Low key pho Actually pretty low key. You walk in and either sit a table and wait for a server or order at the counter. The pho here is pretty standard. The broth is good but nothing crazy. I tried the rib and rare beef. The rib was really tender actually. The rare beef was decent, although it felt slightly slimey for some reason. The #4 filet mignon pho has the best quality beef I've had in pho bowls. Usually, when our family goes out for pho, the kids pick out the meat. But their filet is very tender and they are not shy on portions. I'm so glad Santa Clara has a pho place for us to be regulars at! Easy to chew and paired nicely with the fresh noodles in the broth, which was just right, not too hot. I also ordered a sugar cane juice (nuoc mia). The pho broth was okay but fairly bland and lacked the rich flavor I expect from a good bowl of pho. What surprised me most was how little meat and noodles came with a large order. For the price, I expected a much more generous portion. We also ordered a few appetizers and drinks, and the prices on those felt especially excessive for what we received. By the time everything was added up, the bill seemed way too high for a casual pho dinner. Service was fine and nothing was particularly worth me tioning, but between the high prices, small portions, and average-tasting pho, the value just wasn't there for us. The spring rolls came out first - it was delicious. The wrapper was soft and everything was fresh inside. We both enjoyed our vermicelli bowls - lots of fresh ingredients and a yummy eggroll. The noodles were cooked well and the sauce had good umami to it. I ended up taking a lot of the chicken home - plenty of meat per bowl. Staff took our order quickly and food came out quickly. Service was great - our waters were refilled when needed, but we were left to have our conversation. We never felt rushed to order, pay or leave. The food is very tasty (can rank probably top 10% of the mant local pho restaurants I have tried). The pleasant surprise started with the spring rolls (!) we ordered.
