Caesar salad was very fresh although I knocked a star off because if your going to put pieces of actual anchovies on the salad (not including the Caesar dressing) the expectation is that there will be more then 1 little piece. We were excited too try this place. We hoped it would be like Pizzeria Locale. It was not. At all. We got the Cesar salad. The lettuce was very fresh but wow, the dressing was so bland. It was not worth chewing, I threw it in the trash. We tried two pizzas- the Marguerita and Goomba. Both were epic pizza failures. Wow. Just... The Goomba was soooo salty. I've had plenty of prosciutto pizzas before and never had one so salty. The Marguerita was so dry that nearly half the pizza was completely dry. No sauce. No cheese. Just dry crust. We were traveling through the area and staying at the local Aloft hotel. They recommended Proto's and we're so glad we checked them out. We got there at an early hour (happy hour!) and ordered beer and wine. We opted for the pizza Margareta (sp?) and couldn't have been happier. It's a great neighborhood place and the person who served us was cheerful and happy to be there. We sit at the bar. We always try to sit at the bar. Fair pizza, good service. I dropped in prior to a concert at 1st Bank. The server was super nice but steered me wrong. You see I was meeting my son but he was running late. So I asked how long for a pizza. She looked at the pizza line and quickly said 30 minutes. Knowing wheat time the show started, and when my sun would arrive, I ordered. Of course, as my luck would have it, the pizza was out in 10 minutes flat. Don't get me wrong, she was apologetic and kept it warm until he arrived, but you have to know how long things take. If I had written this review a few months ago, I would have given it 5 stars. Today I sadly have to give one star. I can say that I have now been to this establishment 4 times and each time it has been worse. This time it was compounded by a younger couple bringing in 4 or 5 young boys with them and all of them obnoxious as hell. One kept trying to find a way to get into my wife's purse. These folks go out and ruin other peoples peaceful eating with no regret. Sad times. Now back to for sure why one star. My wife is now sick throwing up and I am sure got food poisoning. I also feel not very good about what I ate. The pizza was half burnt, half raw. We were also there with my parents and they were occupying one side of the table and I and my wife the other side. The server put both pizzas where only my parents could access them. Making it awkward at best to get pieces of our pizza to our plates. I completely could not reach it and had to bother my mother to get a piece for me. Here is another fop ah, they didn't put out the traditional Parmesan cheese shaker and red pepper shaker. WTF??? The only thing that didn't come out screwed up was the beer and that was in a bottle already. I don't feel up to giving every detail that went wrong but I can say that every last one of them were easily fixable. Maybe a visit from the health department would kick the owners ass into higher gear and get things fixed up better but in the mean time you won't see me in this pizzeria because later you will have diarrhea. non va bene! read more

We ordered pizza for take-out given the current situations, but man do I look forward to eating on their patio. Not only is their location great, but the pizza and the staff were incredible. Truly some of the best pizza I have had in Colorado. They certainly know how to make Neapolitan pizza. I lived in Switzerland/Italy for a short while, and this tastes just as close to the real deal. We have been here several times since its in our neighborhood, and its always been fairly decent but last night we went, ordered the Margharita pizza, and it was cold, literally had no flavor, and wasn't cooked well at all, literally doughy. we also ordered the simple salad which we normally like but it had barely any dressing and barely any cheese. We had to ask for silverware, we asked for water which we never got. We went at 8:15 and they close at 9:00, we felt rushed and were asked at 5 till 9:00 if we could please close out our tab. So 1 salad, 1 cheese pizza and 2 cocktails was $72 with tip. NOT WORTH IT! we were so disappointed we won't be going back. read more

Living next door I was so happy to see Proto's open. If you haven't tried their pizzas you really are missing out. Some of my favorites are the The Atomica Pie it has Mozzarella, tomato sauce, garlic, oregano, then sprinkled with crushed red pepper, black olives, and topped with Italian sausage. Also The Ruby Pie it has Pesto, mozzarella, feta cheese, kalamata olives, artichoke hearts. They make their thin pizza's by hand right in front of you. The only reason I took a star away is due to the fact that it's a little spendy but truly worth the extra coin. For Example for two people eating two medium pizza's, four beers, and gelato (not to sound like rachel ray) with tax and tip $66.00. If you are unsure about blowing the budget for one of these pies grab one to go a medium will run you around $13. I have never been disappointed with the food or service. read more

