I'm not usually much of a soup person, but whenever I'm craving soup, this is one of the places I come to! I always get their large beef rib soup, and it never disappoints. Definitely a 5/5 for me! We also tried their NY steak, which comes with rice. I really liked it! The sauce is a little on the sweeter side, so I can see how some people might not like it, but personally, I enjoyed it. 5/5! We also got the teriyaki pork belly, and that was another 5/5. The marinade was just right--not too sweet and not too salty. I almost forgot--we also got the summer rolls! I didn't take a picture, but they were really good too. I read another Yelp review mentioning that they don't use the traditional wrap for their summer rolls. I guess the one they use has more of a chewy texture rather than being crunchy. I actually liked it! It didn't taste bad at all, so I think it's really just a matter of personal preference when it comes to the texture. As long as the food is good and the servers are great, I really can't complain! That's why this place continues to be one of my go-to spots. They haven't disappointed me yet! It wasn't busy when we went, so we got to choose whatever table we wanted. Huge portion, a beautifully light and flavorful broth, and the beef ribs were tender and delicious. An absolute must-order! Tamarind Ribs: Tasty, though they leaned more toward classic sweet-and-sour. I personally wished for a bit more of that sharp, tamarind-forward punch. Spring Rolls: Served as 6 skinny half-pieces instead of the plump rolls I'm used to. Because they used flour wrappers instead of traditional rice paper, they lacked that fresh, satisfying crunch. We had a slight ordering hiccup/language barrier when our waiter repeatedly said "teriyaki pork" while taking our order, even though I kept specifying tamarind. He brought out teriyaki, but he quickly fixed it and brought the right ones out! To top it off, the manager unexpectedly took 10% off our bill for the mix-up. It wasn't totally necessary, but such a sweet, thoughtful gesture that we really appreciated! Pro Tip: It gets a little warm inside even with the AC cranking, so dress light! We have been searching for a good bowl of pho nearby without having to drive to our favorite spot, Hale Vietnam in Kaimuki, and had been itching to try this spot for awhile based on the recommendations of others. This location is just outside of Waipahu Town Center, a convenient drive for us from Pearl City. We arrived around 5:45pm on a Friday. The place is not very large and was packed. We waited just a short time for a table. As a note, the place cleared out by 6:30, so we might try to come a little later next time. We ordered spring rolls to share, and my gf ordered the Beef Back ribs Pho. I ordered the Short Ribs Pho. The spring rolls were ok, but I think we'll skip that the next time. We were overstuffed after eating that and downing the real star of the show here which was the pho. The meat was tender and flavorful and the broth was so good! It has a meaty flavor I have not experienced elsewhere. My gf knew going in when she ordered the Beef Back ribs that it was going to be more than she could eat and she truly struggled, it was a lot of meat even with my help. She thoroughly enjoyed every bite though. Service here was attentive and quick. Our food came out really fast, and the kind servers made sure to keep our water topped off and check in on us often. I may have possibly had the best Vietnamese iced coffee I've ever had in my life here! Not overly sweet with that distinctive condensed milk but creamy still. We went straight for that huge bowl of beef rib pho! 9/10.. 1 point off for the broth being slightly saltier for my tastebuds. This $26 bowl of goodness had 4 full, fall off the bone meaty ribs. I had one of the greatest dinner experiences in a while. My wife had heard about this location but it was our first time trying. Fortunately, they have their first location in Waipahu. You can find their location near Waipahu Shopping Center. It can be difficult to find parking since there are so many good spots in this shopping center. The business itself looks clean and cutely decorated. It's quite small and cozy, which means you have to get there early. By the time we were leaving, there were 3 parties waiting for us to finish. Couldn't help but feel rushed lol. As for the food, we definitely tried their Ramen Beef Back Ribs. This was recommended by the waitress after we consider getting the Beef Back Ribs Pho. She said the "ramen broth had a little more flavor". Oh man! It was delicious. 10/10! My wife and I split it so we could try other items on their menu. We also had their Lemongrass Chicken Banh Mi and their Calamari! It was all delicious. We ended up destroying all the food. First time trying this place, and honestly I'm surprised I never heard of it until now. We went for lunch and it wasn't too busy. The hype seemed big, so we gave it a shot. I ordered the ribs pho, my wife got the regular pho, and my son tried the oxtail. Both the ribs and oxtail pho were $26 decent portions, but still pretty pricey. One thing to know: when you order the ribs pho, the ONLY meat you get is the ribs. No tripe, no steak slices, no meatballs, just ribs. They were huge though; mine came with three big pieces. The oxtail, on the other hand, was just okay. It had carrots and broccoli in it, which I didn't expect, and only four small pieces of oxtail for $26. My son wasn't happy about that at all. Ambience was fine, nothing special. I thought the ribs were solid and I'd probably get those again, but the oxtail didn't seem worth the price. My wife didn't complain about the regular pho it was $19.25 but honestly other places give you more for less. Overall, I'd rate this spot a 3/5. First of all, their beef ribs ramen is none like no other! It's their speciality and if you're eating here, you NEED to get a dish with some type of ribs. I've been here multiple times this past year and I got to say, it's one of the best pho places here on the leeward side of Oahu. Located in Waipahu, it's awesome to see that there are more restaurants offering pho and other Vietnamese cuisines here on this side of the island. Starting off with the food, the only thing I come here for is their Beef Back Ribs Pho!! It's basically a bowl of pho and it comes with three big bone beef ribs. The ribs are super soft and fall off the bone. You can tell that it's been simmering in their stock for hours. You can also order the beef ribs with ramen, which I still need to try. The pho soup is also top notch. It's very umami and doesn't come off too sweet like some other pho dishes I tried on the island. Aside from the pho, I do also get their spring rolls and chicken wings. The spring rolls are your