You are then taken in groups of three or less to a vestibule where they lock down your phones so you can't take any pictures and then you are seated in the dark and moody atmosphere. They don't split checks, so be ready to order as a group. There's a 90 minute time limit as well, so don't dawdle. Highlights of our order included the Butter Pecan Old Fashioned (so good!) and the Banana Daiquiri. We stayed for the full 90 minutes and when we left there was a long line waiting to get in. Go early if you want to get one of the few seats inside or be prepared to wait. We loved our experience.

We arrived just minutes after 5pm on a Thursday, with only one group ahead of us -- about a 5-minute wait before we were ushered in. They do check IDs, so bring one, or find somewhere else to drink. After the secret knock and moving a book in the entryway library, the door opens into a 1920s-style bar: heavy, dark wood, and very limited seating, with just 8 seats at the bar and two larger seating areas for groups. I believe our bartender's name was Matt -- the last of the original employees since Eleven Twenty-Two opened eight years ago. He was great, walking my girlfriend through the menu when she asked for recommendations, and sharing some great insight when we asked about the bar's history and the mixology behind the drinks. She started the evening with a Mexican Firing Squad -- very margarita-like, with tequila, lime, house-made grenadine, and Angostura. I wasn't quite as adventurous and wanted to keep things simple, so my first round was a martini, stirred and dry. The fun didn't stop there, since we had 90 minutes to relax before our dinner reservation. Round two was a Slow and Foamy -- a lemongrass- and fennel-infused vodka with egg white. It was an interesting drink; flavors you wouldn't expect to work together, worked together beautifully. It's an in-house creation by the female bartender, whose name I didn't catch. Torn between a Sidecar and a Manhattan, I went with the Sidecar, since I hadn't found a good one anywhere else in Paso. Matt poured a really nice one -- not too sweet, with a sugar-rimmed glass and well-balanced simple syrup. Like every drink that night, it was beautifully balanced. We finished with a Banana Daiquiri -- their unique take on the drink, without the slushy ice or fake banana flavor. This was probably the best drink of the night for both of us, and we shared it. It's not cheap, but a night out for drinks never is. That wouldn't stop me from bringing out-of-town guests here -- they'd love this kind of historical, speakeasy-style setting. My coworker and I arrived without a reservation and sat at their cozy bar, where we were warmly greeted by Jorge Jr. He was an absolute pleasure to talk to, sharing the history of the restaurant and the meaning behind some of the dishes. His father, the mastermind in the kitchen, worked magic with every plate that came out. Now, let's talk about the food--because it was nothing short of exceptional. The Corn Soufflé might sound intriguing, but trust me, it's a must-try! Unique, flavorful, and something you'll crave long after your visit. The 12oz Ribeye was cooked to perfection, paired with grilled vegetables, but the real star of the plate was the mushroom sauce--rich, savory, and absolutely delicious. I tightened it up while keeping your experience and personality in it: Sabor e Sazon was one of the highlights of our Paso trip. We had such a great experience from beginning to end. The food was absolutely amazing and beautifully executed. We started with the grilled octopus, which was cooked to perfection -- tender, flavorful, and thankfully not rubbery at all. We also tried their special of the day: scallops with a white truffle sauce, and I'm still thinking about that dish. The sauce was rich, elegant, and absolutely delicious. We shared the paella, and it was outstanding. It does take a little longer to prepare, but we honestly didn't mind because we were too busy enjoying everything else. Good paella takes time, and it was worth every minute. What truly elevated the experience was the hospitality. Every single person working there seemed genuinely happy to be there. Huge smiles, warm energy, and a sense of pride in what they do. They clearly understand the concept of "unreasonable hospitality" -- making guests feel cared for beyond just serving food. After my phenomenal first experience I decided to join S&S for my Valentine's Day Dinner and couldn't have made a better decision. As one of the hottest spots to dine in Paso I was impressed at how quickly I was able to be sat on a busy holiday. Our server Jose welcomed us and offered us the four course chefs tasting exclusively available that night and we put our full faith in Chef Jorge. BEST MEAL OF MY LIFE. My partner got scallops in a black truffle infused fondue and I got the grilled octopus on succotash as our appetizer. We instantly knew we had made the right choice. The first entree to hit the table was a filet in a delightful green peppercorn sauce (which was paired beautifully with Pianetta Cab) and my partner received a Branzino in a lemon butter sauce with a side of linguini. Just from writing this review I am getting hungry all over again. The last entrees we received was arguably the best, a homemade black squid ink Fettucini executed perfectly and a decadent black truffle pasta, absolutely insane. The night ended with a tiramisu, banana cheesecake, and two espressos. For the value, lively ambiance, and great service this place will do very well in the years to come. The goat cheese was incredibly lush and super creamy (none of that chalky, hard texture you sometimes get), layered perfectly with vibrant pickled red onions, tomatoes, and beautifully fluffy scrambled eggs over a bed of fresh greens. ( I hit it with a dash of pepper and hot sauce) The real star of the show, though, was the side of pork sausage hands down my favorite part of the entire meal. It was incredibly savory and juicy. I liked the eggs and the feta sauce, but there was way too much pita to egg ratio, and it was little heavy on the harissa-tomato sauce where the pita got too soggy at times. I only ate the egg portion, and left the rest of the pita. As mentioned above, the service was meh. There were like 3 filled tables in the entire restaurant and we waited for at least 20 minutes after we had finished eating for the check, and another 10-15 minutes for the server to come get the card.

