A fixed printed menu is another sign of their commitment to their creative vision via bite composition as opposed to flexibility, quality, seasonality and availability. Slick, dimly lit dining room. Solid fixtures. Service is attentive enough. They're about par, all things considered. Let's use the Otoro toro caviar bite as an example. Nigiri with a slice of torched Otoro topped with chopped toro, caviar and chives with a dollop of wasabi. Luxurious and inoffensive but the individual flavors will get lost in each other. No real surprises here but you'll get some uncommon combinations that don't do much, like their salmon tomato bite. Safe and inoffensive. The rice for each bite is smaller than average but they don't skimp on the fish. No dessert included, though I'm not sure if they have any desserts at all. They're also quick to get you the bill. It's a price point play if you want different flavors and textures with your nigiri but there are (admittedly more expensive) places that do it better with more creative and coherent compositions.

The rolls are bigger than what you usually get at an omakase. Good amount of filling and sushi rice was perfect for us. We were pretty full. Would come back to order ala cart. Every single fish is very high quality I find many places like the skimp out on the less popular fish but not Sanyuu West. I think the omakase is also at a very good price for the quality and amount you get though I know it is more expensive than maybe the average omakase spot right now. I also find that other spots usually underdeliver. I wish I could save more detail but honestly I have nothing more to say other than the fact that Sanyuu Weat amazing. The restaurant itself is also more spacious than I expected. Besides the main bar there are two sitting areas near the window as well as seats lined up to the bathroom to make yourself comfortable two things that I think are a rare find now in many places. A lot of thought is put into this restaurant layout and I think you can tell. The service was also great I found myself never lacking in water or waiting too long for my next piece. In fact, I had started to apologize about drinking so much water because I felt like the hostess was constantly at my side refilling my cup and she just turned to me and said, "don't apologize. Drinking water is very important." So true!!!! I'm very picky abt my recommendations to friends, I'll review any place I go to and give my thoughts but a real recommendation? I only have around a dozen or so. And Sanyuu West is definitely now part of that dozen.

The possibility of second hand smoke from my birthday dinner? No thanks! We still persisted and ate there, but truly nothing special about the menu and/or fish, also the employees there are Chinese and speak Mandarin, which is fine, but signaled to me that this establishment isn't Japanese run. As someone who lives right on the line between the EV and LES, I've had some of the best omakase below 14th Street. And with that, I can say that this is the best spot in the LES or EV for omakase not only in terms of quality and hospitality but also price. But Tento isn't just the best in the LES/EV. Last week, I went to Sushi Nakazawa in the West Village, the sushi place from Jiro Ono's senior apprentice (of Jiro Dreams of Sushi fame) and... I doubt I'd ever go back. It was expensive and pretentious, and the food was fine; it wasn't bad, but I can barely remember a thing that I ate. Nothing made an impression apart from one crab leg dish. I also recently went to Takumi Omakase, which is in the same price range as Tento and is a very well-known omakase spot in the LES/EV. Again, I can't ever see myself going back. On the flip side, in the first two weeks I knew about Omakase by Tento, I went four times. That's really all you need to hear, isn't it? Their obsession with extremely big flavors and umami has no precedent in omakase places that I've visited. If you want sushi that sends an umami corkscrew into your brain and down your spine, this is it. One other thing: the staff are SO friendly. Once you become a regular, Tento will serve you extras of what he knows you love. I should know. My dinners here, despite only listing 14 items on the omakase course, often go to 18 or 20 that I didn't have to pay extra for. Tough to beat.

Quaint sushi bar setting with around 15 seats and people are in and out within 1 hour. Given the time limits, some may feel rushed, but I personally did not mind it. Firstly, here are my favorite pieces and then I will go through each bite. Best: Tomato Salmon, Tuna Truffle, Toro Caviar - Madai: A basic piece, but a quality you can feel. Tender, not fishy, very smooth piece - Chutoro: A rich buttery tuna piece with a melt in your mouth texture - Hamachi: I have this tied with the chutoro. It is mild, not too fishy, and again a soft buttery texture. - Tuna truffle: Now we are getting into the heavy hitters! A melt in your mouth bite of tuna topped with a hefty amount of truffle shavings. Delicious flavor balance! Umami and rich but not too salty or "truffly". In fact I wouldn't say it tastes much like truffle since it's less of a truffle oil/concentrate and more of the shavings. - Shima Aji: This striped jack is a white fish. Buttery, slightly sweet, a mild flavor. More firm than the others (so less melt in your mouth) - Salmon Tomato: Melt in your mouth, a bundle of wonderful flavors that just melts on your tongue. It's sweet with a hint of tomato, creamy and juicy all at the same time. Oh so delicious even for people who don't like tomatoes. It even has a nice seared char flavor. - Ikura: Oh wow! A pleasant surprise for me since I expected a salty burst of flavor, but instead the ikura here was sweet. Big balls of a sweet flavor. SO good. The wrapping could have been more snappy, but nothing to complain about. - Ebi: I personally don't like shrimp like this very much, so I didn't really like this one. - Hotate: Hotate is great, a nice scallop, nothing too special compared to the others though. - Otoro toro caviar: Now this was one of my favorite bites! Melt in your mouth. While the caviar flavor did not really come through aka not a salty blast, the toro was good quality. - Unagi: standard - Toast: Hm I think I'm not an uni person because it was a bit too fishy for my taste, but it is a good bite overall. Very fish heavy, a good combination of everything - Toro hand roll: ending with a basic item. simple and done well. Overall, amazing experience!
