Discovered it maybe a year ago and have been back plenty of times because it's delicious! The broth is rich in flavor, the thit Nam which is flank I think? And beef balls are tender and the noodles have a nice bite and stay decently Al dente considering their thinness. All in all solid ingredients and flavor all around. I ordered a regular-sized portion of the Pho with Filet Mignon and fresh noodles (banh tuoi). The beef was thin and soft. Easy to chew and paired nicely with the fresh noodles in the broth, which was just right, not too hot. I also ordered a sugar cane juice (nuoc mia). It tasted fresh and had the standard citrus (kumquats I think) to help balance the flavor. Everything came out quickly, in less than five minutes. They serve it in the usual style with hoisin sauce and chili oils/sauces and also with lemon, bean sprouts, jalapeño and fresh basil. The small is big. I could not have eaten a large. It came with plenty of rice noodles and meat with garnishes of green onions. The broth was rich and beefy and did not let me down. I enjoyed the ox tails and meat. Given the limited Vietnamese options in Santa Clara, this is one of the better spots that has pretty authentic Vietnamese dishes! The meat was super soft and their broth was very flavorful! Since there weren't a lot of people inside, it was very quiet. There was a TV but it wasn't on. There was no music playing either. I'm guessing it was because the restaurant wasn't busy. When I was telling my partner this while we were eating, I think they could hear me because the music suddenly turned on about halfway through our meal. Overall, we really liked it here! The spring rolls came out first - it was delicious. The wrapper was soft and everything was fresh inside. We both enjoyed our vermicelli bowls - lots of fresh ingredients and a yummy eggroll. The noodles were cooked well and the sauce had good umami to it. I ended up taking a lot of the chicken home - plenty of meat per bowl. Staff took our order quickly and food came out quickly. Service was great - our waters were refilled when needed, but we were left to have our conversation. We never felt rushed to order, pay or leave. The food is very tasty (can rank probably top 10% of the mant local pho restaurants I have tried). The pleasant surprise started with the spring rolls (!) we ordered. Was a little disappointed in our experience! Maybe they're just working out the kinks since they've just recently opened but not sure if I'd go back. We were seated pretty quickly but didn't get water or even the menus until we flagged someone down. The egg rolls were really small in portion (the single lettuce piece seemed an afterthought), and was just okay. I'm used to piping hot big egg rolls! The pho was pretty good but a bit on the oily side, and the portion was much smaller than other pho restaurants. The dining room also got very smoky and hazy during our meal.
