Small and spartan with a very cool vibe this is a gem hidden amongst the big box stores on the west hill of Poulsbo. First impressions are impressive and this one's well done! Then we were greeted by Brandon, one of the two owners. He's delightfully conversational; he made us feel immediately comfortable and cleared a window table for us. Service was top shelf throughout our dining experience. Brandon made cocktails to go with the appetizers, he explained the menu and took dinner orders. I had the leg of lamb and my wife had the steak. Both were cooked to perfection and the sauces were exquisite. Dessert was delicious Mine was the rhubarb upside down cake with ginger ice cream! Yummy The chef Nicholas and other owner stopped by the table to inquire about our dinner, he too was entertaining and conversational. The owner is wonderful. I learned a bit about the business and he and his partner's background in the food industry. I'd like that he took the time for that deep introduction. I could not determine what I wanted but I knew it was going to be one of the sandwiches. He was kind enough to help me with my decision, by allowing me to get two half sandwiches. One piece of bread cut in half each side filled with different sandwich ingredient. On one side I had the italian. The other side was the peach chicken. The peach chicken was quite tasty but just a little too sweet for me. The italian was good but didn't seem to have enough to it. Delicious. Some of the best sandwich fare I've ever had in my life. Truly. I was really sad when Sauce Nouvelle closed on Bainbridge. But I'm so happy to see their bistro in Poulsbo, which is comfortable and airy, and has some great food. Worth every minute of the drive. I usually go for their Peach Roasted Spiced Chicken, but saw the new Cayenne Ginger Chicken sandwich on the menu, and decided to give it a try. Sooooo good. The combination of flavors worked well, and the bread it was served on was just a bit toasted, adding a nice mix of textures. The slaw that accompanied the sandwich was also quite tasty. (I'm not usually a fan of slaw, but theirs was superb.) My girlfriend got their vegetarian sandwich, which was made from peppers, coffee (!), and tofu. She loved it. The thing I love about Sauce Nouvelle is the unique combination of flavors. Nicholas, one of the owners, is a flavor chemist, and is able to come up with flavor combinations you'd never think of but which work incredibly well together. This review is just on their lunch fare. We're planning on coming in for dinner, which had a completely different menu, at some point soon. Really glad this place opened in Poulsbo. It's just two guys running the whole thing, and even on a busy night the food came out great. You can tell they actually care, and everything feels handmade and intentional. I got the Spiced New York Strip, my mom had the Hibiscus Seared Salmon, and we split the Strawberry Rhubarb Upside-Down Cake. The chef is a trained pastry chef and it shows. The Leek and Potato Bisque was also really good too. Both the chef and his business partner came out and chatted with us for a bit, which was a nice touch. We'll definitely be back. read more

Nikolas does it again. Always been a fan of Chef Nikolas when he opened a unique sandwich shop on Bainbridge. Now he's gone upscale with a delightful, flavorful bistro with a simple but fantastic menu. I could take or leave most chicken, but his chicken tonight was tender, moist, and perfectly cooked, complemented by a wonderful rice and squash with the sauce being the thing that makes the dish really shine. You wouldn't think of this good of a restaurant in a strip mall by a Home Depot, but if you've ever fantasized don't stop by, you'll miss something truly special! read more

