The bagels have a fantastic crunch and are great as is. However, we opted to eat them with their brown sugar butter. We tried every bagel flavor except plain and can say definitively that their everything and sesame bagels are top tier. I would definitely return to try their sandwiches! Yummm... bagels. This place is in Georgetown and it's close to a parking garage, so it's pretty easy to get to. Like a lot of spots in Georgetown, there isn't much seating. They have a few tables upstairs and outside, but if it's a nice day, grab your bagels and head down by the river. It's a great place to eat with a nice view. Now for the bagels. They don't have a huge selection, and they don't make breakfast sandwiches. They just make bagels, and they do them really well. The bagels are fresh, chewy, and honestly the best I've had in the DMV. My favorite one is the everything bagel and salted bagel. Their flavored cream cheeses are awesome too, and they have a bunch to choose from. If you like New York-style bagels, I'd definitely recommend giving this place a try. read more

Wowww!! I was so excited to try this! Finally got to go this past weekend and it lived up to the hype. Staff were sooo helpful and sweet and the orders came out to quickly. The concept is simple yet soo good! The everything bagels were so warm and soft and paired perfectly with the spicy scallion schmear. Hot fresh bagel with a little tub of flavored cream cheese. Yum! This place moves fast! I ordered 3 bagel with one flavor of cream cheese. They had 5 bagel flavors and multiple cream cheese flavors. I got a sesame, salt and everything. The salt and everything with both sublime. Yummy! Tearing the hot bagel and getting a good glob of scallion cream cheese on it was grand! They had 4 tables up stairs and a few tables outside. This definitely requires sitting or standing in one place to eat but it was really delicious. Exceeded my expectations . Omg... Popup Bagel is SO good! I love the concept of the pull-apart bagels instead of slicing them open--it's different in the best way. The bagels were incredibly fresh, soft, and moist. And the butter? Absolutely delicious--I honestly wanted to take some home! The line was long, but it moved really fast. I was in and out in about 3 minutes. Got to try these bagels for the first time when a coworker brought them in to the office. I won't sugar coat this, these are probably the best bagels that I have had outside of NYC. I tried the plain bagel with salt and it offered absolutely perfect consistency. Soft interior with a flexible but harder outer shell, it was all you could ask for. Paired with this superstar bagel are the out of this world shmears. I tried the plain cream cheese, scallion, and their limited time Chipotle scallion. It's opening weekend for pop up bagels, they opened on Friday and I went the day after. I was already going to be in Georgetown and a bit skeptical because I saw how long the line was the day before. I went around 1pm and the line wasn't too bad. I waited about 10 minutes in line and it took 2 minutes after to receive my bagels. I got 1 poppy, 1 sesame, and 1 salt with plain cream cheese. I ate them right outside so they would still be hot. The bagels are good! No doubt about that, are they overpriced, yes. They give you an insane amount of cream cheese. It seemed a bit wasteful to give so much. I ended up throwing mine away because I knew I wouldn't eat it later. My favorite was the salt bagel, 10/10. The sesame bagel was a let down for me. Been meaning to try this new stop in Georgetown and was definitely not disappointed. These bagels are served fresh and meant to be eaten immediately by tearing off bite size pieces and dipping them into a schmear flavor of your choice. We went with the special flavor of the month: rosemary garlic, and it was really good! More salty than expected but still good. They also had brown butter and apple cream cheese specials. The bagels themselves were hot and fluffy. The drip coffee wasn't bad either. If I go back, I definitely would opt for a cream cheese too. Also a good to know- you do have to buy a minimum of 3 bagels when you come lol. That shocked me and my friend when we ordered. The music inside is also pretty loud so try to know what you want when you get up to the counter so you don't look dumb and confused like we did when trying to place our order. Pop up bagel is new in Georgetown and so much fun. I live about an hour outside of dc and it was well worth the trip. The line was out the door, but I didn't wait more than 10 minutes to get to the counter and my bagels were ready almost instantly! Some seating upstairs and we managed to get a seat pretty easily. Once we got to open our bag of bagels, they were so fresh that I couldn't even touch the bagel at first. When I was able to tear it, the steam wafted out like a cartoon. Everything was so perfectly baked and cream cheese so perfectly spreadable/dippable (if you do it their way). It was just a perfect bagel treat. I would not pass up an opportunity to get pop up. The bagels are pretty darn good. Nice size that's not too big not too small. Great crisp outside and nice interior. Gets more chew as it cools though will not be your thing if you're looking for a really toothsome bagel like Bethesda or Yael. Super excited and friendly staff for the opening. Real star is the schmears though! All of them are delicious and the flavors not as overpowering as you might think from the banes. Unfortunately, can't quite get over pricing at $15 for 3 bagels or $46 for 12... So all in all a fun experience to try but not a replacement for tried and true DMV bagel shops. I want to not like this so much because it's definitely overpriced ($15 for 3 bagels with cream cheese and no option to customize the number of bagels?), but it was delicious. I don't like toasted bagels because it dries them out and messes with the texture, but so rarely do you get truly fresh bagels served to you still hot. There's something magical about getting a bag of three piping hot bagels and scooping them into delicious spicy scallion cream cheese that just hits different than room temperature or toasted bagels. Fine, yes, I will be back. It's better to split with friends given the forced 3-bagel order, but I'm sure they would freeze well too. There's a second floor with seating as well as patio seating outside, but come early if you want to be sure to get a table; it was hopping by 9. Service was fast and efficient.
