I would highly recommend this restaurant to anyone in the Littleton, Highland Ranch, Lakewood, Denver area absolutely delicious! I did a pick up order and I was 100% satisfied. I had their carnitas smothered burrito my girlfriend had their chicken smothered burrito with some of their chips and salsa. Carnitas were very soft and juicy I could go for a second burrito if I could. Such an awesome way to set up the burrito in their to go containers with fresh side of pico de Gallo, lettuce y su delicioso guacamole. A great little walk in and take out or casual dine in restaurant. I ordered a vegan meal with a side of veggies and a large order of black beans and several salsas and guacamole. The spouse ordered a smothered steak burrito. My veggies were steamed/grilled without any oil. There were small carrots with the tops still partially on, Asparagus, onions, zucchini and bell peppers. These were cooked to perfection, still firm yet just tender enough - al dente! The salsas were very good. Good flavoring and not overly salty. The guacamole stole the dipping show - a great flavor and was fresh with fresh diced tomatoes and onions. The black beans were good but were a little salty for my palate. Wife's smothered burrito was very good. The cheese was a mild white colored cheese and was melted to perfection on the top with a mild green chile sauce that was very flavorful. The steak was tender and moist with plenty of steak. The chips were very good and had a great crunch. Best to eat them immediately while they are warm as they tend to lose some crunch by the end of the meal. They are still good but when they come out hot and fresh at the beginning of the meal they are very good. Definitely return here again! read more

The food is good, actually. Tender steak, flavorful barbacoa, fresh veg. What's not good is the attention to detail. Ordered lunch to-go and realized they didn't include an order of queso--it wasn't on the receipt and with several customers waiting to order inside, I let it go. There are a lot more cons over pros here. The most jarring thing was the chips, nobody is asking for chips to be amazing but they stood out in so many bad ways. They were very stale, doughy, and somehow still greasy. We did not finish them. Everything looked good on paper as far as how they marinate their meats and the type of ingredients they use. It looks really authentic on paper. But once I bit into everything, none of it tasted good. I had the steak taco and the meat was okay. I can see why they doused the meat in green sauce. Same goes for the pork tacos I had. The only saving grace was the shrimp tacos but it's not enough to make me want to come back. There's plenty of other places you can go to for better shrimp tacos. I also had had the tamale platter which was okay. I think the only thing they did well was the queso but there's just not enough positives to make a return. Instead of just complaining, I would suggest you hunt down the Cilantro food truck. It cost more but well worth it. read more

5 stars for all the right reasons! After a disappointing experience with a food truck, I drove, in a panic, straight to Rosa's to arrive 20 minutes before they closed the day before the 4th of July. I rushed in and was greeted by Alex who was gracious enough to listen to my plight on the poor experience I had waiting an hour for food at a local food truck only to be disappointed when they ran out of everything! I was more than happy to have whatever he had left to serve me, but he assured me that he could accommodate any request I had. I ordered two of their delicious, pound plus burritos to go and was once again satisfied with a fantastic meal. Alex's customer service, even at the very end of his shift, was polite, calm and understanding. He is a stellar employee and the food is always top notch! Review for Thornton location but excited to give this location a chance! Place is really fun to be in because of the decor and atmosphere. It was very busy on a Friday night but we got a seat within 4 minutes. We had our stroller which there was no room for so we had to break it down and put it under our table. We ordered the queso Blanco which is probably the best white queso dip I've ever had. They had yummy peppers, onions and tomatoes in it that made it so good! Unfortunately the chips to dip it in weren't very good. They weren't warm and had very light to no salt on them. For drinks, I ordered an horchata. It had way too much cinnamon and was very watery. For our dishes, we ordered a kids quesadilla with chicken, molcajete style fajitas with shrimp, and a single carnitas tacos. I shouldn't have added chicken to my little girls quesadilla as it made it super soggy. Thankfully she was so hungry she at least ate like 5 bites of it. My husband liked his Fajitas and I enjoyed getting to eat some of his rice and beans that came with it. I've never had such good tasting rice and beans at a Mexican restaurant! I got a single carnitas taco after seeing a picture that looked like the carnitas were a very fatty meat served. Unfortunately, I was wrong. The carnitas on the taco had tons of fat pieces. In addition to that, the meat was barely luke warm and it was topped with cold pico and cold guacamole so I ate a very cold dish. On top of that the tortilla was super soggy from the juice from the carnitas. I was really bummed about all of it as I thought it was going to be so good. My husband mentioned the cold dish to the waitress which she said she'd get me a new one. The second one was made much better. They actually fried the corn tortilla a little so the edges had some crispiness to it. The meat was still fatty but they had served me a few better pieces. And it was definitely warmer. Clean and friendly service and great local joint, the rice in my enchiladas was not cooked throughly and I felt like the queso was too floury. It took about 3 minutes from the time I ordered for my takeout. I did fell like $17 for both the chips and queso and two enchiladas was quite expensive. This place is delicious! Found them on door dash looking for some Mexican food to be delivered one night. Have been to eat here in person a few times since. They definitely have more items in store than are listed on door dash, so definitely go eat there! Their quesadillas are great! I've had the chicken on and their quesabirillia which were both delicious! Their "red taco" is a birria taco and is one of the best I've had in the denver area. Their grilled chicken tacos are really good too. One of my favorite items there is definitely the ground beef taco! Staff has always been friendly every time I've gone.
