So this is a review to address all the negative reviews about their food. I understand people have knowledge and experience with Vietnamese cuisine, but that doesn't make you an expert at every Vietnamese restaurant that exists. Every restaurant tends to have their own style when it comes to preparing certain meals. A lot of these reviews that I am reading are actually just big misunderstandings that people like to jump to conclusions with. For example, I see people complaining about the meat in their pho being extra fatty and chewy. That is because of what you order; if you get a pho with "fat brisket" in it, then the meat will have an excessive amount of fat on it (some people like the fatty part that's why it's there). Another thing is that people are confusing what you are supposed to get as a side with your meals. I saw a review where someone complained about getting fish sauce with their grilled pork roll instead of peanut sauce. They claimed that they were very knowledgeable in Vietnamese food, but if they were, they would know that fish sauce is correct for that appetizer.
Another thing I wanted to address was the portion sizes. If you mention to them that your portion of noodles, meat, or anything else seems small they will accommodate accordingly (if the portion is actually incorrect). They only have one size (XL) for their takeout and that is because of the size of the to go containers they purchase. OF COURSE your takeout order is not going to match the exact portion that you would get while in-house because the containers (which COST MONEY) are not the same size as the dinnerware. This goes for any other restaurant - your experience will always be better when you eat in compared to taking out. I saw a complaint where the meat in their takeout pho was raw. IT IS SUPPOSED TO BE RAW so that it can be cooked by the broth after reheating it. Otherwise, you can ask for them to cook the meat for you before packing it. Authentic pho is supposed to be cooked how I described, so taking out pho will always be an issue. It isn't the restaurants fault, it's an issue of just taking a meal to go that is very hard to prepare TOGO.
Another thing I wanted to address was people commenting about how the broth is too fatty on certain days compared to others and that's just a huge misunderstanding. Pho is naturally a very fatty soup and every Vietnamese restaurant tries to get as little fat in their soup as possible. However, the toppings that you order in your soup can determine this as well. For example, if you order any pho with tendon or fat brisket, the soup will be fattier. Why? BECAUSE THEY ARE FATTY MEATS. It's like ordering a steak and complaining that there is blood when you squeeze the meat - crazy and ignorant. If you took the time to understand the reasons why your food is a certain way, you will come to the conclusion that Pho Today isn't intentionally giving you fattier meals to cheap out or skimp.
For the drinks (like the Thai tea and Vietnamese iced coffee), they give the same portion of liquid in every cup and fill it with ice. So if you ask for less ice, there will be the same amount of drink in it as if you had ordered it with more or even no ice. It's called PORTION CONTROL. No customer is more special than the other and you are not a life hacker or restaurant guru if you are thinking you can get a more out of certain items on the menu by requesting slight changes. You won't be able to mix and match meats in your pho because certain meats cost MORE than others. So it wouldn't make sense in a financial standpoint to give whatever choices of meat willy nilly to every customer. They keep the portions to a very professional level and try their best to treat every customer with the same respect throughout all their locations.
I want to mention some things I don't agree with. First, they have items on the menu that tend to be less worth than others. The shrimp tempura is overpriced for a very small portion. I have addressed them about this, but haven't gotten it since so I can't tell you if it's changed. It's sad because those fried little shrimps are fire. Second, their kids and vegetarian menu are very small. I would like to see a larger variety for both. I do know that their other locations provide a larger range, but I think it could be bigger. Third, their service does lack. I do understand though because it is meant to be a very fast-paced restaurant where you sit, order, eat and leave (like most asian-owned places).
In order to have the best experience at Pho Today, all you need to do is COMMUNICATE with the staff. If you have a problem, address it with an OPEN MIND and don't try to think you are always right. The customer being always right is the biggest lie in the food industry and people tend to go into these places with a humongous ego. You are an asshole if you do that.
