The meat was so tender and fresh, they gave generous portions which is tricky, I think a lot of the "hip" places are very minimalist in presentation and portions. The ribs pulled away from the bone like you expect good BBQ to do, the turkey has a yummy smoke ring, and the sauces were excellent (I like mild my husband was a fan of the mustard based sauce). Tried the whole food court place and bbq sounded good. Wasn't horrible but was very dry! Had ribs, brisket, and hot links. The hot links were the least dry out of the three. Watched him cut the brisket and there literally no juice coming out! Ribs had decent flavor but again dry! The Mac and cheese had good flavor but tasted like it had been cooked earlier that morning and left in a warmer all day. The French fries were good but the cook forgot he set my order aside to make more fries and gave out all the fries to other orders behind mine and got mad because he messed up. Started cussing and then took fry's out of another box and then put into mine to get my order finished. While they have a super captive audience to appeal to, I still don't get the overcooked, badly seasoned slop they are passing off as BBQ. I read about rolling smoke in an article about some of the best bbq spots in Denver. I was excited when I found out this spot was close to my hotel. It's located in Stanley market & the overall vibe of the market is really cool. The server was ok & friendly enough so I decided to order the brisket combo with collard greens & Mac n cheese. I shoulda known when I saw the guy slicing it that it wasn't going to be a good experience. There was no juiciness, it looked bone dry. When I finally got to eat, it was just as I expected - dry as the Sahara desert. Probably because it was extremely lean. Another thing I noticed when the guy was slicing the meat is that it looked like they had sliced all of the top bark off the brisket which was extremely odd seeing as that beautiful bark adds so much flavor. I decided to move on to the sides because the description of both sounded so good. Damn, if those weren't the most bland collard greens I've ever tasted in life. There was no flavor from the smoked Turkey they are supposed to be made with & I could tell they were cooked in plain water & not broth or stock. There was absolutely no flavor to those greens at all. The mac & cheese was also bland as hell. It was bland AND dry. Not a pinch of salt or anything else on that Mac. The best thing about this place are the sauces both medium & hot. I'm a firm believer though that if the bbq is good you don't need the sauce but this definitely needed the sauce & then some. Would not recommend this place at all. Terrible brisket & terrible sides. Highly disappointed :( read more

Had no idea RS BBQ was a food truck! Thought it was a new place in the Stanley Marketplace. Wait, it is that too but not for another week or so per the guys in the truck. I sampled their pulled pork at the Yelp event at the Hangar @ the Stanley last week. It enticed me to try more. So I tracked their food truck down for a very special lunch. Yes, they have burnt ends and they are totally AWESOME. Was hoping to try their smoked mac and cheese but they ran out after serving a guy 2 ahead of me in line. I had their potato salad instead. I went for the sandwich option (1side) versus the plate (2 sides). Ribs weren't listed so not sure if that was cause they ran out of those before I even showed up? Well, I'm really loving the 2 items I tried so far (pulled pork and burnt ends). Can't wait to try the rest!!! So I ventured to their brick and mortar location in the Stanley. I couldn't stop myself from having the burnt ends again. Yum! I chose a plate this time and had collard greens and mac and cheese. Perfect sides to go with my burnt ends! A great barbecue with a very large portion that can easily be shared. I recommend getting a combo plate so that you can try more options. I have been to this location a handful of times and have ordered the sausages,ribs and other smoked pork items. I truly enjoyed the brisket the most. I do love their side options and offer get the mac & cheese, coleslaw, baked beans, and potato salad. Each plate is about $12-16 for quality bbq. I know many don't like paying 20 bucks for barbecue, but it's a lot of work and definitely quality at Rolling Smoke. This location is definitely a fast casual eatery where you can grab and go a plate and enjoy your meal at an open seating space in the Stanley Marketplace. It's a great option to grab a plate and then eat outside or a community dining high top table in front of the restaurant. It's a no-frills barbecue place. Everything is served on paper plates with plastic cutlery. There are pump stations of the hot and mild barbecue sauce. Are usually grab both and add them to the plate of bbq on the side. There are canned beverages available for purchase. When we went to dine there on 12/30/18 & the special was a brisket chili, which I wish I ordered. I've always loved the food truck and was thrilled to walk by the other night and see the new location open. It's still "food truck" style in a way. You walk up to the counter, order your food, and shortly thereafter your ready to go. Help yourself to some BBQ sauce before you sit down nearby or take your food to go. I like to mix the two sauces together. My first visit on Sunday I came right before closing so they were out of a lot of the sides and some of the meats. I had a hot link sandwich and they hooked me up with some of their chili as a side. YUM! It had beans, pork, and had great flavor, if you see it get it. Tonight I had the brisket and beans. In Aurora for work. Was recommended to swing by the Stanley Marketplace for a late lunch. The smell of the smoker outside brought me to Rolling Smoke. Tried the 3 meat combo for the variety. Hot links, burnt ends and the brisket, beans and Mac and cheese. The meats were great, heavy on the smoke and tender. Their best sauce is their Carolina mustard and then their spicy BBQ. BBQ beans were decent but nothing remarkable. Lastly the Mac Cheese ended up being a hard pass. It was over cooked, dried out and served cold. This humble southern style BBQ joint has all the things you crave- ribs, brisket, hot links, a mean mac'n'cheese, and their collard greens are AH-MAZING! Their sauce is yum! The only downside to this spot is that they are so popular they run out of meat. The burnt ends that I am used to eating are juicy from the high fat content of the second cut ( the point ) of the brisket... when they are rendered they are is still supposed to have a fair amont of fat content to give the ends their crispness, grain, and fatty deliciousness. The burnt ends that were cut for my sandwich had none of the above characteristics, they were just dry... Mac and cheese served for my side was on the greasy side... Both the regular, and spicy BBQ sauces were tasty... I saw in a prior Yelp review where the Yelper was complainig about the high price and small portion..
