Scanning the menu for something interesting my eyes caught the word Mondongo. Reading the menu details ( in Spanish only) I conFirmed that this was a rich tripe stew. I think my son had a steak and egg burrito. Our meals took a while to arrive. Maybe 20 mInutes. The Mondongo was served in a large bowl. The rich orange broth was brimming with large chunks of glistening honeycomb tripe. I Waac also thrilled to encounter chunks of cartilaginous knuckle bones, and a medley or recognizable and non recognizable fruits and vegetables. First, the broth. It was rich with Umami suggesting hours of boiling down pigs feet and knuckle bones. It had a tomato background, but also tasted of pumpkin, and even roasted pumpkinseeds. There was a hint of masa harina reminiscent of tamales. I couldn't identify the other flavors, maybe star anise or allspice. There were big chunks of yuccaa, and plantain slices skin and all. There was some green, maybe chayote. But the Honeycomb Tripe. The three times washed washed cow's stomach was soft and soothing. I ordered a seasonal cocktail with very little simple syrup, since I usually do not like sweet drinks, and they got it exactly right, which is rarer than it should be.
