Founded by brothers Luke and Jake Kory alongside Chef Marco Garcia -- whose culinary perspective was shaped by the borderlands of Nogales -- the restaurant draws heavily from the traditions of Northern Mexico and Sonoran fire cooking. The design language immediately sets the tone. Breeze block walls, dark steel staircases, warm walnut woods, glowing amber lighting, leather banquettes, and contemporary Mexican artwork create a space that feels modern and distinctly Sonoran. Both visits featured a live DJ, and while it's louder than I would typically prefer for a long dinner centered around incredible food, the atmosphere is undeniably vibrant and social in a way that fits Old Town Scottsdale beautifully. Standout dishes included the Pulpo A Las Brasas -- smoky mesquite-grilled octopus marinated in achiote, citrus, and warm spices with Sonoran chimichurri -- along with the bubbling Queso Fundido with chorizo and the bright, herbaceous Aguachile Verde layered with lime, serrano, cucumber, avocado, cilantro, and crisp red onion. We also ordered the 1855 Ribeye, a beautifully cooked Black Angus boneless ribeye with an incredible tenderness and mesquite-charred finish. The centerpiece of the evening, however, was the Vaquero Tomahawk -- a dramatic 40 oz bone-in ribeye from Arizona's Local Stockyards. Cocktails were equally memorable. FYI There was a DJ playing music for a 600pm crowd and if you sit in a booth upstairs there is the possibility of sun being in your eyes every time the door opens. This isn't great if you're facing the door and the first booth. We tried several margaritas, the house and watermelon spicy. Started with chips and guacamole, ceviche, and the pastel de dorado. Our entrees were the La Sonorense. The filet was excellent and the cauliflower relleno was memorable! For dessert we tried the chocoflan and the churros. Both were good. I'd probably give a 4.5 if that was possible, but 4 isn't really a fair rating. Overall the experience was great. We had reservations and were seated pretty quickly. Service was helpful and friendly but maybe a bit on the slow side. I do wish that we would have gotten a seat indoors since the reservation didn't specify that we may be outside and AZ this spring is hot as hell. Appetizers were delicious. We had the tuna crudo, which is essentially a tuna tartare with avocado and a delicious sauce. We also got the fried beef and onion appetizer, but don't remember the name. Texture was different, but we were warned of this, and it was really good. We ate almost all of it. The appetizers' size was almost too big, that we didn't have much appetite when it came to ordering entrees. We shared the mahi mahi (dorado?) and it was the bomb. Highly recommend this. Located in the Old Scottsdale area, Pistoleros Parrilla is a lively environment, yet dimly lit. It's a trendy Mexican restaurant that is moderately priced. Initially walking in, I loved the indoor and outdoor seating and environment. There was a DJ playing music in the background and it looked very cool. We ordered the Aracherra and Pollo Nogales Entomatadas. The Aracherra was requested "rare" and was perfectly cooked. While it was spiced quite nicely, it also came with chimichurri sauce, salsa, manchego cheese cubes, and pickled onions. You can season your steak as much or as little as you like, although it didn't need anything extra. The steak was wonderfully spiced. While my guest enjoyed her steak, I ordered the Pollo Nogales Entomatadas, which are chicken enchiladas. They were also presented beautifully. While it's meant to be tomato-heavy, it was perfectly cheesy and had chicken in every bite. Three enchiladas were provided, topped with crema and tostada strips. I ate about every bite. It was rich, but not heavy. The chicken was very good and in every piece of the dish. It also looked pleasing. We ordered a side of Frijoles Negros de la Olla, which are vegetarian black beans. Served in cast iron dish, it was very standard tasting. For a cocktail, my friend ordered a Spicy Watermelon Margarita, and she loved every bit of it. It looked awesome, too. Our server was also great. She really was patient as we asked question. The con of our meal was the dessert. We ordered churros, and they came with three sauces - chocolate, vanilla, and strawberry. I was surprised to say the strawberry was my favorite. It was perfectly sweet and tart. What made the dessert bad was the fact the churros weren't fully cooked inside. The churros came out dark, but clearly not finished when we bit into them. Overall, the restaurant is worth the price paid (except for the churros). My fiancé and I were visiting from Orange County, California and had dinner here on a Sunday evening. We were deeply impressed. The customer service here is exceptional. We've dined at many of the finest restaurants in California, including several Michelin three-star restaurants, so we know what great hospitality looks like. This team delivers that same level of service, but without the pomp. It feels genuine and natural. Our server Melissa was fantastic, and GM Christopher clearly sets the tone for the room. You can tell the staff enjoys working here and holds themselves to a high standard of service. Multiple team members checked on tables, cleared plates, and kept everything flowing seamlessly. UNREAL. Me and my roommate just wanted a night cap. The place was completely empty. We walk up to the bouncer (great guy) my roommate hands his ID and some random guy not doing anything starts talking smack to him. Bouncer is checking his ID at the time. Literally talking smack for no reason. I ask the bouncer what his problem is and him and the hostess just shrug their shoulders so it seemed like it was a common occurrence. Unfortunately, the service set the tone for the evening. Our waitress seemed annoyed from the start. There was no warm welcome, just "What do you want to drink?" and "What food do you want?" Not a single ounce of friendliness. Considering our entire group was ordering drinks and spending money, the lack of basic hospitality was disappointing. To make matters worse, the bathroom repeatedly ran out of tissue paper. Attention to small details like that goes a long way, especially at a place with so much hype. As for the food, the skirt steak was overwhelmingly salty, almost inedible. I never received my rice, and no one ever checked on our table to ask how the food was or if we needed anything. The skirt steak melts in your mouth, the entomatadas are full of flavor and so tasty, the queso fundido is the best I've had. Chorizo mushrooms are something I've never seen before and are such a yummy option for a side. The tortillas, beans, guacamole, and salsa all taste like home. I have never written a review, but I felt this establishment deserved one. Me & my wife were out celebrating, deciding to try out a new spot. But this experience made us think twice on sticking to our usual spots. Our waitress was very negligent & only prioritized big parties. She repeatedly told us she would be right back, but was missing majority of our time here. The party seated next to us was loud/obnoxious, and obviously needed to be cut off but were continually being served drinks. We had to wait 25 minutes to be able to order drinks & another 30 minutes to order our food. It was about 1hour & 40 minutes until we were seeing our food in front of us. Me & my wife were very close to walking out of the restaurant, but in good faith, hoped that our food would make up for it. But still, our food came out cold & we were disappointed.
