The egg-to-sausage ratio was just right, and the taco was packed with filling. I also tried the Pork Skin & Egg Taco, but I didn't enjoy that one as much. The pork skin was soggy and chewy, even though I could tell it had been crispy at one point. Combined with the softness of the eggs, the texture just wasn't pleasant. That said, the tortillas on both tacos were soft, buttery, and clearly fresh, which made a big difference in the overall quality. While I thought these tacos were good, they weren't anything special compared to ones I've had at other places previously.

I visited close to closing time, so I was the only one there, but the place seems like it could be a really fun spot to hang out, especially with the outdoor patio seating. One small idea, if they haven't already considered it: it looks like there might be enough space for another food truck or two. An ice cream truck would be especially fun for families and could make the space even more interesting.
