    We were warned by the cashier the wait would be longer than normal due to short staff. We sat for 47 minutes waiting for our order. The staff are friendly enough and the food was good. Beware in today's world, no one wants to work and we the customers suffer. Total bill for two originals, chips, and a drink, $18.29. That's with a military discount. It's getting too pricey to eat out.

    That Schlotzsky's Original is one great sandwich! And this location has been a regular tradition for me on road trips down interstate 35, demonstrating the best of Schlotzsky's quality, atmosphere, and service. Between Dallas and Waco, Austin, or any other destination along I35 are two mandatory stops: Common Grounds for coffee, and the Hillsboro Schlotzsky's for lunch. (Note I did NOT say Buc-ees cuz dear god ppl). I have brought groups of students here, made family visits, and stopped on road trips with my girl. Every time, the store is clean, the food fresh, and I believe I've seen three remodels over those years. The dining room has large windows on one wall, providing a wash of light that lends a cheerful air to the room. The location near my home always seems "not quite clean" and "not quite organized". This location sparkles like a flagship store. Long Texas highways offer little more in eatery options than the most mainstream fast food and the occasional local barbecue or Tex Mex place. If you're road trippin' and want to break away from Subway and Dairy Queen for some of that toasty, cheesy, Sourdough muffalleta goodness that only Schotszky's delivers, I highly recommend this location!

    Bun not crispy, cheese not melted. Sandwich served Luke warm. A shame compared to the original Schlotzky's!

The bread is best I've had. The ham is not cheap deli sliced ham - it's actual ham ground up. The meat to cheese ratio was a little off for my preference (stuffed full of meat, needed a little more cheese to help cut the salt) but I plan to go back and try more when passing through again. They had some boxes of day old product for discounted price. Go check them out!
