I wanted to start off by saying that the service was great - our server was super friendly and patient. The ambiance and aesthetic was nice, as it was inside the Allegretto Vineyard Resort, which is beautiful. I was not a fan of the food. We ordered: - Funghi Pizza - Wasn't a huge fan of the pizza, as it was on the sweeter side and I didn't like combination of the mushrooms and honey. - Chef's Choice - The menu mentioned that this would be spicy, but I found it on the blander side and not very flavorful. The bread it came it came with was pretty good. One thing I did like was that we were able to customize the food and make it vegetarian. My friend and I stayed at the Allegreto Vinyard Resort and ate at Cello a few times. When we arrived the first evening we went to the bar and had a glass of wine and the crispy brussel sprouts and they were AMAZING! We ate breakfast at Cello the next two mornings. The portions were large so my friend and I split the breakfast. The panini and potatoes were perfectly cooked and absolutely delicious. The breakfast burrito was also very good. We had the same server both mornings, her name was Sarah, and she was wonderful. She gave us a few great tips for places to go and she was a great server, very attentive. Parking is ample as the restaurant is in the resort. The ambiance was nice, not too formal and not too casual. read more

Cello Restaurant is a gem. Located onsite at the Allegretto Vineyard Resort. Convenient and a beautiful place to dine at. You definite feel like you're on vacation! We dined here for dinner and watched the evening sky change colors and the restaurant lights come on. Very elegant and romantic. The food was amazingly rich in flavors with each bite. I had no complaints. We had outside heaters during the evening and were comfortable. The service was spot on professional and friendly. The hotel grounds are incredible!! Even if you don't plan on staying, dining, or wine tasting here - you can still enjoy the enclosed courtyard area and surrounding vineyards. Two friends and I had lunch at Cello and took advantage of their restaurant month deal - this January. Make sure to ask about it if you make it here in January because it was not offered to us and we had to ask for it. The waiter may have been new - he wasn't sure about the restaurant month meal and he also forgot that it included dessert. We had to ask for the dessert after ordering one to share. So disappointed with this restaurant on this trip. My cousins and I came here for the weekend staying at the Allegretto hotel. We woke up Saturday morning and decided to have breakfast at the hotel since we are staying there. The hostess asked if we have reservations I said no but she can split our party between three or four tables. She called the manager and you should have seen his face when I repeated that to him. He's like I don't have enough staff or space to sit you for breakfast you should have made reservations. I just don't understand if a hotel books guests to stay there don't they realize that their guests might want to eat breakfast at the hotel they are staying ??? Convenient Mediterranean restaurant located inside the Allegretto Hotel. Celebrated my sisters 21st bday here and booked a reservation. Seating was dim but there were candles on all the tables. Environment wasnt too loud which I appreciated. We ordered the following: 1. Vegetable Tempura: 5/10 It was mainly just fried root vegetables. Nothing Too interesting or out of the ordinary-- definitely not like the Japanese tempura as the batter was more burnt. There were three sauces you can choose from but they were okay 2. Allegreto Caesar Salad: 7/10 Quick and refreshing, the Parmesan cheese paired nicely with the dressing. Not overpowering which is good 3. Margherita: 7/10 Crust was thin and not too oily which is good. Nothing too special again, sauce was made well 4. Pesto Linguine: 8/10 Was a huge fan of the pesto! It was better than I had expected because usually the pesto flavor is a bit bitter but this was cooked well. Nothing too fancy but I liked how the food wasn't salty/oily. Renee our server took care of us on a lovely Monday evening. We toured the gardens first and then ordered. Caesar salad, broccolini, bread and gluten free bread were all good sides to accompany our filet, carbonara pasta and ravioli. We arrived just after 10am on a Thursday morning and were promptly greeted and seated at a nice table in the back corner of the restaurant with the kitchen behind us. The staff were friendly and attentive without being overbearing. Each table was perfectly set for service. Attention to detail here is impeccable and made a casual breakfast feel extra special. We ordered coffee, the Paso Country breakfast, the yogurt parfait and a side of eggs and chicken sausage. Our food was out within minutes and everything tasted great! The bacon was cooked to perfection, crispy & delicious. The sourdough toast was warm, and with the butter & raspberry jam, wow what a decadent treat. The country potatoes were also perfectly cooked and seasoned, crispy on the outside but perfectly tender on the inside. While eating we noticed a server preparing the table next to us for a VIP and a few minutes later one of the owners (Doug Ayres) walked in and seated himself. We recognized him from the hotel property overview video and told him so. We chatted for a minute about some of the must see aspects of the property, then he enjoyed his breakfast and we finished ours. Wonderful dining experience! Excellent service and outstanding food. Loved the booths with tall backs to give privacy from other diners. Very attentive wait staff, I never had to wait to have my water glass refilled. Our Caesar salad tasted as good as it looked I had the lasagna and it is the best I've ever had. The pasta just melted in my mouth. The sauce was very flavorful and meaty but not overpowering. My husband had the pork chop which was very moist and the sauce was really delicious. He said the Mashed potatoes were perfection. My only suggestion is that they have the staff box up the leftovers instead of just bringing boxes and having us do it ourselves. I was debating what to order so I looked on Yelp and the reviews weren't great, so I was worried, but wow we had a great experience! We ordered the Panzanella Salad to share (they split it for us) and it was delicious! Then I got the carbonara and my sister got the chicken piccata, both were delicious! We had no idea how nice of an experience this would be. The staff are so nice and seek to make you feel at home. Our