Rosa's Mexican Kitchen is truly a hidden gem! My husband and I visit periodically, and every time we do, we split the California burrito--it's that good. The steak is perfectly seasoned with a peppery taste, and the burrito itself is loaded with cheesy, flavorful goodness. It's comfort food at its finest. Beyond the food, the restaurant itself is consistently clean, and the service is excellent. Our food always comes out piping hot, fresh, and fast. If you're looking for a place that delivers on both quality and taste, Rosa's Mexican Kitchen should be at the top of your list.

Had the chorizo breakfast burrito with hit chili. Not bad. Not a huge burrito, which is okay for a quick breakfast. The hot chili actually had a bit of heat which is becoming harder and harder to fine. Not melt your face off hot, but you could feel it. The inside is nice, the staff were friendly, and the burrito was ready in about 3 minutes. No complaints.

I had the barbacoa enchiladas and they were great!! My husband had the steak burrito which was overcooked, so he wasn't quite as happy as I was! I would get the barbacoa enchiladas again. Parking is free, located in a strip mall. It's a small place with cute decor, offers a small selection of alcohol, beer and wine.

You really can't go wrong ordering from Rosa's! Today I had the shrimp taco (not pictured because I couldn't stop eating to take a photo), a red taco, jamaica (not pictured), and flan. When I say I will be craving the red taco forever, I mean it; I will be thinking about it until the next time I get to visit Rosa's. 100% coming back as soon as I can and I truly recommend you try this place out! The food is so flavorful and tastes fresh; the salsa is tdf, seriously you can get mild or spicy and they're both super yummy and complimentary of the food. The staff were very kind and friendly! The decor inside is super cool, too! A hidden gem in Rox for sure.

I was hooked on their green chili right away but for some reason it's hard to get the same heat each time. I love hot, spicy chili! But anyways, it's still a quality place and should not be overlooked

I don't give 5stars - like ever. Rosa is worthy. Fantastic menu of incredibly authentic Mexican recipes delivered in a quick-service format. We had a smothered steak burrito and a plate of three tacos (Ensenada, Sonoran and Al Pastor). Just fantastic and can't wait to go back! The protein all was cooked perfectly and everything was very fresh. The restaurant was packed at lunch and the staff was so friendly despite being clearly stretched to capacity. The only thing I'd suggest is to add alcohol to the mix! Would have purchased a XX or Modelo to go with our food! Great restaurant - will go back soon and often!

Their red taco is fantastic and a great value, lots of Barbacoa! Quick service! The side of beans is a large portion for the money.

Have had most things in menu. Always good. Been going since it open. Now have seating to eat in but I live close by so always get take out.

We ordered about the same, but he got the shrimp which he said was delicious as well. I also tried the signature, Bellanova margarita - I must say that was a little unexpected, not your traditional margarita it was very sweet, so probably not something I'd order again since I prefer stronger tasting drinks, but the coconut flavor in it was delicious if you like coconut. The service was excellent! When we arrived, the interior was super packed and super loud so I was very relieved when we got to sit on the back patio, which turned out great because even though there was a little noise there, we were able to hear each other much better. The server was excellent. She kept checking on us. She answered all our questions and was very kind and accommodating. I've been thinking about the tacos since then, it's been about a week, I can't wait to go back.

The fries had a lot of salt, pepper, and other spices on it. I love salty food and thought it was perfect. But some people might think it was too much so you may want to ask light salt or no seasoning at all. The burger was very good and every bite had great flavor with the smack sauce, pickles, lettuce, tomatoes, cheese, and onion. I enjoyed both items that I ordered and had plenty left over to eat later. It was a little pricey as I paid $28 for the quesadilla and burger but it was reasonably priced for the portion size and quality of the food. I just expect things to be a little cheaper when it comes to food trucks. The service was very good, I had an older Hispanic couple running the truck when I visited and they were very kind, professional, and put love into the food. The ambiance is cool, I mean it is a food truck with no seating. They have some chairs outside but no table. They also sell drinks, the options that I saw were Coke and Pepsi. I would definitely give snack daddy's a try if you are around downtown Littleton and want to support this small business. I will definitely be back to try some more of the menu.
