    tonkotsu ramen
    Billy L.

I love ramen and hoped to find a good place near my house. The ramen here is a build-your-own bowl. I picked tonkotsu broth (pork base), chashu, and spicy. There's also a variety of toppings included, but some they charge extra. The ramen is decent, but nothing mind-blown. I've had good ramen in the Bay Area, SoCal, and Japan. I recommend Ramen Nagi or HiroNori Craft Ramen in the South Bay if you want good ramen.

I used to go to Ramen 101 in San Leandro and thought I'd give this location a try. Walking in, you can order at the kiosk or at the counter then choose a spot to sit--no frills. Gyoza: 3/5 - Not bad, very crispy. My son loved it, he ate it all up. I asked for scissors to cut them and they were very accommodating. Black garlic ramen: 4/5 - Great flavor and portion size. Mildly spicy, which I liked and it wasn't over powering. Parking is fairly easy but depending on the time, it can be pretty busy.

Tonkotsu ramen: Noodles dont feel high quality. Its unslurpable, when I pick it up with chopsticks, it feels plastic-ey and looks plastic-ey. The noodles looks like they repel each other. They are slightly bigger than instant ramen noodles. The noodles also dont take in flavor that well, doesnt taste bland but the noodles lack flavor, I have to eat the noodles then sip some soup to get flavor. The chashu is pretty good, its moist, meaty, the right size, I like the sauce they add on to it but the pieces with sauce also taste good in the broth. Still not the best chashu I've had Soft boiled egg is alright, doesnt look that pretty, yolk is cooked a lil too much, the egg gets the job done. Even tho soft boiled egg is usually my favorite in a ramen dish, this one wasnt. The bamboo is standard, lots of flavor, crunchy while being chewy too. I rate this highly Naruto pieces also taste good, they dont have the naruto swirl but good texture and flavor. I dont like bean sprouts, they got in the way of my noodles. But they're nasty flavor didnt get in the way as they usually do. It was just texturally in the way, I dont wanna hear crunch crunch when eating my noodles yknow. I barely had the corn, it sunk down into the soup before I got to it Soup is good, im not good at describing flavors. Flavor is light, but tasty. I chose tonkotsu and non spicy. My ranking of ingredients 1. Chashu 2. Soup 3. Egg 4. Bamboo 5. Naruto 6. Noodles 7. Beansprouts 8. Corn Extra Fast service, got my food almost instantly Pretty empty on a tuesday at 1pm. As I was here, I saw one person get pickup, a guy delivering the ingredients, and another dine in. Order up front, and pay before u eat like fast food. Right after ordering, cashier hands u napkins and chopsticks. Music is very soft and peaceful, can barely hear the music, which I prefer. There is a self order machine but it hasnt been working I think. Last time I came, the card machine didnt work so they only accepted cash. Luckily they fixed it by the time I came back today It's not bad, I dont feel offended, but I think I prefer instant ramen. The slurp is invaluable 4/5

Saw a sign that they were under new Management so we gave it a try. Very nice young lady taking orders. There were two of us we both ordered ramen. Mine came wrong was missing veggies so back it went as my lunch partner ate hers so it would not get cold. About 10 minutes mine was Brought back with the veggies but now it was cold. My lunch partner was almost done with her meal so I requested a refund. No attempt Was made to make it eight other then Refunding me my Money which is a mute point. Maybe a a gift card to try Rhenish again or comp My lunch mates. Something for ruining our lunch date. My lunch partner enjoyed her pork ramen. I never got the chance to enjoy mine. So take your chance here.

Stopped by for late lunchie. I had the black garlic ramen with seafood, it was so delicious, hot soup and the broth was on point. First time with white peach bottled drink. Hubby had miso ramen with pork slices, broth was scrumptious. He had a mango bottled drink. The ramen portions were so huge, we took home the remaining portions to indulge later. We been here previously and returned again. There's plenty of off street parking.

The food tastes really good and really no complaints on that front, but to be charged $10 for this small amount of chicken is highway robbery.

Food is ok, service is friendly. We ordered a Tonkatsu ramen with buttery toppings and unagi bowl. The ramen was okay, nothing special, but does the job if you're craving ramen in this area. The unagi bowl had a TON of sauce glazed on it. It looked nice and glossy but I personally would've preferred the sauce on the side. Lots of rice, though.

A HIDDEN GEM IN CASTRO VALLEY!!!! Seriously, I love this place so much. They PACK the ramen and toppings for you, I mean check out the picture!! The broths are always super flavorful as well. They have no idea what skimping means because they are just SUPER generous with their bowls here. I mean seriously, I couldnt believe how much food they gave when I first came here. For the price as well, this is definitely more than enough for me to feel full as well as take home leftovers (which I always do) I found about this place initially through doordash, and I was NOT disappointed in that department either. They do well by separating the toppings/noodles from the broth and it still comes SUPER warm and ready to eat. I'm also surprised they include chicken as one of their options because there are many ramen places that dont!!! For appetizers, we got the lumpia (which, wasnt really lumpia lol) It was moreso an eggroll so I hope they change that for the sake of accuracy. The chicken karaage is ALWAYS so fresh and good. They give so much too. Again, I'm so surprised and thankful with how much they give. I definitely recommend this place if you are in the area, craving ramen, and are HUNGRYYYYY!

Ask the Community - Ramen 101

Are the shoyu and miso broths made from pork?

Yes they are. I asked the cashier and she told me they put a splash of pork bone broth in those mentioned in your question except for the veggie and tomato broths. I went with the veggie broth and it's yummy :)

I want to order Black Garlic Ramen on DoorDash and I'm wondering if the order include the soft boiled egg... or do I have to click the on the extra button and pay $1 to add it myself...? I don't want to end up with two eggs..

