When I think of a great food experience, I think of Crust Collective. My husband digs the beers, but I'm in it for the gluten-free deep dish pizza. I love that you can get traditional pizza toppings or creative combinations. The flavor of the pizza is amazing and I have heard that the gluten free crust is considered better than the regular by some people. This location gets busy, so if you can swing an early dinner or a meal at a slightly off time, your wait to sit will be shorter. We came in a bit before 5 when the patio seating was open and got to sit right away. When they are busy, you might wait a bit for food, but the servers are friendly and super knowledgeable about the menu items. We ordered the "something marvelous" (bbq chicken) and a pepperoni pizza (because kids) for our pizza. We also got the beets and burrata salad to start. This was more than enough food and we always take leftovers home. The weather was nice on the patio and you can see the waterfront and river from your seats. We've been here before. We will be back. We ate at Ruse Brewing on our way down to Portland for the weekend. This was a beautiful day on the waterfront and there was no wait at 7PM on a Friday night, which we found surprising given how almost every restaurant on the street seemed to be full. We were told it would be a 20 to 25 minute wait for our pizza (I had to ask - the server didn't volunteer this information). It actually took 30. Dini Broccolini ($16) - We ordered this as an app. The dish includes a thick romesco sauce spread along the bottom of the plate. It's served cold and it's quite nutty (walnuts?) and peppery with a strong tangy umami. It's chunky with lots of small pieces blended in. On top of the romesco are three slices of crostini that are much thicker than average. They are completely dried out and crunchy like croutons. They salt the bread a ton; it's salty enough that my mouth felt like it was burning. The only warm thing on the dish is the broccolini, which is baked rather than charred. The texture is great and the seasoning level is perfect. On top of the veggies, they sprinkle pecorino and and breadcrumbs, for additional saltiness, umami, and a bit of crunch. (4/5) Now onto the pizza. Taken from another of my reviews: there are several characteristics that define Detroit-style. Firstly, the base must be a thinner and chewier focaccia dough-like crust, pillowy on the interior and with a crispness on the bottom and sides that are somewhat greasy but not overladen*. There must be flavorful Wisconsin brick cheese (or blend), buttery and fatty, melted on top and spread until it spills over the sides of the crust, creating a crisp caramelized frico ring surrounding the pie. The pepperoni must be underneath the cheese**, and the flavorful tomato sauce, typically in several wide lines, is spread atop the cheese. There must not be too many toppings to prevent the crust from compressing and ruining the texture. *Note 1: The fat/grease is very important, both to allow the crust to crisp up and to act as a hydrophobic layer to prevent sogginess. **Note 2: This is the one trait I dislike since it makes the pepperoni limp and soaked with grease. Dial 'P' for Pepperoni ($26) - As always, I start with the base pepperoni pizza, the most classical Detroit-style pizza. The pizzas here are standard 4-square size (8in x 10in), cut into 6 pieces. Pricing is pretty expensive for this size - I'm used to 8-square (10in x 14in) pricing being around this much. Starting with the base crust - it's pretty good. It's crisp but not overly greasy, thinner and a little collapsed in the area with toppings, but still light and airy without being dense. It's super bubbly from frying in high heat and the crumb, especially towards the sides, looks great. It has a tasty buttery fried flavor. The cheese frico on the sides is underwhelming. While crisp, it's a little collapsed and flattened rather than having lacy, thin, uneven tops as with a great Detroit-style pizza. The bake on the pizza is also uneven, with one side much darker than the other. The darker side unfortunately burns the frico, which gives an unpleasant acridity on one end. On top, they add an appropriate amount of mild mozzarella. It's enough to give a slightly cheesy stretch, but isn't enough to feel overly heavy or rich. They then place pepperoni on top, which cups and crisps up. Again, they don't overload the pizza, so while salty, it's not overwhelmingly so like several other Detroit-style pizzas I've eaten recently. This all makes a pizza that give a really balanced bite. Unfortunately the sauce here is a miss. It's ridiculously tangy and acidic to start with somewhat of a metallic kind of flavor. It then descends into a really heavy overly concentrated flavor of dried Italian herbs. It's incredibly overwhelming, like they wanted to completely cover up the taste of bad quality canned tomatoes* but failed. The dried herbs are followed up with a slight heat that warms the mouth, probably from red pepper flakes mixed in. On each slice of pizza, they place a giant spoonful of sauce, which is unfortunate given that I didn't enjoy the sauce. I think they should revisit their tomato sauce recipe. It's one of the worst Ive had in a while. Luckily, it's not a huge part of the pizza. (3.5/5) Overall the pizzas have some major weaknesses. My review reads very critical, but I think the pizzas are still quite tasty and will satisfy most people. Still, I personally wouldn't return given the better options for Detroit-style pizza across the river. *Note: They use Valoroso canned tomatoes from Stanislaus, which is a company many places in Detroit also use. As a vegetarian, there are very limited options at this time on the Vancouver Waterfront. But Ruse Brewing really fits the bill! I'm a big fan of Detroit-style pizza and I think Ruse's version is far superior to the nearby Ranch Pizza. However my fave offering is their sandwiches. The bread they make is excellent!! I would love to see them offer a few more vegetarian sandwich options; the Yola Caprese is quite tasty (their pesto is bomb) and the vegan hamburger sando is good, but they do such innovative work with fresh veggie pizza combos; I wish they would apply that same creativity to expanding their vegetarian sandwich varieties. One thing: The pick up timing is often off when you order online. Whenever I arrive at pick up, I find the food has been ready for a while. That's okay for a sandwich, but a bummer when it's a pizza and your food has gotten cold. Recommend always arriving a bit early for your pick up to account for this. read more

