The mushroom croquettes followed with comfort and finesse. Four crisp, golden bites filled with finely chopped mushrooms and herbs, tender inside and lightly crisp outside. Paired with a Spanish-style cream, they were rich without heaviness and disappeared quickly, which is always a good sign.
One of the most enjoyable dishes was the tomato preparation served with toasted bread broken into small, shareable pieces. The tomatoes were bright and juicy, simply seasoned, and meant to be scooped rather than plated formally. It encouraged interaction at the table--passing, sharing, tasting together--and fit perfectly with the tapas spirit of the restaurant.

Sydney, our bartender, was friendly, knowledgeable, and easy to talk with, and other members of the team joined conversations naturally--even when they weren't directly serving us. They shared stories about what they enjoy cooking, why they like working there, and how the restaurant fits into the larger Paso Robles community. There was genuine pride in the way they spoke about the space, the ownership, and their coworkers.
That openness created a sense of connection that's hard to fake. You don't feel like a customer passing through--you feel welcomed into something that's being built with care.