usual made Vietnamese spring rolls. It comes with lettuce, rice noodles, and cucumber with their fish sauce dipping sauce. Their chicken wings are also really good. It comes deep fried and comes out very crispy. It's served with sweet chili sauce. When it comes to fining a dish I love, I always stick with that and it's the beef back ribs pho for me, but I will be trying the ramen version soon. The atmosphere here is great. It's not your biggest restaurant, but they do have a lot of tables to accommodate a lot of customers. The food also comes out really fast as well, so wait time if the restaurant is packed isn't long at all. I believe it's locally owed and the workers are very friendly and attentive. Water is always being refilled which is a huge plus. There is also ample of parking which it shares with the other tenants at the Shops at the West Loch Station. All in all, Ribs and Broth is one of my top Pho/Vietnamese restaurant on Oahu and would totally recommend this to anyone wanting pho and a cold chilly day. I'm a very picky eater when it comes to my pho. I usually like my broth on the saltier and darker side. My sister has been raving about this place & said it was really good. The oxtail pho itself came with about 5-6 generous pieces of oxtail! I was surprised because a lot of places are stingy with the oxtail. The broth was super flavorful & up to my liking. If you're looking for pho, look no further than Ribs and Broth! Seriously, this is the best broth I've tried on the island thus far, and I'm not just saying that because of the hype, it's true. If you like a salty, flavor packed broth, this is the place to come. It's located in a little strip mall in Waipahu, next to the McDonald's and in between Hou's fish market, and Pizza Hut, so it's really easy to find! We came on a Sunday evening around 7pm with 3 kids and 2 adults. The wait was 5 minutes, which wasn't too bad for a Sunday evening. The wait staff is really professional and super kind. The inside is a little smaller, but they make it work with the spacing. It doesn't feel overcrowded at all. We ordered a rare steak pho, rare steak and beef ball pho, calamari, shrimp ramen (not pictured), and a fried Chinese breadstick (also not pictured). I wish I got photos of everything cause it was that good! I can't choose favorites because everything was great, but I will say the bread is so delicious. It's oily and puffy, similar to a puff pastry. But when you dip it in the broth? Goodness. Heaven. The calamari was crispy and yummy with the sriracha mayo. The outside was sort of like a crispy panko? I don't know how to describe it, but it was bomb. My kids also enjoyed their shrimp ramen big time. Our total was about $70? I ordered spring rolls and my husband had beef tendon pho. He said was good but not enough tendon because beef tendon is expensive. The beef was thinly sliced but lacking some kind of taste. My spring rolls were good. Ate the whole thing. I'm really not a pho eater but I'll have something else if everybody going to a pho place. The whole sandwich was delicious. I give the sandwich 5 I also ordered the spring rolls. It's not made with the traditional spring roll wrapping but they used the summer roll wapping. It's more of a chewy wrapper. I like the traditional wrapping bc it's much crispier and the summer roll wrapper is a littler harder to chew. Otherwise the spring roll was delicious. See how torn I was about finishing this review? Here it is... August 27th and we went to the restaurant on January 10th (7 months ago)! Friend I went with this past Friday at the 11am opening was due to his wanting to try their Beef Short Ribs Pho...For me, this would be my *first* time to ever go into a Vietnamese restaurant in my lifetime. We sat in the car for a few minutes before the 11am opening and knew we were going to be the only customers at opening. Come 11am, the front door didn't appear to be completely closed so I just opened the door and we stepped in...EVERYONE of the staff were in the back kitchen, everyone... guess they didn't realize it was now 11am. We made a little noise to get their attention and so a well dressed man in casual business attire met us warmly and told us we could sit anywhere. After some looking around, we chose to sit to the left side upon entry. The man brought us the menus and I chatted with him and come to find out he mentioned he was the owner of the restaurant. He said that the Wahiawa restaurant he sold about a year ago, so he just had the Waikiki location plus this one in Waipahu. He also said he liked to be here in this location more often. Since I am not familiar with Vietnamese foods, I started easy with the fried chicken wings (menu says marinated with five spice). Five (5) wings (all the 'flat' portion) @ $12.95. Also chose to go with the regular banh mi sandwich (lemongrass chicken) at the same price as the chicken wings. As we waited while our foods were being made, within minutes of giving our order, the entire restaurant and adjoining shops and large area of Waipahu had the electricity shut down... Knowing them, they use gas to cook, and yes we were assured that our foods will be soon finished prepared as they use gas. It is just that everything else when dark, fortunately... it was bright outside, so sunlight was present and there was no problem lighting wise. The air conditioning though they shut down, but since it was cool already inside, there was really no need to air conditioning to continue. But after ten minutes, the owner asked us again if we were comfortable which we said we were but decided to open one of the two entry doors for ventilation. I thought that would not be a good idea as flies would come into the restaurant, but no... there were never any flies that came into the restaurant from the time the door was left open about 11:08am to the time we left, which was just about 31 minutes later at 11:31am. Value: * 1 star - 5 small chicken wing flats...for $12.95. Flavor was so underwhelmed of the five spice flavor... I felt i was just eating fried chicken wings with no flavoring...it was a disappointment. *1 star - lemongrass chicken ... for $12.95. Also underwhelming in taste, as the cilantro was the most prominent when eaten... I took a picture with the cutting knife to show how shortER the length of the banh mi sandwich was in comparison to the knife's length. Again, not having electricity had no effect on the flavor or preparation of my foods that I ordered as it happened within minutes of coming in and being seated and we leaving the restaurant at 11:31am. Btw, my friend did enjoy his Beef Short Ribs Pho ! I don't know what to say, but sure i was torn about whether to complete this review, being that it was over seven (7) months ago back in January.