I was curious about Crust collective's lunch offering of sandwiches and am happy to report they are 100% worth the $17+ price tag. I got the Chop shop sandwich for pick up and it was ready almost immediately after placing the order. The sandwich is pretty hefty so it definitely can be made into two meals, which I appreciate. The impossible beef was perfectly seasoned and had a great peppery flavor. The bread to filling ratio was spot on and the overall sandwich had just the right amount of sauce and mayo to not make the sandwich too dry or soggy. The flavors are great. The servers were super friendly too! Stopped in with my family while walking around the waterfront we were craving pizza and decided to give this place a try. The restaurant had a nice atmosphere with lots of plants and great natural lighting, plus a lovely view of the river. We were seated right away, and our server was friendly and attentive. We did end up waiting close to an hour for our pizza, which felt a bit long considering it wasn't very busy and we ordered soon after sitting down. Not sure if it was a staffing issue or something else, but the wait stood out. When the pizza arrived, it was pretty good but not the best. I have nothing bad to say at all. Service was great! The women working were so friendly. Helpful with suggestions on favorite brews to favorite pizza. Great view! We're staring at the water. We ordered the Mafia Busboy. It was perfect! Crispy edges. The rosemary ricotta with chunks of garlic. OMG! I don't like an over abundance of red sauce, so this was the perfect amount. All the flavors were just great! You can get a flights of however many flights you want. We tried each IPA and the one stout. Pizza was okay - definitely too much cheese and I thought the red sauce was too sweet, crust could've been crispier. Very attentive about taking the order, less so about checking in. Came on a sunny day. The place was poppin. Very busy. I paid $30 for the psychic pizza and 4oz of their ranch. Honestly I wasn't that impressed. It was good. But i didnt love it. The pizzas are more personal sized pizzas then something to share. Unless your looking for more of an appetizer type thing. They also only serve tap water. Would possibly come back. Our server was wonderful and the food came out quick. Because of the good service, and the food was really good, I'm giving them 3-stars, which means A-okay. But if I was basing it on food price & beer selection, I'd only give them 2-stars. Their Detroit-style pizzas are quite good, but expect to pay more for your food given their prime location on the Vancouver waterfront. On average, one of their pizzas which is the size of standard sheet of paper, is $25, and is 6 square-slices. We wanted to bring leftovers home, so we ordered 2 pizzas and got one with a gluten-free crust just to try it and compare. Their gluten-free crust was quite good, and still the right texture for the Detroit-style. The gluten-free crust, along with Vegan cheese, if you want it, are available for an up-charge. We also tried their seasonal salad, which was a hefty $18 so we expected something bigger, but it's currently just 7 slices of fresh peach (1/4" thick peach slices, not the bigger wedge-style slices), and a small pile of heirloom tomato chunks on top of some ricotta and topped with drizzle of hot honey & olive oil and a sprinkling of fresh basil & dill. Delicious, yes, but for $18? Ouch. Aside from price, the other disappointment, given they are their own brewery, was although there's a dozen of their own beers on tap, 10 of them are IPAs. I know some folks love IPAs, but geesh, maybe offer a little more variety of styles. read more

This review is for their sandwiches. Their pizza is so good but I didn't see much about heir sandwiches. I ordered the Monty. It was $17 and then I added chips and a pickle, so $19, which is definitely a little spendy. The sandwich is good though, the bread was very fresh and plenty of fillings. This particular sandwich had a maple Dijon, which is one the sweet side for me. If I ordered again, I would forgo this. But if you are on the waterfront and want a good sandwich it's a good option. I would say their pizza is better, and their sandwiches are more a 4/5. read more

Incredible place, and after 2 visits while in town this yr, I can confidently say is a place I'll drop into every oppty I get. First off, the beers are top notch, constantly rotating options both on draft and to go. I love the ability to get 5oz "sampler" pours with no min/max commitments. Secondly, who knew it'd be Portland of all places where I got exposed to Detroit style pizza. Whether or not it's 100% "authentic" I'll let someone with more experience chime in but it's a damn good pizza. Excellent crisp on the crust, fantastic toppings and sauce. Every time we travel down to Portland we stop at Crust for awesome Detroit style pizza. It's deep dish with cheese and toppings all the way to the crispy delicious edges. We have tried every pizza they make and they are all outstanding. However, the Greek pizza should have kalamata olives on it and not regular ripe black olives. It does that Greek pizza a huge disappointment. I never ordered again because of that and I am deducting a star for the bad judgement. The beer is also outstanding with constant changing selections. My favorite is always the fluorescent farm. I remember when batch #1 came out. The service is friendly. The ambience can get noisy, but it is super clean and minimal. There is also outdoor seating. Besides pizza they also have delicious looking huge salads. Do yourself a favor and go check them out and their awesome Detroit style pizza. read more

The location is great and the pizza is good, though definitely overpriced. Unfortunately, the service completely outweighs the food. The first time we visited, our server was rude and short with us while tables without young children seemed to receive much friendlier service. When I tried to use the changing table in the restroom, it literally fell off the wall. I assumed it was just a busy Saturday and decided to give the place another chance a few months later. The restaurant was nearly empty (one person at the bar). When I asked for a high chair, the waitress bluntly said they didn't have any. We tried to make it work with my daughter on my lap or sitting next to me, which any parent knows is difficult with a wiggly toddler. The entire time we were there, the staff made us feel unwelcome and out of place. If you're going without kids, you might enjoy it. But based on our experiences, this is clearly not a family-friendly restaurant, and I wouldn't recommend it to anyone dining with young children. read more
