If you've never had one before they are like a fried corn tortilla sandwich. The fillings were plentiful and well seasoned and the tortillas were lightly crispy and were a good sandwich material. The mulitas came with 3 different salsas (1 red, 2 green), and a bag of limes, cucumbers, and radishes. I appreciated these little extras as they went well with the meal. We tried the steak, birria, el pastor, the el pastor combo, and I ordered the Queso Birria combo. My combo was Amazing. It comes fresh and hot with 3 delish tacos and the dipping juices with fresh lemon. The pintos have great flavor, too. They have a lot of options. The staff was friendly and fast. We did not wait long at all. They also offer churros. They were yummy, my only thought was, they could use a bit more sugar. For drinks they had sprite and coke in the can. It was pretty convenient that they came as a community dinner night for my daughter's apartment community. We were heading to the pool and decided to try the tacos. My wife being Korean born refined her cooking skills in the eastern cuisine like Korean, Japanese, Thailand, and others while I have refined my skills with French and Italian. Prescott is a beautiful place to live but its culinary basis is built on sawdust. We usually cook for ourselves if we want a top notch meal. Now the past several years I have been confined to a wheelchair and transport is very limited. We used to spend winters in Hawaii where we could get great quality meals and seafood whether we prepared them or went out. So our 40th! I wanted to do something special for my wife since I have not been living up to my end of our culinary relationship being confined to a wheelchair. Thus I started seeking out a Chef that would come to our home with his staff and prepare a custom made meal for us. I selected Chef Thomas and Copper State Kitchen. I started by a rather lengthy discussion via phone and followed up with sending Chef Thomas some of our favorite recipes, sufficient for him to develop a five-course meal for us. Chef Thomas is very professional and easy to work with. We refined the meal over the next two days we agreed on the following proposed menu; I supplied the wines. Warren, the executive chef and owner of What's Fresh?, crushed the competition today. I was immediately greeted by a very friendly smile, none other than the owners Mom. Yup, Warren's mother. This is the lady who makes the pickles for their sandwiches and wraps. I ordered the porktastic sandwich with the hope that it would be good. Unwrapping this meal I was pleasantly surprised by the quality of bread Warren uses for his sandwiches. The mustard used on it is the perfect complement to the fresh greens and pork. The explosion of flavors complimenting each other was absolutely awesome!!! Fresh tomato, a fresh mix of greens (baby spinach is always good with pork) and those pickles. Pickles! Crisp with a lot of flavor! I loved it! Just so you know, for the $8 you not only get the sandwich but a bag of chips and a drink. That's $2 less than any other food truck on the street. I guess fresher is better! While Warren and his wife Bonnie have only been working the food truck for 4 months, it is definitely a hit around here.
