The burger was fantastic. I opted for house fries as my side. The fries were good, but in general, the meal could have been served at a hotter temperature, which would have made it all the better. They had some pretty tasty beer on tap. Service was good. I liked the atmosphere. I can't give it more stars because the food was not executed well. This is disappointing because it seemed like they had good ideas. We got the fried pickles to start...breading was falling off. They were probably the worst fried pickles I've ever had. The sauce it came with was really odd...tasted almost bad (expired bad). My husband ordered a burger but it was so stacked with stuff he couldn't really enjoy it. It was falling apart...just messy. I got one of the fish taco options. The flavors were pretty good but why would you serve something thats delicately fried with a saucy topping?? I enjoy Proof for a business lunch. Post plandemic and avoidable inflation have meant significant cost increases and diminished staffing. Ambience is nice. The service was very slow. Ordered the Queso and Chips. Queso was great but came with barely a handful of chips that couldn't come close to finishing off the queso. The waitress asked if we would like more chips and then charged us for them. I ordered the Pork Belly tacos and asked for fries as a side. After waiting for what seemed like forever, my tacos came out cold. Fried, cold tortillas. Instead of replacing my side of chips with fries as requested, I received both and had to pay additional for the fries. I would post the picture of every server standing at the register like it was an ATM but I'm not shaming people. Only picture I took. The bartender was super alert and had to tell the servers how to manager the tables. Either they were all new or it was a way off night. I think every time we locked eyes I saw my server, other than that she was hard to find. I had a burger and a side Cesar salad. The salad had some strange mayo based dressing. I took an emulsions class. This is not Cesar dressing. I would have thought hand formed patty but nope. And what is up with slathering the outside of the burger in butter? The one thing that I love about traveling is when I find unexpected food that blows my mind! I'm staying at a low rent area hotel and expected to find similar type food. I jumped on Yelp looking for something other than a burger or Mexican ( lots and lots of Mexican restaurants out here!). Low and behold I stumbled upon a gem! This place has a great vibe, good beer, and very polite and attentive staff. The fist thing I saw when I looked it up was the "firecracker salmon" that seemed to be the most popular dish and for good reason. It's very rare that I find a dish that checks all of the boxes, I love spicy/savory/sweet combinations especially if they don't try too hard! The sauce was spicy, the coconut rice was the perfect sweet, but the salmon with the crispy skin stole the show! We took a chance on Proof for family dinner while celebrating my mom's birthday a few weeks ago. We're from Yakima, but have gone through just about all the nice restaurants there and decided to see what Tri-Cities had to offer. Unfortunately, this restaurant fell well below my expectations due to poor service. We arrived on a weekday around 6pm without a reservation. We were told by the hostess that it would be about a 20 minute wait. It ended up being a 50 minute wait, and had I known it would be that long I would have taken the family somewhere else. We were also the only people waiting for a table in that entire 50 minutes, so I gathered pretty quickly that the food service must be slow for no one to be leaving the restaurant for that long, which ended up being accurate. When we finally were seated, we were put in a round booth with backing so high that we couldn't see anything. Not out a window, not the rest of the restaurant. Like, really, nothing. Our only view was of the door that we had entered the restaurant from that was about 10 feet away. This was also bad because we could never get the waitress's attention when we needed anything. We felt completely isolated, which is NOT what we were going for by choosing this place. Already off to a bad start, things got worse when I realized that the menus we had been handed were not the same as the menu listed on their website. Most dishes were completely different. I had chosen this restaurant because my mom had wanted a specific dish from the online menu, and it wasn't on the menus we received, so they must not update their website. The pasta dish that my mom ordered seriously looked like a pile of barf. I tried it and it had very little flavor, just an overwhelming amount of black pepper. We also ordered the truffle fries, which had absolutely NO truffle flavor, and the guacamole and chips, which while good, was a tiny amount for $9. The rest of us got burgers, which were pretty mediocre, other than the sundries tomatoes on them. My mom, who usually asks for a ton of photos when we're all together, didn't even ask for one because she was so disappointed with the whole experience. The waitress took about 15 minutes to bring my mom coffee even though she was told it would only be 5. When I asked for the waitress to bring another orange juice for my cousin, she rudely said "It's by the glass, not refills." Yeah, I know. Can you please bring me what I'm asking for? Jeesh. Also the tap water that they bring everyone tastes overwhelmingly of chemicals. Overall, the food was not good enough to make me want to come back, and the service was bad enough that I don't even think I'll try coming back to Tri-Cities for ANY restaurant. read more

We went here for years and loved it. We last were here in October 2022 for our 10 year wedding anniversary. The waiter was an idiot. He took our drink orders then they were served to the table next to us, he took our food order, or so we thought. We waited for at least an hour and still no food. We asked about it and he said, not sure what happened. Next thing I see is him FINALLY putting in our food order. Worst place ever! Food is mediocre at best and the service is terrible. I should preface this review by stating I've been to Proof on 3 separate occasions. Each of these times have been quite a few months apart starting back from near their grand opening. During this time, Proof has seen different chefs and head bartenders. It is disheartening to say that each experience here has been more underwhelming than the last. The first two occasions at Proof included several sub par cocktails. Such as finding many ice chips in tasteless cocktails to having a whiskey sour taste more tart than a Minute Maid, tonight marked an amalgamation of both extensive wait times pared with mediocre drinks and food. We ordered our first cocktails and were served in a timely manner. The Manhattan was overly diluted and the Sour way too tart, we moved on to beers and put in an order for food. Now this is a Monday night, and we arrived before any real crowds had shown up. We were still waiting for almost an hour before our burgers and salads made their way to our table. Our waiter checked on us regularly and showed composure, informed us that the staff worked their way through the dinner rush and our ticket was next in line. This was a good reassurance at first, although this lasted more than half an hour. The Proof Burger actually was decadent and cooked nicely. The quinoa arugula salad was barebones and dry, which needed more dressing it so lacked. The stacked nachos were cold by the time they reached our table. The salmon was dry but still over saturated in dressing. Overall, our past experiences with Proof and the great service from the serving staff have been tainted by long wait times, bland cocktails not worthy of their price points, and underwhelming dishes. I wanted to like Proof more than anything; a local business stepping up their appealing aesthetic with locally sourced brews, signature cocktails, and a lively atmosphere. It pains me greatly to say I will not be returning to this establishment. read more
