I just saw a vid saying if you're used to a place that never sleeps CO is a place that never sleeps in, and I love this for them! Having just visited my son for a quick weekend trip I can say we were up at 5a Saturday for his 50k and 330a Sunday for my flight boarding out of COS at 420a. I'd say this claim is pretty accurate. I crewed solo for his epic trail run ultra and was desperately ready for an afternoon latte in between the last two aid stations. When I moved the car I knew I could fit in a very quick visit to grab a latte before making it to the finish line. Principal's office is so cute and the bar is such a vibe. I only had time to order my to go latte and be on my way. I can't wait to return. I love that it's in an old school. I'd highly recommend this spot. Principal's Office is located inside a food hall with plenty of seating, which makes it a convenient spot to grab a drink. The setup could use a little work, though. When we visited, they were clearly short-staffed and the line was a bit of a mess, there wasn't a clear system, so you were never quite sure who was up next. That said, once we got our order in, the drinks came out quickly and were really good. Creative, well-made, and worth the short wait. What stood out the most was the staff. Even though they were slammed, the bartenders stayed friendly and kept things moving with a good attitude. It made the experience feel a lot more relaxed than it could have been. Now this is an interesting bar. The place is inside of "Ivywild school" which is an actual school building that was historic and after it closed as a school it was converted into this public space with lots of little shops, restaurants, and bars - including this cool one called principal's office (I learned all this from my Airbnb host in CO springs). I had a mocktail called "the great white buffalo" since I get headaches when I drink after hiking in Colorado, and it was one of the loveliest mocktails ive ever had! I believe it was only $7 as well, very reasonable. The bar itself was HOPPING the day I came, lots of folks were there but the bartenders worked pretty fast. They did keep disappearing though, after they served me and I closed by tab out, they vanished (didn't see them again for about 20 mins, not even to pick up the credit card reader - so didn't get my receipt but that's ok). For such a big place it was so busy I kinda just found a single stool at the bar - good thing I was by myself! There was TONS of parking out front too. I've been going to principal's office regularly over the past three years that I've lived here. Since I'm a teacher, it was a "must" when I first moved, and it has been a favorite ever since. They have amazing cocktails - they are a bit pricey, but honestly worth it. The bartenders are artists, and you can taste the deliberate perfection that they put into every cocktail. They also do have some specials for happy hour if you head over right when school lets out! Of course, I love the educational theme and decor that comes with all of the places at IvyWild. It is full of reminiscent touches of the days it used to be a school. Just like the other places in this old school, you can also order food that is absolutely delicious. I was crushed when they stopped offering fried pickles, but they so have other tasty offerings. Their salads are always refreshing and tasty. There's something really beautiful about this building and the creaky floors make you think about its days housing lots of rambunctious kiddos. 2. The bathrooms. I know, I know, this is an odd comment. But the bathrooms are still painted like this was an old elementary school with math problems and vegetables murals on the wall. It's so whimsical and fun!
