Our son recommended Proof as a good place to go for a breakfast or lunch sandwich served on locally baked breads, so we made it a lunch stop. We don't need a huge lunch so ordered a Chicken Schnitzel which is served on a challah bun. We ordered it plain since we took it home and cut it in half and add condiments to our individual taste. This was very good and half was all either of us needed. The menu of hot sandwiches is very tempting. There are at least 15 offerings from various versions of the chicken schnitzel to ham and cheese to Cubans to jerk and Cajun. They also offer burger varieties as well as build your own. There are plenty of no-charge condiments plus some like fried egg, bacon, grilled onions or peppers, etc for a charge. Our sandwich was made fresh for us and was still nicely hot when we got home to enjoy it. The two of us had a very good sandwich at a great price. If you order the sausage just a heads up it's a little spicy but probably the best tasting breakfast sausage in the outer banks. We got here fairly early Thursday and didn't have to wait long. Weirdly, the young lady at the counter didn't seem to know what all the flavors were, and neither did she know where the backup trays were located. We put in a pretty simple order but had to repeat it several times. Maybe a new employee? In any case, the donuts are very average. They're large and have a lot of filling (if you pay the extra for filled) but they're very greasy and as a result, somewhat bitter. The texture isn't quite right, and I think it may be that they're over crowding the oil and causing the temp to drop and soaking the dough as a result. The icing is just okay. I don't think we will be returning, given the very high prices-- I expect that for pastries but for a greasy donut, not so much. read more

These are the best pastries I've tasted in the Outer Banks. We arrived there before 8am on a Thursday and they were just putting out doughnuts. We tried almost one of each donut/beignet along with regular and chocolate croissants. The yeast donuts were fresh and chewy, and some of the flavors were unique. We were so impressed that we returned for lunch to try their chicken schnitzel sandwiches. Don't miss out on the Sweet and Spicy. So good. The best part and biggest draw, however, was the warm and friendly customer service. The blond lady with the ponytail was so nice and patient with us. And her recommendations were spot on. I really wanted to give a great review.. I ordered a cheese danish, my boyfriend ordered a chocolate croissant, neither had a great taste since it was cold. We weren't asked if we wanted it warmed so I'm not sure if that's an option. The order of French toast sticks also didn't have a great taste. It tasted like it was fried in burnt oil. It did come with both syrup & cream cheese which was nice. My hot chocolate was pretty good, I enjoyed it. My boyfriend didn't enjoy his drink, he said it was bland. Customer service was average. I can't recommend this place enough!! I went here twice during my week stay in Nags Head. It was by far my favorite place we ate at. The first day I went in the morning and got a Sunrise Schnitzel sanwhich, maple donut, Boston cream donut, strawberry donut, and a cheese danish. O M G. Every single thing was to die for. Let me start with the doughnuts- the donut itself has a thin crispy exterior with a fluffy airy interior due to a bunch of tiny air pockets. The dough used for the donuts is top notch. The Boston cream donut filling was so flavorful with a touch of sweetness and not bland like most. The maple donut had walnuts and was probably one of the best if not the best maple donut I've ever had. The schnitzel sandwich was massive. The chicken was juicy and the bun was similar to doughnuts but not the same. It had a thin crunchy exterior but had almost a cross between a croissant and pretzel roll on the interior and bottom. It was delicious. Definitely get the spicy Mayo on it. The CHEESE DANISH was incredible. The pastry dough had the perfect texture. There was a hint of lemon that tied all of the flavors together and was just effin stellar. The second day we went back around 1pm and they were unfortunately almost sold out. We got a couple more donuts and schnitzel sandwiches. I thought the one with schnitzel, tomato, cheese,and spicy Mayo was bomb. I would've loved to have tried the tomato cheese and onion stuffed pretzel as well as the pecan sticky buns!! I wish I lived closer!! Reducing my review for Proof. While the baked goods are still incredible we had some issues that need to be mentioned. First, Google shows the wrong opening time on Tuesdays. According to the shop owner/staff, they do not open until 7:30 on Tuesdays (not 7). Google has it listed as 7am daily (and here on Yelp it says 8??). Even still, both times we visited during our two weeks there, we had to wait over 30 minutes for everything to be ready (on Tuesday we waited an hour total--30 minutes for the real opening and 30 more for the items to be ready). Not a big deal except both times the owner made it feel like it was our fault and we were putting them out, never once apologizing or taking ownership. Another frustration that isn't mentioned anywhere but should be--they limit your order. We tried to order 2 dozen of the same donut and we were told no, that's too big of an order, if we want 2 dozen we have to place a special advance order. I've been to hundreds of bakeries and even worked in the corporate headquarters for a major donut chain and I've never heard of a bakery (big or small) turning down an order of 2 dozen donuts. Seems like that would be a pretty standard order? The owner's rationale was that she needed to save some for later guests. Again, I've never heard of any restaurant telling someone they can't order what they want because they may run out. If a patron comes later and you are out of something, that's their loss not the earlier patron's loss? In the end we just sent a second family member back for more, but what a silly policy and unnecessary hassle! We will be back. Hopefully they will change their policy and work out the kinks. read more

What a hidden gem this bakery is ! It's located not even a block away from the (quack quack) donut shop. Don't wait in line there !! Walk down to Proof Bakery. You won't see a sign on the store front but there is a sign at the entrance. We had the most delicious sticky cinnamon bun that I have ever eaten. We also had a ham pretzel flat bread. Also delicious. The owner was a genuine small business owner. I wish we lived closer because we would be frequent visitors. The donuts weren't quite done when we stopped by. Holy moly!!! The savory sweet wall of amazing smells when you walk in. Wow. A great bakery, watched folks stock up on pretzel bread, herby focaccia, and little stuffed pretzel melty sandwich deals (Dad kept asking his kid if he was sure he didn't want one, ordered two anyway...clearly not going to share later.) The doughnuts and danishes were amazing. The Boston Crème was absolutely delicious. The doughnut was light and airy, but with just enough bite to the dough, the crème was lusciously creamy and lightly sweet, the chocolate delicious. Perfect. It all pales in comparison to the sandwiches. The buns are a work of art. A deep brown crust that's light and soft on the tooth forms a high dome of lightly buttery richness on the verge of croissantiness but still comfortingly tender like a soft white bread. I had the sweet and spicy chicken schnitzel. Amazing. A bit of a surprising level of spice that builds and builds as you devour the piping hot, perfectly crispy chicken. A perfect piece of flattened and breaded fried chicken, juicy, tender, and bursting with juices at every bite. The breading is substantial, well seasoned, and deliciously light and crispy. Piled with grilled onions dripping with the sweet and spicy sauce that made me start to sweat by half way through. A spectacular sandwich on every level. My son had the Cajun chicken sandwich and insisted his was better! I'm planning on being at the door when they open in the morning for doughnuts and breakfast sandwiches. You better believe I'm eating lunch here tomorrow. Only down side is no indoor seating and they close after lunch! Proof has a to-go, storefront vibe, not a sit down restaurant. I was looking forward to stopping by here with the family as we were heading back home from our vacation. We came by on a Saturday at around 9 am to a few selections of baked goods. My wife wanted a cinnamon roll but they said it would be 20 minutes though we could see them sitting out and baked they just needed icing. So we opted for some donuts and a sticky bun but what I wanted to try some of their baked goods with meats and cheeses that are on their website, but there was none.