The steak was good, although for me the appetizers were really the stars of the savory portion of the meal. And then came dessert. I had absolutely NO business ordering dessert because I already had three mini birthday cakes and two tarts waiting for me back at the hotel. But Jacqueline told us the Gâteau Basque cake was "to die for," and once someone says that, I have to know. She was right. That cake was AMAZING. Golden and slightly crusted on the outside, soft and delicious inside, and honestly one of the best cakes I've had. It comes with plum compote and honey yogurt, but the cake is so good that it doesn't need anything else. Since it was my birthday, they also brought me a complimentary scoop of salted caramel ice cream with a candle, which was such a sweet touch and paired perfectly with the cake. She said our table was "almost ready" since the current guests had paid, but then refused to seat us at either of two open 4 tops, saying she wanted to save them for larger parties, even though at least four other 4 tops around the room already had just two people seated at them. She offered us a drink while we waited "a few minutes." Fifteen minutes later, still no table and no drinks provided, while guests with later reservations were seated ahead of us. When we asked again, her story changed: now the original table hadn't actually paid yet. By this point it had been 25 minutes past our reservation, so we finally confronted her directly and pointed out the empty 4 tops with only two people at them. Her explanation was that those parties had reservations, and I reminded her that we had a reservation too. She reluctantly seated us after that, with no apology or acknowledgement. What made it even more frustrating was watching her, later in the evening, seat other parties of two at 4 tops without any hesitation at all. There was never any acknowledgment of the wait or any reason given for why the rules seemed to apply differently to us. It's a shame, because the food and Yuki's service were excellent and deserved a five star night. But the disorganized, inconsistent hosting at the door made the first half hour of my birthday dinner stressful instead of special. Ask for Yuki if you go, just brace yourself at the door.