It does not include egg. You do have to add extra for $1.

Do you provide delivery service which cost less than DoorDash, UberEat, GrubHub?

Yes, you can place delivery order via https://www.ezcater.com/catering/ramen-101-relish-3.

Can you list any vegan options?

Admittedly our vegan option is limited. You can substitute noodle with sprouts. For the broth, I definitely recommend veggie broth. For side, vegetable tempura or agedashi tofu without bonito fish flakes.

Is the shelter in place affecting the days you guys are open? If so what days are you open?

We are everyday 1130am-830pm. We accept walk-in/phone-in pick up, doordash, GrubHub and UberEat.

    Do you use MSG?

We don’t deliberately put MSG in our food. I want to err on the side of caution. Some food is already marinated when they deliver to our restaurant.

    Are you open today?

We are closed today and tomorrow. Will reopen Friday and weekend.

Are you guys doing take out during the shelter in place?

Yes we do accept phone in for take out and DoorDash delivery. You are welcome walk in order but we implement social spacing and ask customer wait outside for their turn to order or pick up. No dine in though.

Hi are your noodles and broth made from scratch in house?

It’s made from real flour and distribute to all of our 5 locations.

How come you don't serve poke? San Leandro greenhouse serves poke

We have different seasonal items which the other location do not serve. We add more to the food menu to match the season. The next upcoming seasonal item is tonkatsu curry which we are introducing in March. As for Poke, that is our summer time…

How long do you cook the broth?

    16 hours

Do you offer a catering menu?

We don’t have catering menu. We do catering but we do not deliver. Due to safety reason ramen broth will have to be re-heated at your catering venue. We recommend using large boiling pot for rehearing the broth. We can provide 32 quarts broth…

Do they have gluten free noodles?

We are sorry we do not have gluten free noodles but we have an option to substitute noodles with bean sprout.

    Are you guys open?

Yes we are. Our phone number is (510) 398-8232

Ordered takeout since we were so tired after tennis. It was nice that they have a seperate door to pick up take out so while I waited on the curbside DD ran into pick up. Easy peasy. When we got home we immediately inhaled it. Loved how they separated the filling from the udon and packed the broth separately. Poached egg was creamy still and blended well with the beef and noodles. We came back again yesterday but wanted to actually dine in. There were no longer long lines from when we last dined in years ago. The line went smoothly and the lady was quick and efficient to take our orders and even gathered Hubs' take out rice bowl for later. The gal at the pick up windown was also proficient as her job and even telling me my clams and ginger udon had just ran out so she gave me a number for my table. The tempura station was always one of my favorites. They just ran out of imitation crab but we snagged the last shrimp tempura. Also got a sweet potato and my favorite, pumpkin . 4/5 crunchy not too oily and naturally sweet. No sauce needed We found a table right away which was wiped clean. DD was half way through her udon when mine barely arrived. After the first sip of broth, it quickly reminded me of why we haven't been back in so long. Warm soup vs piping hot. That's why. Fresh cooked clams and butter ginger melted into the broth was a nice change from the usual. The taste was great and flavorful. Clams were blanched nicely with a few unopened shells that I didn't eat. There was also a few with some sand inside which was expected for a fast foodie style place where clam is ordered. 3.5/5 The other downside from the overall dish for both of us was the over sprinkling of green onions. It left a literal bad taste in both our mouths. Clean restrooms. Overall, 3.5

The broth was incredibly rich and velvety, with the coconut adding a subtle natural sweetness that complemented the deep umami of the miso instead of overpowering it. It created a balanced, layered flavor that was both comforting and surprisingly refined. Every spoonful had depth, and the broth was so good that I found myself wanting to finish every last drop. The noodles had an excellent texture, firm with just the right amount of chew--allowing them to hold onto the broth beautifully. The toppings were fresh, thoughtfully prepared, and blended seamlessly with the overall dish, adding texture and flavor without distracting from the star of the bowl. What impressed me most was how harmonious everything tasted. Fusion flavors can sometimes feel forced, but this ramen was exceptionally well executed. The coconut and miso worked together to create something unique while still respecting the traditional character of ramen. If you're looking for a bowl that's comforting, flavorful, and a little different from the usual tonkotsu or shoyu, I can't recommend the Coconut Miso Ramen at Tadamasa highly enough. It's the kind of meal that stays on your mind long after you've finished eating, and I'll definitely be coming back for it. You ever slapped a lady while giving her the old baloney pony and it made you realize that this is the best thing ever to happen? It's similar to that feeling

Not the thickest pieces of squid, but it was fried perfectly and tasted good. The miso ramen's broth had a nice zippy acidity to it which I really enjoyed. My wife got the black garlic ramen and the broth was very flavorful as well. I was surprised by how nicely cooked the noodles were. Perfectly al dente. Don't expect to be blown away with a transcendent experience or super Instagrammable presentation, but the food is simply made well and does the job.

We walked in around 7:50 PM and had to wait to be seated because the staff member was standing in the same spot, chatting with another table and not paying attention to incoming customers. After a while, he finally acknowledged us and seated us--but that was just the beginning. After we sat down, he stayed in that exact same spot, continuing his conversation the entire time. He wasn't taking orders or helping other, just chatting. We waited several more minutes, ready to order, but he never came over once. There is no excuse for ignoring customers like this-he could have taken our order and return to chatting if he needs. We felt completely disrespected and walked out. We will not be returning.

Ordered the blaze classic which really had nothing but 2 pieces of pork & noodles. Wish it had more but I'm guessing that's with the deluxe. Or all, soup flavor was so good! I got extra spice on side & it wasn't that spicy. Will def come again. Plenty of tables, wish they played some music, we were all sitting in silence & can hear other tables slurp.
