Here's how I would categorize the positives: - the servers provide plenty of lettuce base - so many topping options (veggies, fruit), more than any other salad place I've seen - you can ask for an extra scoop of a topping if it's one you really like. (toppings, not protein) - 8 different meat protein options, plus 2 non meat protein options - pita chips or multigrain croissant come with the salad - the small salad (for me) is good for 2 meals As for cleanliness, the inside seating area has always been very clean & as they spoon out the various toppings, the server is repeatably diligent about immediately cleaning up/removing any toppings that fall outside the salad container. I may have eaten that way before. But this is going to be my official one. The assembly came with a bowl of hot water (I prefer it warm), plate of vegetables, a plate of meat with more carrots, few sheets of rice paper and a small bowl of fish sauce. First I wet the rice paper from the edge of that hot water bowl. Rotate on the edge for 2 turns. Then, place it on an empty plate. Now, I pack the right amount of lettuce, pickled carrots, cucumber and the protein. Roll it from the edge like a burrito. Dip it in the sauce. And Voila! Time to consume. It was healthy and more fun than those ready-made vermicelli bowls.
