Bread was incredible! We shared a pretzel and it was flavorful and the perfect mix of soft and chewy! I didn't particularly think the girl behind the counter was friendly or helpful. We asked her what her favorite was, and if she had suggestions for bread for a certain meal and she gave a very lackluster and mediocre answer. Honestly, I can't remember if we got a French bread or something else because when she bagged the item she didn't say anything, she pointed to the shelf and pulled a loaf down. I almost passed this place up and boy am I glad I didn't. My family was out walking the area and were starving and unsure of where to do. At first glance I thought this was strictly a bread shop but when I saw the case of sandwich options I knew we had to go. They are so affordable and it was easy to just point, have them bagged, and walk out to eat which made lunch with two littles a lot easier. Come early because they sell out of bread fast! We came on a Sunday afternoon looking for their rosemary but it was already sold out. They sell unique breads that I have not heard of before like Miche, Spelt, & Bauernbrot. & traditional ones like Olive Rosemary & Raisin Walnut. They also serve cold sandwiches, pastries, & pretzels. Spicy Italian: Turkey Chimirchurri: Both sandwiches were good but they were too dry. Ask for extra sauce. Also, see if they could heat it up too because I feel like the Turkey Chimirchurri would be best served warm. I'm a fan of their thick addicting butter shortbread cookies and croissants. The woman who works the counter calls them "crack cookies" because customers can't stop buying them. The Carlsbad Gateway center is a great food innovation incubator that allows businesses to experiment. The Prager brothers started out small and as a no name bakery with a dream. The owners of the center gave them their start and believed in these two newly graduated brothers who initially studied chemistry and the sciences at A UC. But playing with bread recipes and getting obsessed with yeasts and grains became a passion. I know the owners of Carlsbad Gateway and respect their dedication to culinary innovation and helping give young people a start. ( Prager brothers isn't even the youngest business partner ... The Brothers Prager have brought bread to Encinitas delivered in four forms: pastry, flatbread, sandwich, and loaf. The form sandwich, two slices of bread with nonbread ingredients inserted between them, is executed well by the Brothers Prager (in particular the Turkey Chimchuri and the Fall Seasonal Vegan varieties). The form loaf allows you to take all of the fun of bread to your home or on the road and function as a wonderful present for a house warming or baby shower. Maybe you could even try to assemble your own "sandwich". I am yet to try the remaining two forms of bread, but I can say from my viewing of them inside the home of the Brothers Prager, they look good. Pretty nice that there is a Prager Bros walking distance to me now. Parking can be tricky in its surrounding areas. It is a short walk from two public parking areas near the Coaster. The croissants are nice, but I like Darshan's a block away better. Or Lofty coffee a few blocks away for even better croissants. Having the vegan sandwich is a must at Prager's as well. I feel like it's one of the few healthy options on this street filled with bars. Coffee is okay. Even at their original location in Carlsbad, I wasn't fond of it. read more

Great customer service. Staff was very helpful in letting me zero in on my choice of the perfect bread. The walnut raisin bread was excellent, especially toasted. Prager Brothers tends to have the best advertising you can find... A line out the door. I was a few doors down having lunch so I figured I'd stop in. What I found was good customer service and a quaint little shop with a variety of breads and pastries. As an Italian I have a soft spot (around my waist) for homemade bread. The bread and pastries all looked delicious and the staff helped me pair a bread with what we were having for dinner. I got a sesame loaf which perfectly complimented our fresh gumbo. Also try the butter croissant.We also got cookies too and while I'm 50 the wow factor of the cookies is that they were very dry and disappointed. Small but cute storefront with a selection of breads, cookies, pastries and sandwiches. There weren't tons of options; based upon photos from the Carlsbad location, it's definitely a smaller selection. I ordered an almond croissant, a couple pretzels and the financier cake. Pretzels were delicious, as was the croissant. I found the financier cake too sweet for my tastes, but high quality. I'll definitely be back to try the cookies and flatbread; croissants would be a great breakfast treat for houseguests. My only complaint was the lack of pricing; there were signs labeling the items but the cost wasn't listed. I know the saying about "if you have to ask how much it costs..." but I would have appreciated the opportunity to evaluate the options. I'm certainly not a professional baker but I've had my own starter for years and bake my own sourdough bread at least once a week for the family BUT I have not been able to perfect my rosemary olive bread (yet) so I lean on Prager Bros whenever we are craving it. Theirs is AMAZING but they only sell it on Wednesday and Saturday and I can never seem to get there on those days. Instead, I've been getting their olive flatbread as a substitute and it's become almost a weekly thing now. When I realized I missed the olive bread window on a Sunday morning, my daughter asked if we can at least get their olive flatbread. I couldn't say no so we went in yesterday to pick up two. We were meeting friends for coffee and I knew they would enjoy it so one of them was for our friends. We ended up being at coffee then moved to the park across the street for hours catching up so we ended up eating their entire flatbread. If we hadn't parked so far, we would've probably grabbed the second one and devoured that one as well. Our two 5 year old girls ate most of it so just goes to show their flat bread is loved by people of all ages. While I've touted their pastries in past reviews, their specialty breads and flatbreads are just as wonderful. read more

The sandwiches are made around 10 AM, so you can go grab one while you get a late coffee, and have your lunch ready to eat whenever you're ready. This is our must visit place whenever we are in the area (if not, we still make the effort to go all the way up here from Mission Valley) I have been to multiple Prager Bros locations and this one is by far my favorite. Something just hits differently, maybe it's the ocean breeze and the relaxing and chill ambiance. Service has always been great and efficient. The staff are friendly and accommodating. One of our favs are the epi baguette. I mean, it's just so pretty! and it never makes it home as a whole. We also like the salami that they have on the shelf. The ham and cheese sandwich is to die for but the bread could get a bit tough to chew if you can't wait to go home and have to devour it while driving like me. After many visits in the past, yesterday I decided to try their apricot danish and oh my gosh it was DELICIOUSSSSSS. Enough filling so that you could actually bite onto different layers of texture but not too much to make the flaky and buttery bread turn soggy. We have been so excited about this local bakery outpost and are happy for the close location. We've had a variety (almost everything) from there to share with family and all out recently postpartum friends. I finally made it to Prager! The store front is smaller than I expected. How many items can your really produce to display? The answer, I guess not very many. The selection was minimal which was disappointing but then so was my butter croissant. I was hoping for a fresh tasting butter croissant with an option to heat it. What I ended up with was what tasted like a standard day old croissant. Oh well. I guess I'll have to come back to try something else. If you need some fresh bread options or pastries they might have something. As they say it's "always worth a try". I did randomly try end having some butter cookies from Prager at a friends and those were very tasty. Parking can be slim pickings with the removal of street parking due to outdoor dining. I stopped into Prager Bros. for the first time ever today even though I have been up and down Coast Hwy in Encinitas numerous times before. I found out about their location in Carlsbad near where I work which explains the mystery of the amazing bread smell some mornings. So on my way to the office today I stopped to grab a sandwich for lunch, the spicy italian. I also grabbed a custard filled roll and an olive and cheese flatbread. I had the sandwich for lunch and it was delicious and nicely portioned for $5! It wasn't too heavy and didn't make me feel lethargic. The custard roll I ate in the car on the way to work making a mess but totally worth it. Great spot, check em' out and always support local if you can! read more
