Damn good Caprese salad & Caesar salad, crispy, cold, fresh & nice shreds of parmesan cheese. The Ruby pizza was fantastic! The pizza dough was crispy & wonderfully prepared! The server, (Carly) was not only absolutely beautiful, but was kind and very attentive! I love this place! read more

I have mixed feelings about this place, while I like it overall I probably wouldn't do it again. Everything tasted pretty good and seemed fresh, however I am not the biggest fan of the thin crust they have for there pizzas. I ordered take out so I wouldn't be able to comment on the actual restaurant or service, but it looked nice when I stopped by to get the pizza and the people were fairly nice. They do have a pretty good location and probably get a good amount of business from the stadium nearby so I imagine they follow customer reviews and comments. read more

My 2nd visit to Proto's (first was to the Lafayette location and the pizza was very dry) but this visit was most yummy. Can't remember what they call it but we had a small pizza with kalamata olives, feta, artichokes and tomatoes if I remember correctly. MMMM and was just the right amount for two petite ladies to finish and not be too full. The place is tiny for how busy it is and there is very little room to wait; you're pretty much standing at someones table and trying to avoid eye contact while you wait. Proto's participates in benefit nights for Greenwood Animal Rehab so check to see when they are doing it next and encourage them to do it often! read more

They always close early like an hour or so. Pizza is better then delivery. Service is ok. Pretty hit or miss.

This is our "go to" place for pizza. The crust is super thin and delicious. Plus our daughter has celiac and she loves their gluten free crust. Staff are all very nice. And if you are so inclined you can go next door to the Tap House and they'll delver your order there. read more

The pizza here has a really unique taste that I really enjoy. Their red sauce is also something special as they make it in house and bake it in their own brick oven. I like the way the crust crisps up. This place also has some exceptional service as well so don't miss it! read more

Pretty good pizza! It reminds me of the second best pizza from my hometown in Illinois. I'll be coming back here when I get homesick. The pizza is thin crust but foldable like NY style and the toppings were plentiful. The only thing is that we ordered two mediums but they looked more like two smalls. Great pizzas, salads, desserts. Been coming to Protos for years (first in Lafayette, then Boulder, now this newest location), I almost always get a variation of The Atomica and a Caesar salad (though most everything else I have tried is good too!). A little pricier than I would like, but you can tell they use more expensive/better quality toppings than your typical pizza joint. Seating is a little overly clustered (you can usually hear your neighbor's conversation) but not enough of a deal breaker to skip going there. Kim is the best staff member we have encountered almost anywhere and is very helpful as suggesting new options if you're feeling like branching out. Love the thin crust (less carbs!) and the cheese and sauce they use. Have tried both the cannoli and cheesecake for dessert - both are excellent. Will continue to go here for many more years to come! read more

I think Proto's will become one of my new secret hideouts. The pizza is good - very good. Thin crust with a unique array of toppings, all of which are fresh and flavorful. The decor is nice, but not special. Feels like a pizzeria, which it is. If you're going on a night when there is an event at the First Bank Center, it can be quite crowded... but most nights it's actually just a little bit too dead for comfort. Arista is a community that has yet to take root, so Proto's is this little outpost of a pizzeria waiting for all of the condos to be sold and commercial space to be leased. When that happens, it might really start hoppin'... but for now, it's good pizza with okay service in an underperforming location. Great place for a weekend date because it's not crowded (unless there is a show), the food is really good and the prices are reasonable. Enjoy! read more

Pizza is OK, not great. Cons: Undercooked, not enough cheese or sauce, overpriced!! Pros: interesting toppings! I would give it another shot and maybe ask for extra cheese but I hate to do that bc the pizza is already so expensive - will update review if I do! Disclaimer: I was born an east coaster (spoiled pizza snob) and have been to some of the best pizza places in the USA. I would say this definitely falls short compared to that. Had dinner with a friend here on Thursday night. Service was good and the food was delicious. We ordered two small pizzas, one pesto pie (to which I requested the addition of a handful of arugula after baked), and one Proto Pie. Also had Affogato al Cafe and Traditional Italian Cannoli for dessert. Martini ordered was massive. Nice discovery and will be back. Good place for casual dinner with family and/or friends. read more

