I wasn't sure about ramen in Ukiah, but they nailed it. The carbonara was also some of the best we have had and the chocolate pot de crème was a great way to finish. Service was pleasant and efficient -- our server was helpful without a constant need to upsell. The owner is super nice and friendly! A lovely atmosphere inside, well lit and decorated. The seared tuna entree was delicious. The tonkatsu ramen is definitely not authentic Japanese flavor, but more nutty and less heavy feeling which was great. The food presentation is awesome and everything tasted fresh and clean. I should know the difference, because I'm Asian!!! Seasonal veggies??? Ribbons of carrots, 3 pieces of corn and the broth is damned chicken broth!! So blessed to finally have real ramen in Ukiah! I've been to a lot of ramen spots throughout the Bay Area, and RamenCubed is two thumbs way up!! The broth is rich and flavorful, the noodles have that perfect bite, and you can watch the chefs make your bowl of yum! The whole process feels nourishing. The owner is lovely -kind and welcoming -and the space has gorgeous wood tables and décor and also a new cozy sitting area - just the right atmosphere for slurping happily. I always order a little extra broth when I get my bowl to go so I can savor more later. Bonus: I just found out they also offer noodle-making classes with a professional pasta maker who moved to Ukiah after years of crafting pasta for top Bay Area restaurants. How amazing is that?! The noodles are made in-house using heirloom wheat from the Mendocino Grain Project, all locally produced in Ukiah. However upon further inspection, the noodles, while cooked fairly nicely, were sitting in the bottom of a soup cup totally dry, stuck together and to the container. Oof, not good noodles from a noodle shop, hmmm...Seems like to-go isn't a good idea. If they had added just a touch of broth to the noodles, it would have been much better. My wife and I had dinner at Ramen Cubed on s rainy Monday night in November. Danny was our cook, server and cashier and was gracious, helpful and pleasantly restrained. The food was as if kissed by the Gods; creamy broth, unctuous flavors and generous servings. I had the Tokotsu Ramen, silky pork belly with whole grain Mendocino Grain Project noodles, seaweed, corn kernels and edamame. Our chef, hostess, and server, V, was so amazing. She recommended the tonkotsu ramen and even split the serving so my wife and I could share a bowl. Holy moly was it delicious! And so much food. Even sharing, we had to take the remainder to go. V was clearly devoted to the food and providing guidance and hospitality and we thank her for that. The seating is somewhat limited and its popularity may mean you sit at the counter, but we did and it not only did not pose a problem, but it was fun to have a front row seat to V cooking. It was a little jarring to be in a Japanese style restaurant while having country music piped in from the indoor speakers, but it was just amusing, not a problem at all.