3.5 stars really, but they get an extra boost because the last time I ate here before I came back to visit was for my going away party and they did a great job for such a large party that wanted individual checks. Love the tomato and mozzarella salad. Personally my favorite pizza here is the Goombah, but this last time I had the Low rider, It was good and fresh. I love the cannoli's here- they don't pre-fill the shells keeping them nice and crispy, and they have italian style cream soda. As far as pizza goes, I'm a pretty tough critic. I can appreciate all kinds of pizzas. What is the intention of the place? Are they trying to shamelessly pile on the cheese? Is this a deep dish place or thin crust? Are they going for an "authentic" Neapolitan style? Or good ol' NY style slices that require folding? The service was friendly and excellent at Proto's. The server gave us good suggestions and was very nice. I was excited to try the Atomica Pizza and the Goombah. Toppings aside, the crust was a disappointment to me. This was cracker, cracker thin crust. I like thin crust, but I like my pizza to have some doughy chew to it as well. I don't want the edges to be crispy, I want them to have a crunch, but also some gluteny, proteiny, chewy goodness. This pizza was too crispy for my liking. I think it is a good offering compared to other places in the area and the pricing was reasonable, but to claim traditional "Neapolitan" style pizza is incorrect. read more

We came here for dinner tonight and we're quite impressed. We started with a glass of the house red wine which was surprisingly good for a basic house red wine. He had the Caesar salad without the anchovies which apparently come as a single fish on top of the salad & I had the basic mixed salad. We both agreed the salads were very good but, they are just salads after all and it's a little difficult to screw those up. With the salads we also had some of their basic bread. It was fresh, warm and yummy, but I don't remember what it was called. Not your typical loaf of bread and butter, more like a warmed round of pizza dough. We had the low rider pizza for dinner. I was skeptical when we ordered but quickly I learned how wrong I was. The honey tomato chipotle sauce was much better than I had anticipated and paired with the pineapple and cilantro it may have been one of the better pizzas I have ever had. We opted to split the tiramisu for dessert and let me tell you, they will have this in heaven. The marscapone cream was so sick and so creamy it was to die for. I don't even really remember what the lady fingers tasted like, I just wanted more cream. I mean seriously, if given the opportunity I might commit tiramisu suicide by only eating this everyday for the rest of my life and need to be removed from my house with a crane. Great place to get some food before a show at 1st Bank Center! Get here early though, as the place will fill up. Arriving early also allows you to partake of happy hour which lasts until 6. I believe happy hour gave you $1 off on all beer. And, they had Left Hand Milk Stout, so I was happy. I selected the Low Rider individual pizza for my meal and it was super tasty. It has chipotle sauce, mozzerella, bacon, pineapple, and cilantro. It was sized just right: enough to fill me up, but small enough I could eat the whole thing without feeling guilty. Our server was awesome. The place really filled up after we arrived, but she still checked on us in a timely manner, including ensuring our late-arriving guests' happy hour orders got in just in time. Great Neapolitan pizza. The crust is thin but not burnt or crunchy. It's essentially Brooklyn style pizza but better in my honest opinion. I had the atomic which has olives and sausage and other toppings. It was amazing. They use a special oven to bake their pizza and it comes out amazing. If you are close to the 1st Bank Centers then I would say stop in and give this place a shot. The food was good. The staff was attentive to what I needed and overall a nice restaurant. Pricing wasn't bad and worth the pizza. The pizza and dough could use some seasoning but overall a good little place to stop. I would give this pizza place a 3 and 1/2 stars. The restaurant was a little warm do to a/c issues but the temp still wasn't that bad. And if you needed to they do have patio seating. read more

Great pizza like the Longmont location. Service was on point when we went. We were the first people there for dinner before the restaurant filled up. Cocktail we had was deliciously smooth. If you're new to Proto's be careful because you'll be infatuated with their Neapolitan style pizza after the first bite. Also, they accommodated my gluten free needs appropriately. Only thing is, I wish they asked if my gluten free request was due to an allergy (because it is) and took extra precautions to minimize cross-contamination. Highly recommend it and have since my first visit in 2002 at their Longmont location. read more