LOVE their crispy thin crust style pizza! But my fav find here is the "pillow"! Panninni comes in two sizes and comes out quick! Dip in oil and balsamic vinegar! Clam pizza is excellent so is the Cesar salad with anchovies. All very fresh ingredients. Bonus: kitchen is in plain view and the kids love to watch the spinners. read more

Everything is just ok... If you're starving, it will do. This is definitely not the best pizza you will have. Unless you like a thin cracker-like crust then you might love it. But even then, the ingredients seem sub par. read more

Its different but familiar at the same time. They have different takes on pizza then you'll find most any where. Clam Pizza not that common in Colorado gotta say, the pizza its self isn't super greasy and it's a good size fr the price, great sauce and its just a clean taste. The store is a little place with a short bar but they are not lacking on drinks nor elbow room, plus if you really need a different kind of beer go next door to the keg house, or just take your pizza with you. Try it out start, start with cheese if you must or jump right in to The Sour Kraut(I prefer The Roman). read more

Premium Pizza that is made with care, top notch ingredients, and baked in a fire oven. It has a great atmosphere with a very clean simple decor. It has a bar with some of tasty Colorado beers. The staff has always been top notch. I've never been disappointed here. They have some deserts too. read more

Stopped by for a quick bite before 8:30pm and was rudely greeted by a server saying "we're closed". It was before 8:30pm. When I pointed this out she said "go ahead then". I said that I would make things quick. Btw- the restaurant was fairly full still at that time. I ordered a beer and she proceeded to slam the beer on the table and asked if I'd made a decision on a pizza. I promptly ordered and a similar serving approach occurred with the arrival of the pizza and second beer (not so subtly slamming the items on the table). While I shouldn't have left any tip, I did leave just under 10% in the hopes that she would get the message that her attitude and service level was appalling. Clearly, the hiring of such a non-service oriented individual as well as extremely poor training or training that sticks, is not a great business practice. I will not be returning to this establishment anytime soon. Leave the bad attitude at home and grow up!! As a business, never underestimate the cost of acquiring and keeping a customer. read more

Great pizza! Huge salads. Prices a little high and need some air conditioning.

The pizza here had good flavor, though it was a tad bit on the expensive side for what you get. Most of the pizzas are specialty pizzas, so if you want a classic pizza (say, pepperoni) you will have to custom order it. The waitress was clinical, but nice. The pizza was served on a thin crust--I did not see an option for a thick crust--and mine was served with a blackened and burnt-tasting thin crust, and a glance at the other small pizzas near me indicated all the small pizzas were served burnt. I ordered the small "hulu", which is basically a hawaiian pizza, and added jalapenos. It came with seven jalepeno slices, which seems skimpy. Because it is thin crust, the small size is hardly filling--you may want to put up the $15 for a medium if you decide to eat here. The room has fairly tight seating, and there are no sound suppressing features, meaning you will have to talk loud to speak over the commotion in the room. It feels like talking at a sports game. read more

The gluten free pizza crust is fantastic and even my husband and friend who are not gluten-intolerant enjoyed it. Nice place. Clean bathrooms. Friendly staff. I had the Caesar salad. Had real anchovies, which I like. The salad was light and not to overpowering. The flavor wasn't as vibrant as would have hoped though. They use crust on top instead of the usual croutons. I prefer croutons. Had The Roman pizza. - crust was perfectly crispy. The pizza was tasty. Overall, great pie. I imagine the other pizzas, from the looks of their menu would be good choices too. read more