We did the 2nd seating they are spaced 6 and 6 for a total of 12 per night. We were greeted by a super nice young man from Cambria. He wore a suit and offered us a seat and water while we waited. Once our party was seated it was as if we were watching a synchronized dance. In total I would say we had 15 courses! I had read some reviews that the plates were small,and yes they were, however they needed to be. We were stuffed when we left. There were some plates I could have had more for sure, but I believe this is what it's supposed to be. We weren't sure so we did have a late breakfast and waited to eat before our dinner. We did not do the wine pairing because we didn't know if it would be what we were looking for. We wanted the food aspect of the evening to be the star and it was. Everything was presented with such elegance and methodical precision. That alone was impressive. I read some reviews that the staff was not talkative or friendly. Wrong! I asked questions and they answered. Even so, the first round of choices was which cup we wanted our first course. I picked a pink depression goblet. They filled it with the most delicious tomato celery bonito I have ever tasted. The chef serving us and giving us our glasses said he made a few but the pink one was his favorite. So of course I chose it. Next we had oysters with a green strawberry kosho. Delicious! Our chef explained these would be the freshest oysters we would ever enjoy. The second quietly gets on with dinner and lets you figure it out yourself. Six Test Kitchen belongs firmly in the second camp. It's a tiny room. A dozen seats wrap around one open kitchen, so everyone sees everything. That should be chaos. It isn't. No shouting, no crashing pans, no television drama. Just cooks orbiting each other so smoothly I caught myself watching a man spoon sauce onto a plate with the focus you'd give a guitar solo. I have never been that focused on anything, including merging onto a highway. Everybody slows down in there without being told to. Nobody made a rule. Nobody held a meeting. Within a few minutes the whole room is whispering like it's a library with a tasting menu. Ask the staff about a wine and you're suddenly touring vineyards on the other side of the planet. Ask about an ingredient and you get a story instead of a speech. By dessert I figured they could explain quantum physics, provided somebody opened a Riesling first. I stopped trying to remember every course somewhere around the middle. That's a compliment. I just accepted that these people had a better plan for my evening than I did. A few dishes survived the amnesia anyway. The bluefin tuna proved just how hard it is to do something simple. The duck showed up in several forms, including a warm brioche stuffed with confit that weighed roughly nothing. I now believe butter has discovered antigravity. The duck liver ran so smooth and rich my brain filed it under dessert and refused to correct the error. The fifty-day aged Japanese wagyu arrived and politely ruined beef for the foreseeable future. People love telling you this stuff melts in your mouth. This one had better things to do. It raised my standards, thanked me for my time, and left every future steak to explain itself. Somewhere out there a perfectly respectable ribeye is about to get a deeply unfair comparison. None of that is its fault. With the final savory dish, the chef came over carrying a handcrafted wooden box and opened it the way you'd show off family photos. Inside sat knives forged from recycled ball bearings by a bladesmith in Athens, Georgia. He handed me one to use on the duck. I held it with the nervous respect reserved for museum artifacts and someone else's newborn, then spent ten minutes concentrating on not becoming a line item in the restaurant's insurance paperwork. The service deserves its own paragraph. My water glass never dropped below half full, and I didn't once catch anyone filling it. Empty plates vanished before I finished admiring them. Each course landed the moment I was ready for it, which I found mildly unsettling, since I didn't know I was ready. By the end, the whole night felt like a ballet where the audience gets fed. I left already negotiating with myself about how soon is too soon to go back.

It's a 30 minute drive from downtown Paso Robles through a windy road and when it's dark it can be hard to see without any lights. We made reservations and put a $100/person deposit that was returned to us upon our check-in. We were treated with some sauvignon blanc upon arrival and then brought to our table. The interior was spacious although they only serve maybe 10 tables for service. After we got seated we had some complimentary rosé as well. Our dinner was a 5 course meal although there were some extra dishes not included on the menu. Everything was really good and I especially liked the spiny lobster, laminated brioche, and liberty farms duck. Our dessert course ended up being three different courses and overall the meal was $225 per person. The service was amazing and everyone was so welcoming and accommodating, especially our server Jessica. The executive chef Rachel Haggstrom even came out to explain some of the main courses as well. I also noticed that they love using tuiles as four dishes utilized them. The service here was non-existent for us but fortunately there was free WiFi to use. The thing that really dampened our experience were the amount of flies inside during our dinner. The wine harvest usually happens around October so the flies are attracted to that. Our server kind of made it sound like we were the ones that were unusually-bothered by it and we shouldn't have been. However, we saw the workers using electric fly swatters to kill the flies during service so they know it's a problem too. The flies were all around the food on our table which wasn't what I'd expected for such a nice meal of high quality. I'd think they would have found a solution to that problem.

We were taken to our table immediately at our reservation time ( we opted to sit outside since it was a beautiful night and the winery grounds are gorgeous) and were pampered from the moment we sat down by the entire incredible staff. Our server was Tori and she was amazing. She explained the entire experience to us along our culinary journey. I have attached the menu, which actually had a birthday wish for my wife on it, and some pictures, but the pictures do not do the food justice. We love Justin wine so that was a no brainer. Every glass was superb as always. The Wagyu ribeye and Venison filet were brilliant. The Halibut and Salmon tartare were the best we ever tasted, and the desert offerings beyond our imagination. Our complements to Chef Rachel Haggstrom and the entire staff. I don't mean to name drop but we flew to Chicago a couple years ago to eat at Alinea and as amazing as it was the restaurant at the Justin outshined it. This is a must visit experience when in the Paso Robles area. Well done everyone.
