao because they were wrapped in won ton wrappers. It isn't a won ton wrapper. I've made Cha Giao my whole life and you can either wrap them in the rice paper or the wheat wrappers. They are excellent!!! Highly recommend!! The service is very friendly and attentive. read more
