Once a week, its in elk Grove at the above mentioned address. The trailer is parked along a street thus providing poor parking. It is primarily a takeout and has many different items available. Once you place your order a pager is given which lets you know when your order is ready. The quality is first rate and the prices are fair for what you're getting. The staff is very friendly and know the product well. They serve Ribs, Beef Brisket, Tri-Tip, Pull Pork, Chicken and, All Beef Hot or Mild Links. The sides are Potato Salad, Green Beans, Baked Beans, & Cole Slaw. Sims' Southern Punches looked really good! I had the ribs with potato salad and beans. Really excellent, although I did find the brown barbecue sauce to be a little strong for me. The quality of the ribs and taste really hit the spot! Sim's is not there every week, but when it's there-well worth trying it out.

With it being outdoors, you might be careful for the wind; while it helps with the smoke, it could also blow all the smoke in your direction if not paying attention. There were at least 6 grills, when we arrived, and they added a couple more as more people came. My suggestion would be they try add even one or two more, because when replacing the charcoal on them, there is the natural time period of waiting the new coals to get up to temperature. Each of the grills had sauce; but if you can't find some, it's very easy to get some from the people working. There are two sauces: a base sauce and a finishing BBQ sauce. Try your best to follow that order, if you can. There are a number of choices, even some off-menu. With so many options to choose from, it's tough to narrow down on what to get. What we did get, however, we were happy with. We'll have to try get back and try the ones we didn't have this go-round. The people were great, and they had people helping at the grills as well. There are no listed prices, and some people were surprised at the totals. Just an FYI.

The concept is simple: grab a tray and plastic glove, then grab the different skewers that you would like to eat. Pay at the register and then they will cook it on the grill out front for you and then bring it to your table. There are a few other dishes that you can order from the kitchen as well. I wasn't familiar with some of the skewers available, but luckily my husband was, so I just wish that they had everything labeled for those that were less familiar. We also ordered two sides of rice and sisig. With a total of nine skewers, the total was nearly $50. Looking back there weren't even any prices listed for the skewers so I'm not even sure if they are just a set price or priced by the different meats. Overall, it felt a bit pricey, just going off of how full I felt at the end compared to the price paid, but at the same time you can't get this type of outdoor grill street food anywhere else, unless you are at a food festival if that. The best part was all the sauces that you could mix and match with your skewers. Staff were friendly though and you could tell that some were more on top of it than others. It was fun to sit by the window and have the kids watch them grilling the food. I could see it being very confusing and easy to mix up orders, but it seemed like they had a system going! I don't know if I will be back right away, but if they happen to bring on more entrées or even skewer options, then I would consider coming back. My partner and I came here for the first time and had an amazing experience. The food and service were excellent, and I was especially impressed by how accommodating the staff was with my dietary restrictions. It can be extremely difficult to dine out when you have dietary limitations, so having a restaurant genuinely take the time to care about what I could and couldn't have meant a lot to me. That experience was actually the reason I decided to come back. Unfortunately, our second experience was completely different. Our server was wonderful and went above and beyond throughout the entire meal. Unfortunately, the issues we experienced were with the food and, more importantly, how the situation was handled by the manager, Caleb. We ordered two $72 ribeye steaks--one medium and one medium-rare. When our steaks arrived, we immediately noticed that they looked completely different from one another. One clearly appeared to be a ribeye, while the other looked more like a New York strip. We asked the staff to confirm, and we were repeatedly assured that both steaks were ribeyes. The steaks were taken back to the kitchen so they could check with the chef. At that point, I realized that my partner had actually been given my ribeye--the medium-rare one--and I had been given the other steak. When I cut into the steak I had been given in front of the manager, it was extremely rare and not at all what I had ordered. The manager asked me to cut further into the steak to check it, and then asked if I wanted him to take it back and "re-cook" it. I said yes because I simply wanted to be able to eat the steak I had paid $72 for. Unfortunately, when it was brought back, it was dry and overcooked, and I could no longer enjoy it. This was extremely disappointing. In my opinion, once it was clear that the wrong steak had been served and that it was significantly undercooked, the appropriate response would have been to apologize, acknowledge the kitchen's mistake, and prepare a completely new steak--especially considering the price. By this point, my sides were cold, my partner was frustrated because the steak kept being taken back and forth, and I no longer wanted to eat. Our server continued to apologize and was genuinely kind throughout the situation, so I want to make it clear that this was not her fault. The manager ultimately removed the steak and sides from the bill after I told him I no longer wanted anything. I appreciate that, but unfortunately, it didn't change the overall experience. I came in after work wanting to enjoy a nice steak and a relaxing evening with my partner. Instead, we spent a significant portion of our meal dealing with mistakes and trying to get the food we originally ordered. Caleb, I hope you take this feedback as an opportunity to improve. I understand that mistakes happen in restaurants, but the way those mistakes are handled can make all the difference. I would have appreciated more empathy, accountability, and a better understanding of how to handle an expensive steak that was not prepared or served correctly. I truly wanted to enjoy this restaurant again because of how wonderful our first experience was. Unfortunately, this visit left us extremely disappointed.