waitress, Makenzie, really made sure we were taken care of and was prompt to see that we had everything we needed. Then the food was so good! We celebrated my boyfriend's birthday dinner here this evening. We made sure to make reservations as well. They were pretty busy since there was a comedy show. The hostess also recommended making reservations either way. So...reservations are the way to go! Although we were seated right away, the server took a while to get our drink order in, however, they did seem quite busy so we let that slide a bit. Betsy was our server. She was super sweet and attentive as soon as she was freed up. We ordered a couple cocktails, an appetizer, and dinner entrees. The cocktails took a really long time. We had to check on them and even Betsy made a comment about the delay. She made sure to see what the hold up was and shortly after we received our drinks. The calamari appetizer was served thereafter and had to be the best calamari ever. Served crisp and hot, and plentiful as well. For dinner, I had the Clasico pizza and my bf had the halibut polenta. His dish looked way too healthy but he really enjoyed it. I, on the other hand, like to dabble in unhealthy delicious food more often than I probably should. The pizza was absolutely delicious. The dough was my favorite. Thin yet crispy. The serving size was shareable as well. There is plenty of seating inside as well as outside and the outside is beautiful. However, my wife orders coffee 15 mins goes by nothing has shown up, waitress is in the wind and no where to be seen. Ended up going to the lobby to get her coffee. They finally found it sitting on the bar, just no one paying attention. It was not busy by any means to look to that for excuses. Food came out and it was underwhelming. We couldn't figure out what was wrong with the avocado toast. Realized about half way through they didn't put the balsamic glaze. They didn't replace it, the just sloped on some glaze. Burrito was tail of two side. One really soggy due to the bell peppers, the other side ok. Fastest service was dropping off and picking up the check. There have been brief moments, that the Cello has had to depend on a sous chef. There have been times that it has perhaps been a little less than inspired. But even during those rare occurrences, there has been a wonderful staff of people that care and give their best, exhibiting professionalism and hospitality in this beautiful setting. GOOD NEWS. New chef, wonderful new dishes. I have been to 24 countries and lived on three different islands. Anyone will tell you that Paso has more than its share of excellent restaurants. Cello is now the cream of the crop. TIP. Do not be shy in asking questions! This exciting menu is in Italian now. Let your waiter know if you are not familiar with all of the listed ingredients and if you have allergies or if there's certain foods that you avoid. Such a disappointing experience. My wife and I decided to have dinner at Cello on Friday evening (Memorial Day weekend). When we arrived, we were told it would be a 1 hour wait for a table. No big deal, its a holiday. Staff did advise we could eat at the bar if we wanted. Excellent. Make our way to the bar, it's crowded, but two seats are available where people are leaving. We sit down, and wait. Staff is busy, but they look at us and recognize we are now sitting there. Time goes by, dirty dishes from previous guests in front of us, and we are just sitting there. More time goes by, more staff look at us, but nothing. Pretty soon a young couple sits down next to us, and instantly the staff is cleaning their dirty glassware, welcoming them, and asking if they'd like drinks. In the meantime, we are still sitting there with dirty dishes in front of us, and being ignored. After 15 minutes I went back to the hostess station and told her were were leaving after having been ignored. The staff seemed shocked but simply said ok, sorry. This is the worst experience we have ever had here, and we as locals have been coming here since the hotel opened, even spending many Christmas eve's in front of the firepits. Kinda sad, but it's clear this is not the spot for us any longer. read more

Dropped in here for some lunch on a warm, sunny day and it was wholeheartedly amazing. The food, the service, the patio, the vibe; everything was just right. We ordered the caprese sandwich and the "East Side" huevos rancheros and could not rave enough about these. Both were truly delicious and I recommend them to anyone who eats. They had the perfect portions for some proper sustenance and I bet a meal there at any time would be exquisite. If you go when the weathers nice definitely sit outside on the patio if you can. Service is usually attentive and courteous. The breakfast/brunch menu is good, and the Paso Robles Breakfast is delicious. When the weather is nice, it's a pleasure to sit outside. This is the only restaurant and bar at Allegretto vineyard resort, it serves breakfast, lunch and dinner. It opens at 7.30am to late night daily. We had breakfast, lunch, snacks and drinks here everyday. The menu wasn't too big but it had a little bit of something for everybody. I loved the gluten free pizza and it was the best item I'v tried off the bar menu. Hubby loved the lunch special ribs. Most foods were kinda bland but the portions were huge. The drinks were great and the bartenders were amazing each time we hung out at the bar! Our waitress for breakfast and lunch was a sweetheart! I realize ratings are subjective depending upon what people like or don't like about a particular place, whether it be the food service or the overall business. My rating is on the Thanksgiving meal served in the restaurant. There was more than enough food on the plate, it was tasty but certainly not the best. When we pay $48 for a Thanksgiving meal, I expect to receive turkey carved from an actual bird, not thick cut pressed deli meat smothered in gravy and passed off as a turkey Thanksgiving meal. I can't quite remember what the pasta was made of but it was so rich and had a similar flavor to bone marrow which made it richy but not too heavy. The meat was cooked perfectly and I ordered a cab to go with my meal. I would say the dinner menu is way better than their day menu. Delicious! One of the best pastas I've ever tasted was the mushroom pasta (don't know the name of it since it was in Italian). My wife had the lamb and she loved it! The Caesar salad was just pretty good. A dressing was a little bit too much on the tart side for me but the croutons and Parmesan were very good and the Romain was fresh.
