I'm in love with their Bianca pizza. The sweet beet flavor pairs perfectly with what tasted like a bechamel base. I've never had melted Parmesan on pizza before, and now I wish I could go back in time and add it to everything. It's great! I have to say, their crust is perfection. It's got a nice char and is chewy. Obviously high quality food from this cart: I'm only docking a star because there wasn't anything to distinguish it from similar pizzas around Portland. When you are a food cart you need to do something to make yourself stand out. Particularly when you are surrounded by multiple other food carts. How about a brick oven for Pizza? Yup that does it. They offer a set menu mainly looking for pizza for one or two orders. I believe the perfect meal for a date night here is a pizza and their ceaser salad. Their ingredients are fresh and tasty. It takes a lot to wine over as a food cart this place did it. The atmosphere probably bolstered them to another star. Multiple times my crust has been on the burnt side but the pizza itself was yummy. The salads are always healthy portions. They serve a unique Portland soda but again the full selection of flavors always seems to be out. I guess you take your chances at a cart and get what you get. read more

You are presented with a great oven, friendly staff, solid drink selection, great pizza box art!, and a great pie. 14" or so it looked, maybe im adding a few extra inches... Second, there's no upcharge for substituting vegan cheeeez or vegan sausage. No one else does this! My jam is their paper-thin pepperoni pie. I just had the margherita and it was dope. I've been to Pyro Pizza, in the Cartopia food cart pod, probably 10-15 times over the years and have consistently liked it. The size is perfect for one person and not overwhelmed with ingredients. My choice has always been the fennel sausage pizza. The sausage comes in small chunks, the way I like it (that's how it was in Chicago where I grew up), the tomato sauce is just the right amount for me (I don't like a lot of tomato sauce), and the additions of thinly sliced red onion plus basil round out the toppings in a nice way. I also like the dough. It's cooked in a wood fire oven so sometimes there are charred areas (which I also like), and sometimes the crust is on the thin side. Note to younger readers: the original Chicago pizza (think 1950's or so) was thin crust not that thick crust, deep dish stuff mostly liked by tourists and new residents. Anyway, overall I've found it to be good pizza. Not great so four stars. The sausage isn't the best I've ever had (Apizza Scholls better) and like one other review noted, the dough can be a little bland at times. The service has always been very good. In fact, a nearby food cart, Chicken and Guns, has driven me away more than once because of their poor (sometimes abominable) service. Since I'm still hungry, I've gone over to Pyro Pizza to get very good pizza at a good price with good service. Pyro is no longer a "back-up" and I'll return there many more times in the future. read more

The pizzas are always fresh and you can taste the great quality of them. We ordered the margherita and a pepperoni with sausage pizza. The pizzas did not have that heavy thick taste to them at all. Who'd think that you could find superb pizza in a wood food truck with a 800 degree Neopolitan style oven in the back? Only in Portland... That said, Pyro Pizza is great. I was very impressed with the crust - chewy, well fermented flavor with just enough acrid char to balance the sweet tomato sauce, full flavored cheese and earthy fennel sausage on my pie. Some sweet basil for garnish and you have as complete a pie as you will find anywhere. Price is very reasonable and the pie is a good size too. And since it is Neopolitan pizza, is made fresh and within a few minutes, you have blistered perfection. It's in a great food pod and eating it by the fire definitely evokes some good memories! read more

Ten years after I last reviewed it this cart is still going strong. Hooray! I love that it is still a cart (rather than moved to a building as successful carts seem to do). And even more I love that the pizza is still delicious -- maybe even better than it used to be. I brought home an Eggplant Parmesan special the other day. I asked the server about how the eggplant was prepared, and he took the time to actually show me the chunked, precooked eggplant that would go onto the pizza. (I love eggplant, but it can be dicey to order in a restaurant because it's easy to undercook or overcook it.) Anyway, the eggplant pie was great, but I'm not necessarily endorsing it as the one you should order -- Pyro's crusts are just terrific, thin in the center with a fat edge for holding onto, and a nice char. I rate this place in the top handful of Portland pizzerias (and that's saying a lot since Portland is now officially the best pizza city in the country) and one that doesn't get a lot of attention. read more