I was really excited to try this place because the sandwiches sound delicious. Unfortunately the experience left me deflated. I'd comment on the service but there wasn't any. Im not being rude but literally from when we walked in to when we left there was zero human interaction. We walked in and there was no one to greet you or explain how anything was done. There should be a sign that at least says "please seat yourself". After seating, we realized that there was a QR code on the table that said " order here ". I've been to other restaurants that did this so it wasn't too big of a surprise to me. What was a surprise was the food came out in to go containers via robot. Nobody checked on us at all to find out if our food was OK or if we needed anything extra, at any point during our time there. You check out via the app you ordered your food on, tip optional. The place is very clean. There just wasn't anything that made me feel Ike they wanted me there. The food coming out in a to go container just made me feel like I was in a cafeteria. There's definitely potential of this place especially looking at the dinner menu. But if I am paying over $40 for a steak, I would hope it would be served by a person and not a robot. And I hope they check in on dinner guests. With that being said, our sandwiches were good. I was happy with mine but my husband was not. His had more bread than filling and he said it was dry and needed more sauce. Mine was really juicy and had a lot of meat. We both finished them. Also, there is a self serve water station I only knew about from reading a prior review. They also serve wine and cocktails. There are things they need to work on and hopefully they do. I didn't have time to take a pic of my food because it was too good! We went for dinner and everything was perfectly cooked and really lovely, with enough novelty to keep us going back for more. We asked ahead of time for a Plant based menu item and they said send them a note on what we were looking for and we did a week ahead. One hour before our reservation we called to insure everything would be prepared and they stated they hadn't read our message. What they prepared in a rush was bitter and disgusting. The owner sent us this message: That was so nice to see you again . Sorry i did not have time to go to your table and talk to your chef friend . I put lots of thought and work to the vegan dish . No one interacted with us during our visit and that left us unimpressed. Felt like a takeout place in restaurant setting. Food was ok but not for the price. It didn't leave me wanting to come back. Sauce Nouvelle Bistro is a quiet and unassuming little restaurant decorated with reclaimed wood, white tables, and orange chairs. We started with the shrimp salad which was bright and summery filled with grilled shrimp, mango, and fresh greens, dressed with a tangy dragonfruit and avocado vinaigrette. For our entrees we ordered the salmon and lamb dishes. The hibiscus salmon was the star. The fish had a melt-in-your-mouth texture, highlighted by the slightly sweet and deliciously velvety hibiscus beurre monté. The lamb was sous vide, and sat on top of garlicky wilted pea shoots, roasted carrots, and a carrot romesco. For dessert we had the chocolate caraway tart and the rhubarb strawberry upside down cake with ginger ice cream. We loved both, but would recommend the upside down cake over the tart. I don't leave reviews often but this place was worth the time. This place has amazing food! Small menu, but VERY well done. The location seems odd (next to a Firestone and Home Depot) but they have just opened up about 6 weeks ago. The ambience is a little lacking, very bright inside but the food was OUTSTANDING! I highly recommend! The staff were super nice, friendly and prompt in service. The chef came out to visit us and expressed his gratitude for our appreciation of the food. Some of the best food I've ever had. Seriously. I was really bummed to see their Bainbridge location closed, but luckily their sandwiches are still available in Poulsbo. Now I don't usually like chef-y food. The menu here features some fancy-sounding ingredients and unusual combinations of flavors that might even seem pretentious. But it's not--it just tastes wonderful, and exciting. I get the impression that this is a "The Bear"-type situation, where the chef(s) had a background in fine dining but wanted to give it all up and make sandwiches. There is a laser focus on the food. As other reviews note, the service is bare-bones. But if that's what lets them offer amazing sandwiches for under $20, or offer the best steak I think I've ever had for under $50, in the year 2026, then I'm all for it. We tried this restaurant for the first time and found the food to be pretty tasty, but every dish had fundamental flaws. My husband's New York strip was a $50 steak that had maybe 3 oz of edible meat that was tough. I had a very tasty pork dish but even my pork slice was a little bit tough. They did not have the wine on the menu but did have a substitute Cab Sauvignon which was all right. Our waiter was a nice man but it seemed a little bit incompetent because he had to be reminded to bring my wine and the water for our table and we didn't have silverware to eat our meals. We ordered for dessert the rhubarb upside down cake and had to wait for ginger ice cream to be refrozen because they had to turn on the spinner. It was neither an upside down cake nor warm. But it still tasted good. All in all for an expensive restaurant it was not worth the expense nor the three or four stars it might have received had it been able to hit all the marks in place. read more

One of the worst meals I have ever had. Ordered cassoulet. Tasted like left over dry duck , green beans and lots of dry bread crumbs.Presentation terrible. Robots bring your meal to table (really?) So the server can go back to her station and get on her cell phone? Dessert forks and spoons were just placed at end of table and not each person's place setting. So we need to help ourselves for these prices? Wait staff had no idea what the flavor of ice cream being served when asked.Will not return . Shame on the owner for not giving his staff training.I believe the owner needs to stick to his sandwiches and not " experiment". We had 3 salads and 3 entrees and tap water. We won't be going back. The baguette for my pork rose baguette lunch was heavy and leaden. I finally gave up and just ate the pork and pickled mustard seeds. The ONLY interface with a human was when they brought the lunch sandwiches. People were seeking information but having a difficult time getting answers as service was almost non-existent. Also - the parking spot closest to the restaurant's front door was occupied by the vehicle belonging to one of the three staff members. A huge indicator of how much they care about their customers.