I'm so disappointed in this place, the pizzas are tiny with barely any toppings and seriously overpriced. I paid $10 for a small pizza that wasn't even the size of a salad plate. Now let's talk about the $6 pint beers. Really? $6? I can walk next door or across the street and get a better beer at a lower price. Next, service, I walked in with maybe 3 tables filled, only one hadn't ordered. I wait 30 minutes for my pizza, disappointing when I planned 30 minutes total for lunch. Lastly, I work in the office building next door and all of the restaurants and businesses in our area offer a discount if you work in the area. Not only do they not offer a discount, they only offer local residents a discount on Sunday's. This place only sees $$$ and doesn't care about the customer. No worries Porto's, I'll be visiting the other restaurants that have better food, better prices, and definitely better customer service. read more

Proto's in Broomfield, Yeah!!... That was my first thought when I was heading to a Dave Matthews concert with my Brother visiting from NH. My past experiences with Protos in Boulder, Louisville and Denver have been fantastic! But, this was far from the same staff, service or food. First.. you would think they would have a schedule of local events and be staffed for a busier night with the concerts right down the street - wrong! The young gal trying to take names was a joke.. way to many people, no seats and she was just confused as ever. Not enough bar tenders, and the people trying to serve food - well, I don't think they showed up that night? You would think they would only seat people when all the guest are there - wrong! The same young gal was giving away 4-6 top tables to 2 people - not eating yet, waiting for friends to show.. as they casually sipped on a beer each. ???? No way to make money with that. We asked 4-5 times if we can have a part of the table to order food and eat?? After 2 hours of standing there with our wine. Um?? The answer was no. Finally we decided to order pizza to go and see if we would get it to stand in a corner and eat. We had to get our own menu, go to the back by the ovens and grab a guy cooking to put the order in for us. I was very excited to see a Gluten free crust on the menu, so we ordered a large.. saying we were VERY hungry. Well, don't order a large for two people on GF crust.. we got something that looked like a 10" personal pizza.. and I can't remember the cost.. but it was outrageous. We ordered a second as soon as it showed up, because we knew in 4 bites it would be gone. The bill for our 2 GF crust pizzas and 2 drinks each was somewhere around $70+?? (with the happy hour deal on drinks - so is that a $25 pie and $5 tap beer on happy hour??). The show was starting.. so we paid and left. No I didn't tip - why would I? Sorry.. I would have disputed the bill if I had time. Anyway.. I will not be going back there.. maybe will try Boulder again but just found a new pizza joint in Louisville - Lucky Pie Pizza! I'll be reviewing that next! My thoughts.. if you are heading to a show in Broomfield, stop in Louisville for dinner, then head to the show! read more

Not bad pizza. It was a little pricey for what you got but there is not much out there other than that so you are kinda captive. Its still was worth it and the service was excellent! Two of us shared a medium pizza and had two glasses of wine and it was around $30.00. The pizza is really thin like cracker crust so if you dont like that you wont like the pizza. read more

For the GLUTEN FREE eaters BEWARE. They do offer a gluten free crust but the prep area is not separate and CROSS CONTAMINATION is very likely. You can see for yourself. They roll out the regular crust and dust it with flour and stretch it out, near by where the toppings are added. From what I can see it does not look like they use a separate pizza cutter. I was excited to see they offer gluten free pizza but disappointed with the handling of the product. read more

As there isn't alot of non-chain restaurants in the area, this is a great place to go. The fact that they will let you order from the keg house next door and then deliver to your table is amazing! We used to live in Westminster, so I was able to go here whenever I wanted...now that we have moved to Littleton, I am bummed I have to go downtown denver to get my fix. Their Caprese Salad is SO good. They reduce the balsamic down so its not so liquid, and its sweet. FANTASTIC. I ALWAYS get the hula then add some cilantro. It also is AWESOME. There is something about the crust (I'm usually not a crust girl) that I love. My boyfriend always gets the low-rider and LOVES it. So happy my hair dresser at Salon Cossabella told me about it. Tried to eat here. Put name on list as it was busy, was told 20 minutes. So we sit down and wait for 10, as we see a 4-top emptying. Two people walk in, sit at the table, and the server just hands them menus. Then tries to explain that the next table, which was still ordering drinks, would be ready "soon". Would give zero stars if I could. Needless to say, they'll never be getting my business. read more