What's not to like about an excellent wood fired pizza....the char on the pizza is what you want. I particularly love their Quattro formaggi which is all cheese with no sauce...pro tip...add sliced garlic to take it to another level! Love that this food cart has an oven that produces a delicious thin crust pizza! We couldn't decided on one type of pizza...but they were very accommodating and allowed us to have 1/2 Margherita and 1/2 Fennel Italian Sausage! Both were equally delicious. The crust was thin but not soggy and the sauce was flavourful! We LOVED the refillable Craft Soda machine! The flavours were fantastic...fresh, creative and summery. This is easily the best pizza they offer (and yes, the wood-fired oven usually toasts the crust perfectly, though if you really don't want any black, make sure you tell them to be gentle on the toasting). I always love coming to cartopia! There's a few things here that are always a must-have and amongst that list is Pyro Pizza. The sitting area around the food carts are suited for any type of weather. With fire pits all around and a tent during the winter and in the summer they have a screen displayed for various movies. To list some of my favorite pizzas from here, I just have to start with the margherita pizza with added pepperoni, followed by the fennel sausage, then quattro formaggi. Don't skip out on the handmade sodas, don't forget to sample a little bit of each one before finally deciding. Pyros has been a go to for our family for a while now. It's quick and you get too quality! I have some pretty picky family memebers and they have always been really accommodating with changes that I have asked for! The pod is great too and has good seating if you want to sit there! Only wish I have was that they had a good website and a way to order before getting there...I understand it takes very little time to make the pizza but if there is a long line it might take a little longer, so being able to order ahead would be nice, but I understand why they do it the way they do! I finally found real Italian pizza, yay!!! So happy we stopped at this strange place, Cartopia. Actually my son dragged me in because he wanted dinner. And I agreed to try a cart, again. I have only been to a few here in Portland because I like a bit of luxury when I'm eating -- like a chair and a table and some service, and the dishes washed. When you walk into Cartopia, you are greeted by a Creperie on your left-hand side and an American type burger place on your right. The center has a tent which covers Italian style wooden tables, with the long benches. Cartopia's other carts included Egyptian, Mexican, Poutine and others. Because the weather was nice we enjoyed sitting outside and we did not have to worry about rain at the uncovered tables. In front of Pyro Pizza there is an open fire pit, a nice place to hang out when it gets colder at night (smokers alert!). My son got the pepperoni pizza and I tried the arugula mushroom version. The crust was fluffy, great dough taste, and a perfect thickness. You could tell it was cooked in a woodfired oven, it had that beautiful black and crispy edge. The sauce was good, not too much garlic, and the arugalu was young enough to impart that perfect bitter accompaniment. The most fun thing for me was the soda machine! It had all types of soda from pomegranate mint to basil lime to salsaparilla (which was an interesting taste). I tried all of them, for only three dollars! My favorite was the basil lime fizzy lemonade. I definitely recommend trying Cartopia! read more

We opted for the Fennel Sausage and it did not disappoint. The crust was chewy and had the perfect amount of thickness. It was the perfect size to share and still be hungry enough to try something from the other trucks. As much as the pizza was great, it reminded me a lot of Serious Pie in Seattle. Delicious, but not unique to its own. The only thing docking a star is the service. The dude did not want to be there at all. Most people prefer slices due to simplicity in eating but Pyro's does no wrong with 12' pies in a wood fired oven. The fennel sausage was one delicious pie; excellent sauce:cheese ratio with a nice amount of sausage, basil, & onions. The smokiness of the oven puts that finishing touch making this pizza seem like you ordered it from a sit down restaurant instead of a food cart. Looks like carts/trucks don't need to do just slices for pizza; they can handle pies too. But can they make them as delicious as Pyro's? One can only hope! read more

I ordered the Fennel Sausage Pizza and my fiancée ordered the Pepperoni. Both were really delicious. Everything about it was solid, from the cheese, to the sauce, to the crust, and to the toppings. My first visit last year was three stars, but they've improved since then. My boys aren't a fan of charred crust so it can be hit-or-miss for younger diners. On my first visit, the pizza was overcooked, but they seem to have found a better balance on my recent visits. For the adult pizza lover, it is tasty Italian-style wood-fired pizza. The thin crust pies tend to be a little messy with the toppings sliding into the center, so it is a gooey dining experience. I like that you can get a basic 6-slice cheese pizza for $6 with the more interesting varieties for a dollar or two more. My favorites have been the white truffle and margherita pies.
