Got the taco salad. Don't waste your money. Essentially a head of iceberg with a few tomatoes, a bunch of beans and a smidgen of sour cream. so cheese, no salsa, no guacamole. You really can't go wrong ordering from Rosa's! Today I had the shrimp taco (not pictured because I couldn't stop eating to take a photo), a red taco, jamaica (not pictured), and flan. When I say I will be craving the red taco forever, I mean it; I will be thinking about it until the next time I get to visit Rosa's. 100% coming back as soon as I can and I truly recommend you try this place out! I don't give 5stars - like ever. Rosa is worthy. Fantastic menu of incredibly authentic Mexican recipes delivered in a quick-service format. We had a smothered steak burrito and a plate of three tacos (Ensenada, Sonoran and Al Pastor). Just fantastic and can't wait to go back! The protein all was cooked perfectly and everything was very fresh. The restaurant was packed at lunch and the staff was so friendly despite being clearly stretched to capacity. The only thing I'd suggest is to add alcohol to the mix! Would have purchased a XX or Modelo to go with our food! Great restaurant - will go back soon and often! read more

So I found this place by Yelping around for Mexican restaurants in the area. We live in Littleton but Roxborough is not super far from where we are so why the heck not, let's check it out... They are not open for dine in currently but you can walk in, bring your mask please, and order your meal to go. We ordered a chicken burrito- handheld and the tamale plate. Burrito was good, pretty good portion size; chicken, beans, rice and a chipotle aioli marinated together in a tortilla Tamale plate smothered in green chili- chili had a nice kick to it for sure, beans and rice, sour cream. Horchata ... oh yes they have this amazing little drink that has the best cinnamon flavors and sweetened condensed milk all marinating to bring the refreshing flavors of horchata.. my favorite! It's good, it's different but I wouldn't say is 100% authentic; it's a decent place to grab a meal but yes grab the horchata also ;) read more

Came here twice, first time beef tacos were very dry. Then I came in got the chicken which was shredded and really salty, it had no flavor beyond salt lick. Shredded usually come from a can and probably sits in a bath of aju to give it moister and taste. I do not recommend if you have lived in SoCal prior. read more

For your reopening might I suggest; Try to remember to turn off the OPEN sign when you leave. The food is good, though a bit expensive. But maybe everything is expensive now with inflation??? Some of the ingredients feel a bit basic but its the whole thing coming together that makes the plate. If you get a basic burrito thats kind of what you end up with. But if you get a smothered burrito you are treated to something a lot more special as a great example. It is a lot of food you get as well. Honestly the smothered burrito might be a meal for two. But if you are like me and eat the whole plate you order, its gonna cost you like 11 bucks. It's some mixture of fast food Mexican style but more so with sit down restaurant type portions. At best, the food is average Mexican food. At worst, you have my 3 crunchy beef tacos that fell apart while I tried eating them because they were so soggy. The people that work there are quick to prepare the food and are nice. But the dining area is basic and some of the soda dispensers don't work.
